We’re watching the countdown to UFC 101 in anticipation for the pay per view tomorrow night! If you are new to SSE, hi I’m Sarah and I’m a HUGE UFC FAN! As far as tomorrow night goes…I am rooting for Forrest Griffin and Kenny Florian 😉

Anyway, let’s talk about food since that’s what you are really here for!

Breakfast this morning was another green monster…I used to think these alone would not fill me up but throw a tbsp of peanut butter in there and I am good to go.


This GM was made with 1 cup 1% milk, 1 banana, 2 cups of spinach (handfuls really), and 1 tbsp peanut butter plus some ice. I tried a fresh banana with ice today instead of a frozen banana, but I think I will stick with the frozen banana from now on, I could tell a difference. Not huge, but if I have a choice, might as well go with what seems better.

This held me amazingly well today. I drank a cup of coffee and water until about 10:00 when I dug into my mid-morning snack.


I stuck to 2 tbsp today instead of my usual 1/4 cup to see if it made a difference and you know what? 2 tbsp actually was enough. More proof that I don’t have to eat an entire serving of something just because that is how it is measured.

Before lunch, I hit the gym for what ended up being an awesome cardio workout. I jumped on the treadmill, set the incline to 2.0% and warmed up with a 5 minute walk (3.0-3.8 mph) and then jogged for 5 minutes @ 5.0mph before I did some intervals.

I did 1 minute hard to 1 minute easy for 10 minutes, hard runs being between 6.0-8.0 (I basically upped it by 0.2 each time) and then recovered at 5.0 mph. At the end, I was hot, sweaty, had blotchy skin, but felt oh so awesome. I can’t believe I ran 8.0, even if it was just for a minute.

I cooled down walking for 5 minutes and then did a few stretches so my leg muscles wouldn’t tighten up on me. I’m hoping to get in a little yoga either tonight or in the morning.

For lunch, I had another salad and another dilemma with what container to use. Then I remembered this Pampered Chef bowl I bought at a friend’s party a couple of months ago that I hadn’t used yet. But it was a little big…


I was hoping no one would walk by my desk and give me weird looks, ha ha. What I brought didn’t quite fill it up but it gave me plenty of room to maneuver.


This salad contains: romaine, spinach, cucumber, and chick peas. I brought hummus as topping again but after the problem I had yesterday with running out, I went with a new strategy. The same one I use with salad dressing!


Dip your fork in it! By doing it this way, I got hummus with every bite instead of trying to spread it around in the bowl. It worked like a charm, I even had a little bit left over, which I promptly licked right out of the container.


A couple hours later, I was stressing out a bit (you’ve got to love paydays and the bills that suck all your money away!) and I had another cup of coffee with creamer. I love how that was my emotional “treat” of the day, ha ha.

When I got hungry later in the afternoon, I went with the oldest snack in the book, one I used to eat all the time as a kid.

When I got home tonight, Josh was going through all these places we could eat dinner, but I just wasn’t feeling it, so he got a pizza to bring home and bake and I had dinner from home which hit the spot completely.


Veggie burger with 2% cheese, spinach, and ketchup on two slices of whole wheat toast with a side of broccoli. I love the veggie burger + spinach + ketchup combo, it is one of my all-time favorites. 🙂

For accountability’s sake, I had a Coke Zero with dinner. I hate artificial sweeteners but every now and then I need something other than water with some fizzy-ness. I won’t make a habit of it though.

I also had a dark chocolate bar and got a second one out but have already talked myself out of it. I’m thinking peppermint tea is in my future though.


It’s been almost 2 weeks since I have been eating less sugar/carbs and I still can’t believe how good I feel. After my workout, I was not tired and didn’t feel tired the rest of the afternoon like I sometimes do. It’s just amazing. I feel that good.

I also used to have really dark circles under my eyes, so bad that I had to wear concealer every day but now you can barely see them, mostly just in the corner of my eye now. I wish I had done before and after pics of that!

Mari replied to my post from earlier about my most recent changes and I am so thankful for her, girl you are awesome!

Anyway, today was just a regular Monday I guess. Actually it was pretty great considering it was Monday. I started today off like I do most days with my oats!


Today’s combo was a bit different…I only used half a banana since I ate half of one the other day with a snack. And I went back up to 1/2 cup oats, 1/2 cup milk and 1/4 cup of water. Still one spoon of PB though. I am currently using Smucker’s all natural creamy. It’s on sale at Kroger for $1.99!

This was so good, it truly never gets old, for me anyway.

I had a workout with my friend at 10 a.m. and today was a cardio day. We started off warming up for 5 minutes on the treadmill, then we “rowed” with an elastic band for 10 minutes, jumped rope for 10 minutes (in 30 seconds jumping, 15 seconds rest intervals), then ran outside for 5 minutes (so fun), and came back in for a sweaty, 5 minute cooldown = 35 minutes.

In case you are wondering, we are using a workout program she found on the internet that goes for 50+ days so you have a new workout each time you go to the gym. It’s been great switching it up so much and we’re in the 30’s on the days so we still have a good few weeks left — just in time for when we start training again in the Fall (for runs).

I got back to work and drank lots of water and did a little bit of work before I decided I was not going to eat a mid-morning snack, I was just going to wait a little bit and eat lunch. I wasn’t that hungry yet (that was some powerful oatmeal) and felt more like eating my lunch next than a snack.

Could be because it was one of the best things ever…leftover pizza! I finally got hungry around 11:45.


I had the other half of my Kashi Roasted Vegetable pizza from last night’s dinner, plus a carrot with the rest of my Sabra hummus.

Don’t you just love how all the flavors of pizza soak in overnight and are so much more powerful the next day? Yum.

After writing that post earlier, I noticed again how incredible I am feeling — no mid afternoon slump. In fact, I got a lot of work done, figured out what to make for dinner and had some peppermint tea, which is pretty much my favorite 🙂

Even though I did have carbs with lunch, it was minimal (very thin pizza crust) and I didn’t feel like I needed something sweet after lunch like I used to. I also notice that now that I don’t eat fruit or other sugary stuff with lunch, I don’t get hungry for my afternoon snack as soon (I’m usually ready at 2, which makes a 6 or 7 o’clock dinner rough).

Around 3:00, I got a little hungry, so I had a hard boiled egg that was supposed to be my mid morning snack.


This held me well as I continued to work away with no yawning or sitting in front of the computer mindlessly trying to remember what I had been doing. No more hitting the vending machine for a diet soda or M&M’s on days like that. No need. I don’t think I’ve mentioned this yet, but I quit chewing gum too. And surprisingly, now that it has been a couple of weeks now, I don’t even miss it! A habit I thought I could never break.

About 4:45, I got a hunger pang and decided dinner was still far enough off that another snack would not ruin my appetite and also I didn’t want to be starving when I got home because I was going to need some time to prepare it.

So, I had this mozzarella cheese stick…


I was so excited about the dinner I thought of!

I got a 14 ounce bag of shrimp at Walmart over the weekend (for 5 bucks!) and knew that was going to be an ingredient. I love eating seafood like shrimp, tuna and salmon because I need those Omega-3’s for my low HDL cholesterol. Plus they taste good 😉

I decided to make a stir fry, incorporating a summer squash that I needed to use up and the rest of a red pepper from the fridge, plus an entire container of mushrooms. Oh and I used 2 cups of shrimp. This will serve as two meals for me 🙂


I put 1 tbsp of healthy canola oil (which also contains Omega 3) in the pan before cooking and then tossed in 1/4 cup Texas Pete Buffalo sauce for some flava! It’s almost like what I get at BD’s, only homemade and much cheaper!

I threw the veggies on first to let them brown a bit before putting the shrimp in (they were thawed from frozen and are already fully cooked).

I swear, I thought I took a picture of my bowl, but it’s not here — I must’ve gotten really excited to eat, haha. It tasted really good but much like the pizza, I’m looking forward to the leftovers that have a chance to sit in that buffalo sauce for a while 😉 I just checked and the sauce I use has no sugar (they use xanthan gum)! I didn’t even know…cool.

I’d better go, I gotta go yell at my husband who is playing Guitar Hero laying down…that’s just not cool…or rock ‘n roll. Good night!

Best salad ever!

Guess what I had for breakfast this morning? Haha…I promise that will be changing up a bit soon 😉 For those who don’t know, it’s oatmeal with PB and banana.

Mid-morning, I tried something for a snack that I hadn’t had in a while.

I had some eggs in my fridge that I needed to try and use up this week so I thought, why not make some hard boiled eggs? It was yummy (even though it kinda fell apart when I peeled it) and made a great proteinous snack.

I’m not kidding when I tell you that today’s lunch was the best salad combo I have ever made!

Romaine, cucumber, 3 oz packet of salmon, 1/4 cup chick peas, 2 generous tbsp of classic hummus….I can’t even tell you how good this was. I definitely think the salmon + hummus was what made it but everything else fit together nicely too.

Mid-afternoon, I snacked on some mixed nuts before heading to the gym for a killer upper body workout: we warmed up for 5 minutes on the treadmill, then did every exercise for triceps and lats that we could think of, plus a few abs and back exercises as well. Then we rounded it out with 10 more minutes on the tread and I climbed a bit (incline) just to give it some variety.

I am going to be sore tomorrow!

For dinner, I made grilled zucchini and grilled tofu.

Hummus goes with everything

Hello there! Hope Tuesday treated you all well 😉

This morning, I had what is slowly becoming my “usual”… oats with banana and PB!

Only this time, I cut the portions back just a bit. I used 1/3 cup of oats, 1/3 cup of milk and 1/6 cup of water instead of the usual 1/2 cup measurements. I noticed today that I was just as full with this much as I was with more, so it’s good to know that I actually require less than I think I do.

When I got to work, I had a cup of coffee with some International Delight french vanilla creamer (one of the only kinds without trans fat). I managed to hold off a mid-morning snack until 11:30!

I think this breakfast is the power combo for me. I had a mini Larabar to hold me over through my workout and until lunch. I only have one left from a race I did back in March! Took me forever to get through them 😉

Our workout today was lots of weight lifting and strength training: chest presses, bicep curls, push ups, abs, flyes, preacher curls, squats, plies…that’s all I can recall. We also warmed up on the treadmill for 5 minutes and then stayed on for 10 after our circuits were finished. I say “our” because I work out with my friend Farrah (who is a trainer) nearly every day.

For lunch, I had a big salad (or Hugh Jass as some of you say) with romaine, cucumber, chickpeas and hummus. I have decided today that hummus pretty much goes with everything. It even works as a salad dressing!

Oh yeah, a carrot snuck in there too! Whoever said that when you start eating real carrots you never go back (as in to mini or baby carrots) they were totally right! I can’t even imagine those things now.

For my afternoon snack, I had another cup of coffee (eek) and some mixed nuts. I’ve noticed that I need to do protein snacks more in the afternoons because that is when I need it the most.

Dinner was leftover pizza from last night, yay! I also cooked up some cauliflower to get even more veggies in my life 🙂

After our dinner settled, we went to play volleyball, which I haven’t done in what seems like months. We used to play weekly, but Tuesdays had just become busy for us and in the Fall for me they will again as I am taking a class. But it was nice to play tonight, I’m definitely feeling it and burned a few more calories 😉

I just ate two squares of dark chocolate and I’m just about ready for bed. Have a good night, see you all tomorrow! It’s girls night potluck tomorrow, I can’t wait 🙂

Busy schedule

I’ve noticed that since I’m taking classes again this semester, my schedule has become a little less flexible when it comes to exercising. I’m sure I could’ve done something when I got home from work last night but after eating dinner, doing laundry & dishes, all I was in the mood for was laying on the couch and watching a movie with my husband and dog 🙂 I guess some days are just like that!

I have decided to try out the “gallery” feature here at WordPress…it takes a little bit longer than uploading to Blogger, but I think the way it turned out is pretty neat. I probably won’t keep up with the captions for long, but it’s been fun to try them out. Happy Friday!

I am really loving the iced tea pictured above…it is literally just natural tea leaves + citric acid which adds tartness. No added sugar or artificiality of any kind. I highly recommend it!

I chose to eat at Subway yesterday because I didn’t bring a main course for my lunch…it was a nice treat and the chicken breast sandwich is probably my favorite, it just satisfies my appetite and the protein in the chicken really holds me over well.

I almost went back for a second dessert before chugging a huge glass of water which totally did the trick…I guess that old saying is true…when you think you are hungry you’re probably in need of some high quality H2O, haha. Hope everyone had a great night!

Last of the Chik’n

For lunch today, I had my last Morningstar Chik patty. They were very good, but I think I would like to try another brand or perhaps just another flavor of the same brand if they have any.

I had mine on the Healthy Life 100% natural whole wheat bread (which is so good!) with a triangle of Laughing Cow light swiss cheese and ketchup. I also made a small side salad with mixed greens, carrots, chopped red pepper and cucumbers.

For a snack later in the day, I had my favorite hummus, Athenos roasted red pepper (the Spicy three pepper is a close second though), with some actual pita. I hadn’t had it in a while and it really hit the spot! I also had some more tea, green this time, because I am cold!

I am going to Panera with a friend tonight and we are making the chocolate tofu pudding (following recipe exactly this time) and indulging in some bubbly, I can’t wait! 🙂
