Day 6: Happy Birthday to me!

Hey guys! Sorry I am so behind on my updates, this week has been crazy and today is no better! Luckily things are about to slow down 😉

Thursday was my birthday and it was a happy one indeed!

For breakfast, I had oats with banana and peanut butter. I forgot to photograph it, so here is a “recycled” photo.

021

Mid-morning, I snacked on more grapes. I’m loving these!

048

Lunch was leftover spaghetti squash with the veggie chickpea sauce I made on Tuesday night 🙂

050

And an orange!

052

Then later in the afternoon, I finished off this bag of edamame before heading to the gym to lift weights, using the same routine I did on Tuesday.

053

For dinner, we went to Ramsi’s Cafe on the World, which is one of my favorite vegan-friendly places here in Louisville.

Mom treated me to a glass of Chardonnay which was great, I hadn’t had any in a while!

035

Then we ordered the hummus appetizer, which I was so pleased that many of my relatives tried…and liked! 🙂

034

For my dinner, I had the Roasted Vegetable Masala. I divided this huge portion in half and took the rest home to have for lunch the next day!

036
It was delicious! I loved the sweet potato, carrots and all the other veggies inside, plus it was just a little spicy. Almost as good as going to an Indian restaurant.

Everyone else really enjoyed their food too and we had excellent service. I’m so glad everything worked out so well 🙂

We skipped dessert at the restaurant, but later on at home I wanted something else, so I made myself a little birthday treat!

057

How cute is that? 🙂

I had a great birthday and I know that 28 is going to be the best age yet!

Day 5: Let the celebrations commence!

Even though Wednesday was the day before my birthday, I still got to start celebrating early 🙂

Reason number 5,682 why I love my sweet, sweet husband:

He had heard me complaining about how terrible my blender has been lately and here I thought he never listened? Ha ha. He showed me! Check out the beautiful new green smoothie maker:

And good riddance old friend. You’ve worked well the last 4.5 out of 5 years but it’s time to retire now.

Anyone know what to do with old appliances? Can they be recycled?

Of course I celebrated my first birthday gift with a delicious green smoothie. Just look at it go!

I even spoiled myself and used the dispenser!

Result: A yummy, creamy, delicious green smoothie (1 cup almond milk, 1 frozen banana, 1 tbsp natural peanut butter, three handfuls of spinach).

I made sure to send my husband a message about how awesome this smoothie was and how much easier it is to make in a shiny new blender. I’m so spoiled!

Mid-morning, I had some tea and grapes.

Then for lunch, I sort of threw together a new combination. One thing I realized about this challenge is that even though there are a ton of recipes out there that I could use, I love being forced to come up with my own based on what’s in the pantry. It makes me so creative!

Chickpeas on top of a sweet potato, drizzled with salsa verde! Definitely interesting, but totally delicious and filling too. I also had an organic apple on the side 🙂

I snacked on some almonds before heading to the gym for an awesome treadmill run. Wow, those are three words I rarely put together, ha ha.

Then I went home, showered and got ready for girl’s night. I am so lucky to have such good friends who make me feel special!

For dinner, Margie made what is probably my favorite food ever…FALAFEL!

A pita pocket filled with lettuce, diced tomatoes, hummus, and falafel balls topped with tahini. Yesssssss!

Note: this meal is technically not challenged approved, but still very healthy, delicious and special because it was my birthday. I thoroughly enjoyed it, which goes back to that comment about enjoying stuff more when you don’t eat it every day.

I had this plate times two!

For my birthday dessert, per tradition, we had some pink bubbly!

And some yummy vegan cupcakes that Courtney made herself!

She was not happy with them, but I thought they were delicious. Sometimes things can look funny but actually taste great. Plus when a friend makes something special for you, it tastes even better, am I right?

She used this recipe, including a special strawberry glaze that was full of sugar but oh so tasty!

I enjoyed my birthday dessert, very very much 🙂

Thank you girls for giving me such a special night! I love you all 🙂

Happy Birthday to me!

Still feels weird being another year older but I’m at a good place in my health and my life, so I’m embracing this day!

The Big 2-7 🙂

It’s George Clooney‘s birthday too, which makes it that much cooler…

I tried a new green monster mix this morning and I’m celebrating my birthday with my parents and husband at a new restaurant tonight, plus I’m going to one of my favorite frozen yogurt places in this city! Couldn’t get much better.

Be back soon 🙂

p.s. There’s a great contest over at An Apple A Day for some bars and other goodies. I personally would like to have that breakfast cookie, wouldn’t you? Check it out!

Turning 1 and 27

That’s right friends, in less than a week now, this girl is turning 27!

When I was younger I never even imagined what 27 would feel like, other than it seemed old (haha). But my attitude has changed so much since I got healthy and starting striving to live life to the fullest. When I turned 25, that was a really rough year, but it was a turning point. In January 2007, the same year I turned 25, I took a stand and turned my life around from the dangerous path it was heading down.

And ever since then, 26 and now 27 have absolutely rocked! I can’t wait to be 30, 40, etc. because I know these years are going to be the healthiest of my life. And they are going to be spent doing things I love with the people I love. How can life get any better than that? Some people really hate birthdays and I will admit the whole celebration aspect does get a little overwhelming, especially trying to coordinate schedules and such, but we should all take a moment and thank God for when we do have our birthday.

Because there are many out there who won’t have one this year. Be thankful!

I’m not the only one having a birthday this month…someone is turning 1!!

Who?

Well, this thing you are reading right now! See Sarah Eat was started on May 16, 2008, 10 days after my 26th birthday 🙂

Check out my first “real” post, since the first few were just intros.

I cannot believe how far the blog has come since then and just in one year! I have many of you all to thank for that. There was a time when I was getting no readers, no comments and couldn’t really focus on what I wanted to write about. Plus those of you who also have food blogs have been so inspiring to me.

I feel like I am finally hitting my stride and I have so many awesome loving folks who stop by here on a daily basis and leave comments that I am constantly touched by the support they offer. You all know who you are, you rock!

So in honor of the blog’s first birthday (I’m such a proud parent), I’m going to host my very first giveaway. I haven’t come up with the details yet, but stick around in the next couple of weeks, it’s coming 🙂

p.s. I used to keep a Xanga blog before I started the “official” See Sarah Eat and it details a lot of my eating habits and running, including my first half-marathon in April 2008. Check it out if you’re interested! I can’t believe that one has strawberries in the header too, I think I see a theme here!

Happy Birthday John!

Before I do anything else today, I must take the time out to be a super-duper crazy fangirl! For those of you who don’t know this already, I am a HUGE fan of the Goo Goo Dolls, they have been my favorite band since I was a youngling and over the years they have never disappointed me.

Not only do I love their music (they are very talented musicians), but I love their heart for people and good causes (like USA Harvest which was started in KY, holla!), and especially their fans. I have had the pleasure of seeing them live 6 times now, which we all know is not nearly enough. What’s funny is the last two shows I have seen them at have been free (one in my hometown and another at the Indy Motor Speedway this summer) and when they weren’t on tour “officially” haha. I can’t wait for the new album to come out so they can go on tour again.

The last two shows, I’ve been really close, front row if you can call it that (no seats, haha). And in February of 2007, when they came to my hometown, I got to meet them. That’s me, 4th from the left, about 60 pounds heavier than I am currently, wow!

Here’s another one at the same show, got an autographed setlist, score! Pay close attention to this one, the next one might shock you…

This is me, one year + 3 months later, notice anything different?? Haha….

This was one of my front-row shows…we made friends with Damage (John’s guitar tech genius) who hooked us up with some picks, yeah!

I also made our local radio station’s website (below on far left), woo hoo! Mom said it was a good thing I shaved my arm pits, hehe…

Anyway, without further delay, HAPPY 43RD BIRTHDAY to my dear JOHN RZEZNIK! Besides my husband, he’s my #1 dude, haha 😉

It took me forever to decide on a pic to use (you don’t understand how many I have) but I chose one from the “Live in Buffalo” concert from 7/4/04 (which I plan to watch on DVD sometime this weekend).

Ah, what the heck, here’s another one…

Thanks for bearing with me…Happy Friday all!

I want to know…who are your favorite bands/musicians/etc? Any other Goo fanatics out there? Leave comments!!
