Today was Monday, which meant back to work and the start of a new week! But it is also the first day that I have felt back to “normal” after being sick a little over a week ago and then having my period right after.
Since both can mess with your appetite, cravings, etc. I am glad they are both outta here 🙂
Breakfast this morning was pumpkin oats. I used the last of my pumpkin can so I won’t be having these for a while. They were good but I still can’t figure out what’s missing. Perhaps my tastes have changed?
This bowl contained 1/3 cup oats (cooked with water), 1/3 cup pumpkin, a sprinkle of pumpkin pie spice and some Skippy Natural PB.
Mid-morning, I enjoyed some new tea the in-laws gave me:
And some mixed nuts to snack on.
For lunch, I had some leftover black beans and barley, which I wasn’t too thrilled about at first, but I found some salsa in the fridge which I think gave it the perfect touch. I ended up really enjoying it!
I got back to Exercise Science class after missing last week, so that was good to get caught up. I’m really enjoying everything I am learning in this class but I’m starting to think I won’t be able to stick through getting another 4 year degree (I already have 2).
So I’m thinking after this semester I may just get my personal training certification and then go back to school later if time (and money) permits. I really want to get to work!
After class, we had a baby shower for a co-worker who is so cute it’s ridiculous. I’m so happy for her. There was also some good food. I just snacked on some tortilla chips and salsa (plus more chips).
I knew I had to get a run in sometime today and it was going to have to be after work. Luckily, I hopped on Twitter and saw a few others who had either gone for runs or needed to. So that inspired me to get it done!
I did one of my favorite paths near my neighborhood with no time in mind. After I was done, I came back in and looked it all up on Map My Run.
It says I did 2.85 miles in 25 minutes! That’s an average of 8:46/mile! Holy smokes. I’m not sure how accurate that is but I’ll take it.
My time also isn’t exact. I left the house at 6:03 p.m. and reached the front door again at 6:28. So it’s a guesstimate. I even walked for a few minutes including a warm up and cool down so I was quite impressed with that.
I do think I am getting faster, as my 1-mile runs with Farrah have proven. I texted her after this run to tell her I wanted to go fast again tomorrow but she wisely told me to wait and see how I feel tomorrow. Ha ha.
After the run, I did lots of stretching including pigeon pose to keep my hips from getting tight and lots of downward facing dogs. I love yoga.
For dinner, I made some baked tofu which I am now confident in keeping in my diet for the time being. Thanks again to those of you who commented on my soy question in a previous post. I really appreciate the feedback.
I’ve decided I’m a big fan of mixed veggies. It’s just the right combo of starchy and green. I think I just like mixes in general instead of just having one veggie on the side.
I’m currently watching “Dancing with the Stars” hoping my man Chuck Liddell makes in another week!
I also snacked on this and perhaps a bit more PB 🙂

I’m a blogging fool today! Haha, I love being this caught up though 🙂 I can’t believe I didn’t need a mid-morning snack at all, that bowl of cereal must’ve really been what my body wanted which is why I made it 4.5 hours before hunger called.
Lunch today was a Morningstar Farms Griller’s Original burger, which this was my second one but I hadn’t had a chance to review them, I don’t think. They are GREAT! They remind me a lot of the breakfast “sausage” patties in their texture and somewhat their taste. They really make me feel like I’m eating a burger and not a veggie patty, although I like those too. It’s just a nice change.
I had this one on whole wheat toast with some spinach, 2% cheddar cheese, and mustard. On the side was a pickle, some leftover Green Giant asian style veggies and an orange. A very colorful lunch 🙂
This lunch lasted me for almost 4.5 hours until I broke into my yogurt stash (will show you tomorrow which one). It also powered me through a treadmill workout that I’m quite proud of. As I’ve mentioned before, I have a 5K coming up on Saturday morning that I do plan to run the entire 3.1 miles of. That’s my goal. Even if it’s a slow jog, let’s do it!
Here were today’s stats:
Time: 41 minutes (warmed up for 5, ran 30, cooled down for 6’ish)
Distance: 3 miles (ran from 0.25-2.68 or almost 2.5 miles without stopping!)
Calories: about 360 (realistically, more like 300)
It was tough at times, but once I got past the 1 mile mark, I knew I could keep going. I could’ve done the whole three today I think, but I ran out of time and wanted to adequately cool down. I have meetings set up with my running partner for the next three days and then Friday I’m either going to take off or cross-train. Yoga would be great too!
On tonight’s agenda:
- Epidemiology class @ 4:30
- Dinner (not exactly sure what yet but it will include some brown rice!)
- Dishes (please let the hubby have emptied the dishwasher, please!)
- Laundry (switch the loads around, plus put some away)
- Yoga (20 minutes)
Not necessarily in that order, except for class & dinner, haha. Have any of you all ever taken an epidemiology class? It’s way more challenging than I thought and doesn’t really apply to what I’m most interested in but it is a requirement for a program I might follow so I’m pushing through 😉

I have decided to try out the “gallery” feature here at WordPress…it takes a little bit longer than uploading to Blogger, but I think the way it turned out is pretty neat. I probably won’t keep up with the captions for long, but it’s been fun to try them out. Happy Friday!
I chose to eat at Subway yesterday because I didn’t bring a main course for my lunch…it was a nice treat and the chicken breast sandwich is probably my favorite, it just satisfies my appetite and the protein in the chicken really holds me over well.
I almost went back for a second dessert before chugging a huge glass of water which totally did the trick…I guess that old saying is true…when you think you are hungry you’re probably in need of some high quality H2O, haha. Hope everyone had a great night!
Friday morning I got started with a nice breakfast…a scrambled egg on a piece of whole wheat bread; a cup of low sodium V8 juice; and turkey sausage.
I had a mid-morning snack of honey roasted peanuts (my favorite!) and then headed to a “Cardio Kick” class, which was majorly intense! It involved lots of cardio, kick boxing, and strength training moves including a short abs session. By the end of the night, my shoulders were sore and the next morning, I woke up and felt like I’d been hit by a bus….but in a good way, ya know 😉 I can’t wait to go again next Friday!
Lunch was kind of random…I started off with carrots & hummus and a peach…
Then finished with two Wasa crackers and 2 tbsp of nut butter (I only had 1 tbsp of peanut butter left, so I brought the Sun Butter too):
Late afternoon, I had some soy yogurt (So Delicious Vanilla, heaven!)
Then, we met some friends for dinner at BJ’s Brewhouse & Restaurant, where I ordered the Chicken Lettuce Wraps off the appetizer menu…they were very good, tasted a lot like PF Chang’s version of the same dish. My only complaint was that I ran out of ‘stuffing’ and had a few pieces of lettuce left over 😦 But I was full and it was tasty, so I can’t complain too much!
“Dessert” was a new Vanilla Latte + Protein from Starbuck’s (grande, with soy milk). It has quite a few calories (290), more than I like to get from a drink usually, but it was a nice treat and I had a light dinner so I didn’t feel too bad.
