Vegan “cheese”

Today has been an awesome day!

I got things started with some banana PB oatmeal, which wasn’t the original plan, but someone ate all the bread in the house 😉

001This was fuel for my 5K run this morning, which you can read all about at my fitness blog River City Fitness!

Then I went grocery shopping for the week, which included a trip to Whole Foods. While I was there, I picked up an item I had never tried before.

007When I went vegan in October of last year, cheese wasn’t really something I was looking to replace.

But lately, I’ve started to miss a few “comfort foods” and I figured now was the perfect time to start experimenting with some new products. How awesome is it to see something labeled “vegan”? 🙂

For lunch, I made grilled “cheese”!

008My mom used to make grilled cheese for me all the time when I was a kid so this was really special. Plus, the cheese actually melted and it tasted great!

I also had a sweet potato with cinnamon and Smart Balance Light.

010I’m definitely a fan of this cheese and I will be trying the other flavors soon. Plus I saw a few other vegan brands, including a mozzarella that you can put on pizza 🙂

I picked up a bunch of other new things for this week, so stay tuned!

  1. Thanks for the review of the rice cheese! I’ve been trying vegan cheeses with some fails and minor successes, so maybe now I’ll give this one a try! 🙂

  3. Omg I love the veggy topping. I use it on almost everything!! It’s so good 🙂 It looks/taste a lot like parm cheese.
