Where’s lunch?

Oops! Sorry y’all, I lost a few of my pictures from yesterday. Oh well!

Mid-morning snack: Celery with Sun Butter (also coffee with 1 packet of Splenda)

Lunch (not pictured): Boca vegan burger (from Sam’s club, patty is slightly larger, 100 cals instead of 70, cool!) with a slice of pepperjack veggie cheese and a salad topped with cucumbers, pecans, sunflower kernels and balsamic vinaigrette mist.

Mid-afternoon snack (not pictured): Oikos plain nonfat greek yogurt (I think I’m hooked) and some hot & spicy peanuts.

Dinner: Autumn Salad mix (so good, with pumpkin seeds!) with 2% cheddar cheese sprinkle and creamy cauliflower soup.


It was so good and creamy! It actually tasted a lot like mashed potatoes, which makes me think their mashed potatoes (made with cauliflower) recipe might be worth trying also! Here’s the deal:

Creamy Cauliflower Soup (South Beach Diet Quick and Easy Cookbook, 2005)

1 head cauliflower

1 tsp salt

1 tbsp extra virgin olive oil

4 cups water

1 small chopped onion (I used 1/2 small bag of chopped frozen onion)

1/4 cup reduced fat sour cream

1/4 tsp nutmeg

Salt and pepper to taste

Directions: Using a large sauce pan, heat oil on medium. Add chopped onion and cook for 5 minutes or until softened, stirring occasionally. Chop cauliflower into small pieces (book says 1/4 inch but it really doesn’t matter) and add to pan with 1 tsp salt. Cover and let cook for another 5 minutes.

Add 4 cups of water, bring contents to a simmer, then cover and let cook for 15 minutes. Pour entire contents of pan into food processor and puree until it resembles a creamy soup consistency. Add contents back to the pan, whisk in sour cream and nutmeg. Add salt and pepper to taste and serve.

Serves 4 (or 3 really hungry girls, hehe!)

Calories: 110, Fat: 6g, Sat Fat: 1.5g, Sodium: 290 mg, Carbs: 14g, Fiber: 6g, Protein: 5g (per 1.75 cup serving size)

I also added a sprinkle of 2% cheddar cheese, some fresh ground pepper, and a dollop of reduced fat sour cream to mine. It was so yummy, I can’t even tell ya! Who’d have thunk it?

My husband sent me a text message later in the night when he got home (I took the soup to girl’s night potluck at my friend’s house) that said “Did YOU make our house smell like butt?” This must mean it’s really healthy! (Note: husband hates stinky fish and veggies, lol) He had to make sure it was me this time because sometimes our neighbors make some stinky stuff too, haha.

I didn’t have a snack or dessert because I had to do a 12 hour fast for a cholesterol and blood sugar screening this morning at 7:30, so I cut it pretty close!
