Onto the eats…
I forgot to mention in yesterday’s post that I stretched for a full 10 minutes after my jog-walk (I can put jog first since I did more of that than walking, haha). It was nice and it definitely helped, I have zero tightness/soreness today 🙂
Lunch yesterday was a veggie burger with ketchup on a whole wheat English muffin…
I can’t remember when I had this, sometime in the afternoon, but I had 2 tbsp of honey roasted peanuts because they are my favorite and someone at work was sharing…but then when I ate them, I was less than impressed. Hmm, have mixed nuts really become the new favorite, wow!
Then later, I gave in and had a few pieces of hard candy, I love this stuff! Butterscotch, cinnamon and another one, I think it was buttercream?
When I got home, I took the doggie out for a nice (freezing) walk but not before biting a small amount of almond butter (1/2 a tbsp?). I totally didn’t need this, I think after this and the dark chocolate from yesterday, I will quit eating peanut (or almond!) butter right when I get home. That’s my husband’s Lean Pockets box in the background, btw.

After dinner, I was rummaging through DVDs to try to find something to watch and I ate 3 starburst candies from our candy bowl on the coffee table. I have no idea why but now they are gone, so at least I can’t do that again!
I ended up watching several Christmas episodes from various seasons of “Friends” one of my all-time favorite shows that I hadn’t busted out in forever! Then I threw in “Just Friends” (have a theme?) one of my favorite Christmas movies. Have you seen it? Please do if you haven’t, it’s hilarious!
While watching, I poured myself a glass of Cabernet…I didn’t even finish this, I had maybe 2/3 of it, then I passed out asleep on the couch, haha.
In between wine sippings, I made something I hadn’t had in a while Tofu Chocolate Pudding! I had all the ingredients at home, plus it sounded like a good dessert, so I went for it. Here’s me pouring it into the bowl to store in the fridge (you must chill it for an hour before eating)…
Since my recipe is slightly modified from the link I provided, here’s my version (I use less tofu and more soymilk than original recipe):
Melt chocolate chips with water, then put all ingredients in a blender and puree until well mixed and smooth. Pour into a container and refrigerate for at least an hour before eating.
It’s sort of like a mousse, very smooth and fluffy consistency. I love the taste too, I don’t know if it’s the vanilla or the chocolate but it’s just a little rich and totally hits the spot. I’m glad I made it, and I still have about three more servings left, yippee!

This recipe helped me use up the rest of my chocolate chips, tofu and vanilla extract! I’m doing good at this using stuff up thing, so far, eh?
