Day 21.2: Self revelation #1

This may sound silly to some of you, but ever since I started eating a vegan diet, I feel like I have been more in tune with myself and it has helped me really dig in deep and find out what makes me tick and what drives me mad. I’ve had a lot of self revelations lately, so hope you don’t mind if I start sharing them with you! But this is still a food blog too, so let’s do it.

Lunch yesterday was leftover vegan meatloaf and some broccoli.


Then for a mid-afternoon snack eaten in two parts, I had a PB cookie Larabar. I think I want to try the PB&J again because I might actually like it better. I apologize for the really old, recycled picture since I didn’t have my camera during the day yesterday 😦


This snack must’ve had an extra boost of motivation, because after work yesterday, I met up with Farrah and ran 4.15 miles!

I don’t know our exact time, but I think we were around 40 minutes. The neat thing is, I ran all of it, no walking breaks, and it was the longest distance I have ran in…a while. I honestly couldn’t tell you the last time. And the neat thing is, I wasn’t tired at all. And I felt GREAT.

Self Revelation #1 – I AM A RUNNER!

I go back and forth with this a lot because there are days and weeks where I don’t run at all and I think it’s just not for me anymore. Then I have runs like the one yesterday that make me wink at myself in the mirror and say “Yeah kid, you still got it.” I sometimes forget that I trained my butt off from September 2007-April 2008 to run a half-marathon and in the mean time have completed a number of 5ks, 10ks, 10-milers, etc. Check out my running page if you are interested in seeing more.

After all that training and trying to keep up with running, I hit a few roadblocks. Sometimes I just couldn’t physically run, sometimes I had mental blocks that told me any more than 3 miles would kill me. I was addicted to sugar from thinking I had to get all the “energy” possible to finish a race. I had gained weight. You name it. So I had resigned myself to the fact that I liked to run every once in a while, but it wasn’t a big part of my life (or workout routine) anymore.

But I think the difference is, I just did it for fun yesterday. Farrah is always a little bit ahead of me and I just follow her. Sometimes I yell ahead that I need to take a break but yesterday I just kept on going. I didn’t have a watch on, the weather was 110% perfect, and I just looked around me and took it in. Why not do that more often? I’m not trying to win any races, I just want to have fun. I want to hold onto that feeling I had after that run yesterday.

So we’ll see what happens 😉

Girl’s Night Potluck was another huge success in my book. I am a big fan of tortilla chips, so that’s how we got the night started (with some medium salsa that was SPICY)!

These were the Kroger brand white corn tortilla chips with sea salt. They were amazing! Not quite as salty as some other tortilla chips. I loved them (a little too much, ha ha)!

For our main course, Courtney made her famous taco soup with lots o’ beans and veggies (for which I am grateful).

With more chips & salsa and some steamed green beans on the side. I went back for a little more soup and chips later on.

For dessert, Beth so graciously found these little So Delicious mini ice cream sandwiches.

They were pretty good and one was definitely enough to satisfy me (plus I was full of chips).

Beth said she had a hard time finding a dessert that I could eat and that she couldn’t make a planned recipe because she couldn’t find any decent soy yogurt at her store. I felt bad because the last thing I want is for anyone to be inconvenienced…this way of eating is my choice and I can choose whether or not to eat something and no one should have to worry about excluding me from anything.

I have dessert next week though so I hope to share a great dessert recipe with my friends that isn’t soy ice cream, ha ha. I think they are helping keep the So Delicious people in business 😉

Yesterday was a great day and I don’t know how I could possibly make today any better, but I’m going to try!

Day 20.2: A potential gig?

Good afternoon! I hope this Tuesday is treating you well. Aside from sleeping a little bit late, today has been a good day. One of the neatest things about today was discovering this possible job opportunity!

Now onto GOOD FOOD for my GOOD MOOD!

I did not need a mid-morning snack as I had breakfast later than usual. It’s weird to think that sleeping in by accident causes me to eat breakfast 2 hours later.

For lunch, I had leftover Red Beans & Rice that I made last night with the recipe from Happy Herbivore!

It was just as good today as it was last night!

I think I drank too much coffee this morning though because not long after, I felt kind of weak and shaky (which happens when I have too much caffeine). Since I knew I had a workout coming up, I decided to have a spoon of PB to settle my stomach and nerves.

An almost full jar of peanut butter has been sitting on my desk all day and somehow I have managed (for the most part) to “behave” myself 😉

My workout today was intense! Farrah and I ran 2 miles (or 20 minutes) and then came inside and did lots of leg strengthening and ab exercises. I’m going to be sore tomorrow! I was kind of sad to not do any arms but I have been neglecting my legs for a while which is why I get so sore from doing a set of squats.

Right now, I am snacking on some soy yogurt and getting excited for dinner tonight. A good friend is coming over and we’re going to be making another vegan recipe, I can’t wait! It’s nice to have people to share with 🙂

Day 18: Coffee, oats, exercise?

Good morning friends!

I got lots of rest last night but for some reason I am very unmotivated to exercise. I think it’s a combination of the cold weather and just the need to relax on the weekends. I work out Monday-Friday most weeks so why not?

I think I may just wait until later and use housecleaning as a workout. Maybe work in a set of squats or something here and there? 😉

Breakfast this morning was a simple bowl of oats with banana and peanut butter. Plus coffee with rice milk.


I did shake things up a little bit today by cooking the oats on the stove instead of the microwave. It had been a while!

I’m working on cup of coffee number two and dreading taking the dog outside. It is 32 degrees right now, there is frost on the car windows and our apartment is hovering at 62 degrees. But really, even for a cold-natured person it’s not too bad.

It appears that so far you all agree with me that pumpkin is a vegetable, yay!

I have something to admit to you guys…I rarely buy organic food. It’s just more expensive and while I thoroughly wash any produce that I do buy, I know sometimes it is still better to go with the organic selections. So I hope to make that a goal of mine here soon.

Day 16: Oops, my camera!

Today was a crazy day! First off, I woke up at 6:50 when I originally had my alarm set for 5:45. But somehow I managed to walk the dog, throw everything together, take a shower and get to work just a few minutes late.

I pretty much just laughed at myself and decided to not let being a little bit late take away my sunny disposition 😉

I had to eat breakfast at work and as I was preparing it, I realized I left my camera at home, ahhh! Luckily, my cell phone pics aren’t too bad (it’s what I used on my blog for a long time when I first started out).


5 grain cereal, peanut butter and banana. This and a HUGE cup of coffee helped perk me right up 🙂

When I finally started to get settled into work, I had to walk over to a meeting about open enrollment for our insurance. It sort of gave me a headache but I am grateful to have insurance and it was a nice 10 minute walk to get over there too, so I didn’t mind!

Since I had breakfast so late (for me), I didn’t eat again until lunch, which was another artichoke burger on an Ezekiel muffin with sugar snap peas. It was the easiest thing to throw in my lunch bag in a rush!


Not long after lunch, it was time to meet Farrah for a walk/run. We did our same 0.25-mile intervals and increased our running intervals up to 7.0 mph for the last mile (we did 3.2 or so in 45 minutes)!

At one point, I had a huge pain in my side and then I got kind of nauseous toward the end. So I’m glad we didn’t go any longer or I would’ve had to slow down for sure. I think I’ve found my threshold!

Not long after I got back from my workout, I had yet another meeting to go to!

Finally, I got to snack on some soy yogurt that was quite a treat (and on sale for 59 cents).


The sugar content of the Whole Soy & Co brand does not thrill me but it was still a good snack. I just wouldn’t eat it everyday.

I also spent a good part of the day trying to figure out where the heck Josh and I would eat dinner tonight. We couldn’t be more opposite! I’m vegan and he eats meat. I love veggies and he pretty much avoids them (except corn and potatoes). Yikes!

In order to save money, and our sanity, we went to the mall where I was able to get Panera and Josh was able to get Sbarro. He swears when his gym membership takes effect next month, he’s going to clean up his diet. It cracks me up when people wait to start eating healthy to coincide with their new workout routine. I guess because I started with one thing first, I just can’t imagine trying to start them both at the same time.

At Panera, I got the You Pick 2 of garden vegetable soup (which I saw listed on Vegan Eating Out) and the Greek salad with no feta (and a whole grain baguette). I’m not sure about the dressing, oops. I didn’t use much of it.


And finally, I am at home reunited with my camera!

I tried to get creative with a snack later and melted some chocolate chips and dipped some leftover bread in them. I’m so glad this bread is gone now 😉


I’m very excited about tomorrow. A new Target opened near us and I hear they have an expanded grocery section (still not quite like Super Target) and I think I’ll do some of my shopping there in the morning!

I wrote out the ingredients of a few new recipes I’m going to try this coming week and I can’t wait. It really does keep things exciting by trying new things more often 😉

I’m going shopping early tomorrow so I can come home and watch the Texas vs. Oklahoma football game tomorrow. Josh is a HUGE Texas fan so there will be some craziness at my house for a while.

Day 15, pt. 2: Out to lunch

After snacking on some peanuts this morning…

…I got to have lunch with my Aunt! I haven’t been out to lunch during the work week in forever. I’ve made such a habit of bringing my lunch everyday, which is good because it keeps me healthy and saves a lot of money too. But it was a nice treat on this Friday Eve.

We went to J. Gumbo’s which has a few vegetarian options. I’m not 100% sure they are vegan though…guess I should’ve asked?

I ordered the Garden Creole because they were out of White Chili. That’s okay, I’ve had a lot of beans the past few days anyway, ha ha 😉


This dish contains: Cajun tomato sauce made with a golden roux, bell peppers and a splash of white wine. As I copied that, I didn’t know what “roux” was, so I Googled it.

From Wikipedia: “Roux (pronounced /ˈruː/) is a cooked mixture of wheat flour and fat, traditionally clarified butter.” Uh oh.

I totally avoided the Bumblebee Stew because it described it as having a “creamy sweet and spicy butter” sauce and went with what may have had butter instead. Hmm…well, I did want the White Chili anyway, so it’s not entirely my fault 😉

I am deeming this Vegan Fail #3. Three occurrences out of 15 days isn’t too bad, right? If I’m really counting, #1 would be the ranch dressing I ate at a party and #2 would be that stupid soup mix I bought last week. I should’ve included this in my post from earlier today but I have to say, eating at restaurants is the hardest part of being trying to be a vegan!

I also need some new snack ideas!

I unwrapped this not too long ago and it just wasn’t that exciting. I tried to pretend it was something special by wrapping it in wax paper (ha, really just out of plastic and trying to use stuff up)!

On a positive note, I got to leave ANOTHER Operation Beautiful note today in the J. Gumbo’s one-seater ladies bathroom!


Looking forward to a short run + weight training after work and then a relaxing night at home with the doggie while Josh is at a concert. I might have to bake something 🙂

Day 14, pt. 2: Ladies night

After those awesome Pumpkin Pie pancakes that I had for breakfast yesterday, I knew the rest of the day was going to have a hard time measuring up 🙂

For a snack mid-morning, I had some peanuts. I’ll admit…nuts are starting to get old. I need some new snack ideas!

For lunch, I had another amazing leftover enchilada. I really enjoying making this recipe and I will definitely use it again.

I also took the opportunity to review my Exercise Science flashcards one last time before the exam.

I think I did okay on the test. I was definitely more prepared than the last time but there were some really tricky questions on there. In the cases where I think more than one answer could be right, I just use my initial instincts. Hope that pays off!

I had some Silk yogurt later in the afternoon. I think I’m ready to re-try another brand, no offense Silk.

After work, I met Farrah for a treadmill workout. We alternated walking at 3.5 with running at 6.0 for a quarter-mile each. We did about 3.2’ish miles in 45 minutes. It was a great workout! We also discussed changing up our routine a bit to keep things fresh.

So, starting today, we are going to be running 2 miles (or 20 minutes) before weight training and our workouts are going to focus on more repetitions with lighter weights (we’ve been using heavy weights and doing 12 reps mostly). On the days we only run, we are going to move up to 4 miles instead of 2-3. Should be interesting to have this new challenge!

When I got home from work, I was STARVING, so I snacked on some more peanuts.

Since it’s Wednesday, that means it’s Girl’s Night Potluck dinner time 🙂 Unfortunately, the evening had many hitches. We didn’t get started until rather late, so I had a couple pieces of bread before dinner was even served.

When we finally did eat, I just had a bowl of spaghetti with sauce. I’m thankful my friend Beth separated them into proper portion sizes because I hate having to guess at that stuff, especially when I’m so hungry 🙂

I was pretty full when I was done, so I stopped, drank lots of water and skipped dessert. I know it’s silly but I always feel like I should pat myself on the back when I don’t completely overdo it because there have been so many times in my life when that wasn’t the case at all. So here I go, pat pat.

It was a little hard to sleep last night because Josh has been coughing (poor guy) so he slept on the couch (I did last night) and I had a lot of my mind last night. Nothing bad really, just stuff.  But I did fall asleep eventually and slept pretty good considering it was only 5’ish hours. I need to get to bed early tonight!

Day 13: Walking fool

Even though Tuesdays usually hit me like most people’s Monday’s do, it was really a great day, I have no complaints!

For breakfast, I had oats with peanut butter and half a peach 🙂

Before lunch, I went for a 50-minute walk with some co-workers of mine. It was so nice to catch up, we all used to walk together a lot back in the day 😉 The weather was cool though, so I think we walked even faster than usual to stay warm!

I was going to eat lunch before I left (at noon) but when 11:30 rolled around I just wasn’t that hungry. In the past, I would’ve just eaten anyway because of time, but I chose not to and ate when I got back to my desk. Even at 1:00, I didn’t have my normal “lunch” appetite, so I was glad I waited. And that I brought a smaller portion of food.

Leftover enchilada! Just one…I don’t know how I ate two the other night 🙂

I really love this Vegan Planet cookbook. Have I said that yet?

After such a spicy lunch, I found myself wanting something sweet. There is a candy jar in the office with some chocolate selections but none of which are vegan. It’s amazing how choosing this diet for myself has actually prevented me from eating some things I shouldn’t be anyway!

Luckily, I found this “stash”ed in my desk drawer…

Yay, that totally worked!

Lunch kept me full for a while but later in the afternoon, before hitting the gym, I snacked on some carrots and hummus. There is a lot of orange in my diet these days 😉

At the gym, I warmed up on the treadmill while reviewing my flashcards for my Exercise Science exam (which is today). I ended up trotting for 11 minutes!

Then I did some weights and such (two sets each, except for the abs):

  • Chest presses
  • Squats
  • Bicep curls
  • Tricep overhead extensions
  • Shoulder shrugs
  • Shoulder overhead presses
  • Tricep kickbacks
  • Dead lifts
  • Upright rows
  • Regular crunches
  • Side crunches
  • Reverse crunches
  • Toe touch crunches (legs straight up, reaching for toes)
  • Back extensions

That was quite a workout. And I am just the right amount of sore today 🙂

When I got home, I snacked on a piece of whole wheat bread with peanut butter.

Why? Well, I had worked up quite an appetite on the way home. And I had to run back out and meet my friend Candy for another WALK!

I’m not sure how far we went, I’ll have to check on later, but it was a little less than an hour. I’m guessing 2-3 miles. Fun times 🙂

When I got home, it was finally dinner time and I made another concoction from Vegan Planet (I think I’m going all Julie Powell on this book, ha ha).

This recipe involved one of my favorite foods that I hadn’t had in a while due to being unable to find a decent one.

Now that I know what to look for (dark color, soft, etc.) I was able to find an amazing avocado at the store this weekend, on sale for 98 cents too!

I swapped a few ingredients in this recipe: it called for vegetarian chili, but I just used my leftover black beans and diced tomatoes. I also subbed a green pepper for the red and omitted the chile pepper since my diced tomatoes contained chiles already. Other than that, I think I kept everything the same (only a one serving sized recipe instead of 4). I used half the avocado.

Man did it feel good to get all those veggies in! I can’t wait to make this again since I still have leftover ingredients. After I took this picture, I found some green taco sauce in the fridge so I drizzled a little bit on there as “dressing”. The recipe calls for vegan cheese and vegan sour cream but I wasn’t feeling it. It was perfect just like this.

Oops, I totally forgot the black olives! Will have to use those next time.

I don’t think I’m ever really going to get tired of this snack either 🙂

I ate this while watching the results show of “Dancing with the Stars”. Sadly, even with my 11 phone calls to vote, my man Chuck Liddell was voted off this week 😦

I didn’t think he was the worst one on there and I think going first on Monday night sort of set him up too. But with the dances getting more difficult as the week’s go on, it was bound to happen before long. I really don’t care who wins so I probably won’t watch the show much anymore. Darn!

Anyway, that was my Tuesday. How was yours?

Day 9: Peanut Butter Monster

TGIF! What are your plans for the weekend?

Tonight I am taking a trip to Barnes & Noble with my BFF to read and talk, pretty much our favorite thing to do. Then tomorrow, Josh and I are heading out of town to visit his grandma since we have decided to stay local for the holidays (yippee)!

Yesterday’s lunch leftovers were awesome. Even though I won’t buy this soup mix again, it was good while it lasted.

This lunch was very filling and I didn’t get hungry for my snack until a few hours later, so that was awesome 🙂

Uh oh, time to get some more hummus!

After work, I headed to the gym to meet Farrah for a workout. We’re both still experiencing quite a bit of leg/hip pain from our squats and runs earlier in the week so we took it easy with a 5 minute warm up (walking) on the treadmill.

Then, we started to do the Jennifer Love Hewitt workout from the October issue of Shape magazine, but found it to be incredibly awkward for us.

The first move was challenging (side step ups/leg kick/holding a dumbbell), but then the second move proved nearly impossible for me (trying to stand up with one leg from seated position) and painful for Farrah whose knee was starting to hurt. So we ditched it and did our own thing the rest of the time, including:

  • Chest flyes, chest presses, reverse flyes
  • Upright rows
  • Abs (crunches, side crunches, etc.)
  • Tricep extensions and kickbacks
  • Bicep curls
  • Shoulder presses
  • Push ups!

I really love upper body workouts. The difference in my chest, shoulders and arms now from where they used to be is one of my favorite things about myself. It’s good to focus on the positive 🙂

We had quite a bit of rain roll through the area overnight and into today. On the way home last night, the clouds were really cool to look at:

When I got home, I so did not feel like cooking (I had planned to make a lentil curry) and while debating over having oatmeal for dinner, I ended up heating up some leftover barley and tossing in some mixed veggies and barbecue sauce. Weird, but it totally worked!

Then I nibbled on some chocolate chips and PB while we watched “A Nightmare on Elm Street 4” which means apparently, I am only tired of the bread part of that snack, ha ha.

Today, I have declared myself the Peanut Butter Monster!

First off, I had oats with peanut butter and banana for breakfast, which was so delicious on a cool, rainy morning.

And both of my snacks and lunch revolve around PB. By the end of the day, I will have had 4 tablespoons! Oh well, at least it’s good fat right? 😉

Day 7: I’m not hungry, I…

Hello friends!

After my last post, I did a lot of pondering and my head is overflowing with thoughts right now. I find that is the best time to put them on the blog 🙂

So, let’s talk about today’s eats so far.

This morning, I had a great green monster made with 1 cup Almond Breeze, 1 sliced banana, 1 tbsp wheat germ, 1 tbsp peanut butter, a few handfuls of spinach and a few handfuls of ice. It was tasty!

But it made me soooo cold. I’m going to watch the weather forecasts but I’m afraid I may have to retire green monsters for the Fall/Winter. However, I want to make it a personal challenge to sneak some greens in by using other methods (like Heather’s green oats, for example). I’m all about following the seasons.

For a snack, I had…you guessed it…more nuts.

After this snack, I got up a did a 15-minute walk. It is on my “schedule” to run today but that’s not going to happen. I am too sore from yesterday’s workout, so I think two short walks and perhaps some yoga when I get home are good enough for today. Yep.

Lunch was something I should never do. I learned a long time ago that peanut butter and jelly sandwiches do not fill me up. However, I’m a girl on a budget this month so I thought I’d give them another try.

With some mixed veggies, I felt pretty satisfied after I ate. But two hours later when I got back from class, I was more than ready for my snack!

I also had some hot chamomile tea.

After this, I really got to thinking about hunger cues and realized it was time to check in with myself again. Me and myself had sort of gotten out of synch when I got sick last week.

A little while after enjoying my snack, I thought “Great. I’m hungry again. Time to go to the bookstore and get a snack.” It had almost become an automatic response. So I waited a while and thought it through. Am I really hungry? Or is there something else going on?

After some water, another 15-minute walk, and lots of talking to myself, I came to these conclusions (for today):

  1. I am not hungry, I am bored. Bored with work today (need to get focused) and bored with my food. PB&J as good as it is, doesn’t fill me up and is rather boring. Especially when I ate it for part of my dinner last night. Bored could also be replaced with dissatisfied.
  2. I am not hungry, I have a sore throat. Sometimes I can mistake thirst for hunger. I have been experiencing a sore throat the past few days due to the ever-changing temperatures in the Ohio Valley. So I think I am mistaking a need for more fluids as hunger. I’m looking forward to grabbing a throat drop and some more tea when I get home!
  3. I am not hungry because I am not feeling anything. When I am truly hungry my stomach will growl. That is not happening at all right now. It’s true that there are times when we need to eat even when we are not completely hungry, but sitting at your desk for two more hours before you get off work is not one of those times.
  4. I am not hungry, I’m addicted. When I got sick last week, water tasted like absolute crap to me, so I downed lots of fizzy beverages which have been known to be a culprit when it comes to “faux hunger” in my case. Artificial sweeteners trick my brain into thinking it needs more food. So I’m kicking them to the curb, yet again. Yes, today is the first day so it obviously carried on beyond my sickness.
  5. I am not hungry, I’m tired/sore/etc. There are a million other things going on in my life that sometimes make me want to eat. That is why it is so important to be in touch with yourself, at all times. Today, I am feeling tired and sore. Another day, I could be happy and energetic. All of those feelings are not hunger. It’s easy to get it all confused.

What about you? Are there times when you know you aren’t hungry, even though all you can think about is eating something? What do you do?

For our Girls Night Potluck dinner tonight, I am making minestrone soup. I made it this morning, using a pre-packaged mix…something I will NEVER do again. Live and learn, right? Hope so.

This package looks innocent enough, in fact, I made this back in September 2008 and thought nothing of it (other than it was good and convenient, as we had experienced a bad wind storm earlier in the week). That was because I was not eating a vegan diet then.

I’m a bit disappointed in myself because while at the store over the weekend, I had all the ingredients to make Courtney’s taco soup, but I chose to save money and get this soup mix, which was on sale for $2.99. Not much less than the ingredients for the other soup, but still less. Unfortunately, I compromised more than I knew. I even glanced at the ingredients looking for certain offenders. I must’ve been blind that day.

**How could I have missed chicken fat and beef stock?!**

Don’t just assume because a soup has no meat in it that it doesn’t have animal products. Lesson learned. Going to take and eat the soup anyway, but I’ll be more careful from now on.

I’ve sort of had to compare this transition into vegan eating to transitioning into a healthy lifestyle. I didn’t do it overnight. Lord knows I made a ton of mistakes along the way. Lots of ups and downs. I’m not perfect. But I’m learning! 🙂

Day 6: The running munchies

Okay, so it’s time I did some re-assessing here. The thing that drives me crazy about running is the major appetite that it gives me, which in the past, led me to overeating a lot of sugar and carbs which led to weight gain and hence, a hiatus on running to calm things down.

I want to find a happy medium. I am not going to be running any marathons, I’m pretty much a short distance gal these days. I love me some 5Ks.

But I don’t want to have to give it up completely just because it makes me ravenous (or tricks me into thinking I am). I want to nip this in the bud before it gets out of hand. So after I tell you what I ate yesterday, I’m off to do some research.

Breakfast yesterday was a banana PB oats!

I used 1/3 cup Almond Breeze and 1/3 cup water this time and it did make them taste creamier and added a little flavor so I think I will do that from now on. I should’ve tried that with my pumpkin oats before they ran out. Oh well!

Snacked on some nuts mid-morning, this is becoming rather redundant but I love them 🙂

For lunch, I had leftover tofu and some broccoli.

Then I still felt hungry so I raided the leftover snacks from the day before’s baby shower and took a few crackers (checked the ingredients on the box first). Pretty good!

A couple of hours later, it was workout time! Farrah and I ran around 1.25 miles in 10 minutes. We actually sprinted a little bit because we were trying to beat a train that was coming 😉

After our “warm up” we went into the gym and did a quick strength routine, including:

  • Squats
  • Dead lifts
  • Tricep pushdowns
  • Dips on the bench
  • Seated rowing machine
  • Leg lifts (front, side, back)
  • Abs
  • Back extensions
  • Tricep kickbacks

Whoa, no wonder I am sore today. Whenever I reflect back on what we did I am amazed because it doesn’t seem like that much at the time. We even cut off early because we were both pretty sweaty and tired 🙂

When I got back to my desk, I snacked on a Nature Valley bar (last one).

I love these and they are vegan but I need to reduce my intake of processed snacks for a while (again). But they will come in handy if I’m ever stuck at a gas station needing a snack 😉

I also had some of these evil things, thank goodness they are gone now.

It’s this kind of stuff that running makes me crave. But I don’t keep them in the house so I should be okay from now on. Tortilla chips aren’t too bad but I have trouble keeping it to one serving if you know what I mean.

I had a Pampered Chef party to go to after work and so I packed a peanut butter and jelly sandwich that I ate on the road.

Most of the Pampered Chef recipes for the cooking shows include meat, mostly to showcase their baker that can go in the microwave, so I knew I had to be prepared.

They ended up making a pork tenderloin salad but the host graciously suggested they keep the meat separate. What a sweetheart! I didn’t even ask 😉

The salad contained some sort of salad mix, red onions (which she sliced with a gadget I so need to get), thawed frozen corn, and a dressing she made using ranch dressing and some seasonings from the Pampered Chef catalog. I know ranch dressing is not vegan, but I used a little bit anyway. I’m still working on getting this whole lifestyle down, so please excuse me for now.

I also had a nice plate of veggies and a few chips. Thank goodness they were some hungry kiddos running around so I couldn’t go back for more chips!

What’s funny is there was this awesome looking cake and I had zero interest in it! Usually desserts get me big time but not last night. Hmm…I’ve noticed I’m craving the salty stuff. Why is that?

When I got home, you guessed it, I was hungry…or so I thought?

I thought I was done after this but my stomach started growling around 10:30, which is way past my “cut off” eating time, so I had another snack.

Let’s just say I learned a lot today. I didn’t do anything wrong and I’m not disappointed or anything with myself. Nope. Not one bit.

I just want to change some things and get out of some ruts. I think I am officially “over” the chocolate chips and PB snack. For real. Hello burn out! And I really don’t like the bread that I bought. I mean, it tastes good but it’s too flimsy and I’d rather spend more and get better quality (like Ezekiel English muffins, yum).

Time to make some lists and get some recipes in the queue, this girl wants her whole foods back! And let’s try a few new things too 🙂
