Top o’ the mornin’ to ya!
Okay, that was lame.
But Happy St. Patrick’s Day! I’m only 1/4 Irish, but I still feel the need to celebrate my heritage 🙂
What better way to do so than with a green monster for breakfast?!
With PB toast and a few strawberries…
I really think I have found the perfect green monster combination now. The key for me is very ripe bananas, which I had frozen, and that has made all the difference. Today’s blend included 1 cup of plain light soy milk, 1/2 frozen ripe banana, handful of spinach, and I also included 2 tsp of flax instead of a tablespoon which was just enough less that it didn’t overpower the smoothie. Yay!
Here’s a preview of lunch and snacks for the day…
We’re also having a party at work this morning and if there is some fruit or veggies, I’m in!
