Tons of fun

Yesterday was such a fun day!

After lunch, I went to the gym and did 30 minute intervals on the stationary bike and some ab and leg exercises:

– Crunches on ball (2 x 20)
– Side crunches on ball (2 x 15, each side)
– Wall squats using ball (2 x 20)
– V crunch on floor (2 x 20)

I’m a little disappointed that I am not more sore today (haha) so I guess what I did wasn’t really all that challenging. My legs do hurt a little, so I know the squats were effective as always! I can’t believe I can do 20 now, there was a time when I couldn’t do 5! So we’ll try for sore abs tomorrow, shall we?

When I got back from the gym, I broke into my three pieces of hershey dark chocolate kisses. I think rationing out the chocolate has really helped control cravings and the sweet tooth. Plus it is fun and something to look forward to and not feel guilty about. But somehow I lost the pic, sorry! I was even trying to get creative and make it look different than the last one, oh well…
My afternoon snack at work was a Stonyfield O’Soy yogurt in strawberry…this one came from a 6 pack of 4 oz size containers, 3 strawberry and 3 peach. It was a smaller serving (only 100 calories too), but it was very tasty, I really liked the strawberry! I also had some carrots.
When I got home, I had to make my squash but I was also feeling hungry, so I ate some honey roasted peanuts and drank another Coke Zero (ooh, rebel!)…
Here is a pic of my squash and zucchini cooking! I ended up using 1 tbsp of Smart Balance in the pan because I didn’t have any olive oil, oops. And I used Mrs. Dash lemon pepper seasoning.
Here is my dinner plate (it was a very small cake plate, so I actually had two of these). My friend Margie made some really great corn fritters with apple honey salsa and my squash/zucchini mix was a nice compliment.
I also had a beer with dinner since I believe that 1 drink a day (max for women, 2 for men) can actually have some health benefits, plus I’ve grown fond of beer out of a can, don’t ask me why, haha 😉
But here is the winner of the night! My best friend/sister (we aren’t related but we might as well be) Courtney made THE BEST banana pudding. She used Paula Deen’s recipe (“Not yo mama’s banana pudding”) but made it her own by substituting soy milk, lowfat cream cheese and whipped topping, plus using her preference of vanilla wafers. Not only did it taste great but it looked great too!
Here is my portion, I had two small bowls and she gave me one to take home for later too…
The girl’s night potlucks just keep getting better and better, I can’t wait to show you all what I have planned as the main course for next week, it looks soooo good!
