Happy (belated) Easter!

Easter Sunday is such a neat day. A big deal is made out of Christmas, which for me represents the birth of Christ, but Easter celebrates His Resurrection! So all day long I felt blessed and hopeful about life in general. We are so lucky He died for us.

Anyway, Sunday morning I woke up early from going to bed early and made myself a nice breakfast: cinnamon-raisin bagel with strawberry cream cheese, turkey sausage, strawberries, OJ and coffee with sugar in the raw and coconut milk.

When we got to Sunday School, there were donuts galore! I haven’t had a donut in so long and these looked so good, I decided to have half a Krispy Kreme chocolate iced donut:

You know what? I didn’t enjoy this. It was not good. Now I remember why I don’t like donuts anymore. I’m sure there are better ones out there but I’m not going to waste calories on something that doesn’t take my breath away!

We went to my aunt and new uncle’s house for Easter lunch. Before everything was ready, we munched on some tortilla chips & salsa (not pictured).

Here’s my lunch plate:

Grilled chicken breast (left) topped with peppers and onions; homemade baked mac ‘n cheese, green beans & corn. I went back for seconds on the mac ‘n cheese and green beans (just a little spoon of both).

For dessert, we had marble cake with whipped icing (the icing was good but the cake tasted kind of dry) and some no sugar added vanilla ice cream.

I couldn’t believe it, but just a few hours later, I was hungry for dinner! So I had the rest of my pizza from the night before:

I went upstairs and got in bed and watched “Nick and Norah’s Infinite Playlist” which was pretty cute, isn’t Michael Cera just a cutie? So softspoken. While up there, I finished off (2 tbsp worth) of White Chocolate Wonderful and two pieces of Dove dark chocolate candy.

I overdid it just a tad on Easter but I had fun, enjoyed what I ate (except that donut) and its back to balancing everything tomorrow!
