Mac ‘n Teese

In addition to the vegan mozzarella I made pizza with, Chicago Soy Dairy was kind enough to send me some non-dairy creamy cheddar sauce to try too!

005It didn’t take long for me to decide that I wanted to make vegan mac ‘n cheese! Actually, mine turned out sort of like a casserole.

001 I cooked half a box of pasta shells and then heated up the cheese sauce with it. It was really easy to make and looked really good…but it smelled funny. This made me a little nervous to eat it.

I mixed in 2/3 cup of cooked mixed veggies and a serving of Morningstar Chik’n strips I had leftover in the freezer that I wanted to get rid of. It turned into quite the interesting dish!

002 I am happy to say that even though it smelled weird, this “teese” tasted AWESOME! I liked it a lot better than the mac & chreese that I’d tried before (which is okay, but this was better).

004The batch I made was big enough for lots of leftovers, including some I had with half a Jamaican Seitan sandwich I got at Ramsi’s on Friday night.

006I will definitely be ordering some more of this stuff for whenever I’m in the mood for mac & cheese, vegan style.

Day 7: A little too much fun

I took Friday off work to catch up on a ton of errands, including buying gifts for Mother’s Day and the wedding and two graduation parties I’m attending today!

I started the day off with a slice of homemade whole wheat bread that my stepmother-in-law made for me topped with peanut butter and banana. It’s so good!

I also had some green Naked juice!

I got a black coffee from Starbucks to enjoy whilst shopping!

For lunch, I had my leftovers from Ramsi’s of course 🙂

Before getting ready for my fun night out, I snacked on an apple with peanut butter.

Then I got to go to this!

But before the show, we went to BBC (Bluegrass Brewing Company) where I tried a couple things called “Beertails” which are cocktails made with their special brews.

The first one I tried was called a Wheat Spritzer, which contained grapefruit, orange juice and wheat beer. It was good and not too sweet!

We also got to sit outside even though it ended up being rather windy out!

I ended up ordering another drink (it was happy hour) and this time I tried the Cosmo of the Kings (I think?) which was made with their raspberry meade.

For dinner, I ordered the Spinach Burger (no cheese, no mayo) and fries, which wasn’t really a challenge friendly meal but still pretty good.

The burger was yummy! I loved how when I was taking bites out of it, I could actually see the spinach. It’s homemade which is always better than when a restaurant serves you a Boca patty!

Oh my heavens, the concert was great. The Goo Goo Dolls have been my favorite band for the past uhh…15 years or so? Gosh, I’m getting old, ha ha! But I love them and seeing them in concert is always a great experience.

After the show, I wiped the drool from my face we met up with some friends who were in from out of town for the show and headed across the street to Cunningham’s.

I wasn’t really in the mood for anything to eat, but I was quite thirsty so I chugged a few glasses of water but then we all decided to have another drink.

I got the Chateau St. Michele Riesling which was awesome!

However, three alcoholic beverages in one night (even though spread out and none very strong) was not the best display of moderation on my part. I don’t feel bad physically at all, but I do think I need to control myself a little better in the future. Plus, I don’t need to drink so many calories!

All that being said, it was a great night and I’m so glad I got to spend it with my girlfriends!

I did get a little hungry by the time I got home (at 1 o’clock!) so I had a small cup of oats with peanut butter, perfect 🙂

Old favorites

This morning, I felt like having something I hadn’t eaten in a while. This used to be one of my favorite oatmeal combos before I discovered including nut butter.


Raisins and chocolate chips! I love when it all melts and you stir it up together. It’s like a raisin chocolate chip oatmeal cookie 🙂

I snacked on some nuts mid morning and drank two cups of black coffee because for some reason I was really cold today!

For lunch, I had leftover tofu stir fry from the other night.


I plan on making it again sometime this week, I’ve got a new bag of veggies to try out, plus I want to take Mari’s suggestion of including peanut butter.

After lunch, I headed to the gym for a short run and weight training session. It was great!

I refueled with some soy yogurt and granola when I got back. I practically inhaled it.


I’m all out of granola now so I think I’ll back off the yogurt for a while since that was really the only reason I got it. It’s just too high in sugar for my liking.

I had more leftovers for dinner: tonight it was red beans & rice leftover from Sunday.


I also had a pita with Smart Balance after I realized that alone wouldn’t fill me up.

I’m having the girls over tomorrow night so I dove right into housework to get this place in decent shape for my guests. That worked up a little appetite and I had just the thing for it.

The new season started tonight so I know a lot of people are freaking out right now, ha ha. I’m not a fan myself but my mom says I can’t call her while the show is on!

Breakfast and dinner

That is seriously what I should change the name of this blog to, ha ha.

For some reason, once again, I managed to just take pictures of breakfast and dinner.

I started this very cold, icy day with a smoothie! Brrr…


Contains: 1 cup of plain soy milk, 1/2 cup frozen pineapple and 4 frozen strawberries. Yum!

I also had an English muffin with PB&J to go with.


Oh, wait! I forgot about the morning snack 😉

I ate a HUGE carrot and tried a new hummus: Athenos artichoke and garlic. I loved it. Hummus can do little wrong by me though.


Lunch was leftover spaghetti. It was good but you’ve seen it. I love leftovers, it really helps stretch my ingredients plus saves money too.

I ate a Larabar after my workout today but it too escaped my lens.

For dinner, I made yet another version of Mama Pea’s roasted chickpeas. Her original recipe was pumpkin spice and I feel like I’ve messed around with it enough to list the ingredients on here.


  • 1 can of chickpeas, drained and rinsed
  • 1 tsp extra virgin olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp ground cinnamon
  • A few shakes of curry powder
  • A few shakes of cumin
  • A shake or two of salt
  • 1 tbsp Thai Kitchen sweet red chili sauce

Drain and rinse the chickpeas. Add all the other ingredients with them in a bowl and then stir until the chickpeas are coated. Put in the oven at 400 degrees for 15 minutes, stirring around once during cooking.



I think these were my favorite so far. I like to combine sweet and spicy flavors I’ve noticed. But I love experimenting with different flavors. It keeps roasted chickpeas interesting!

The rest of my plate contained mixed veggies, a pita pocket and Smart Balance Light.

I was supposed to go to yoga tonight but I ended up staying home and getting a lot of work done including homework (taking online classes makes me forgetful sometimes), cleaning, and baking for tomorrow night (you’ll see soon).

I just snacked on half an English muffin with PB and chocolate chips 🙂


Thank goodness for tea and 9:00 cut off times. I totally could’ve eaten another one of these!

Do you invent recipes or try out ones that others have come up with?

I love following others’ recipes but I can’t wait to make my own someday.

Party time

After my great 5 mile run on Saturday, I drank some water mixed with this stuff:


It didn’t have too much flavor, which I liked, plus it has a simple ingredients list and none of that crappy high fructose corn syrup or sugar like Powerade and stuff like that (ick).

I bought another one at Whole Foods this weekend (they are 39 cents). I typically only use stuff like this on long runs (longer than 4 miles).

For lunch, I had my PF Chang’s leftovers with a pita pocket 🙂


When I left for my friend Courtney’s house to get ready for her 30th birthday party / ‘80s prom, I knew it would be a late night so I got an iced coffee with soymilk to wake me up!


A few hours later, I made a run to Subway which I pretty much inhaled while we were getting ready. It’s a veggie delight with a pile or tortilla chips (oops).


I snacked on A LOT of chips, plus some of this and diet Coke over the course of the night.


The champagne was not vegan friendly (I’m seriously just going to have to quit drinking) nor was the one cupcake I decided to have but it was a fun night so I’m not going to dwell on it too much.

Day 30.2: Suzie’s checkup

I just realized how funny it is that yesterday I got my blood work and everything done and today Suzie got hers (and some shots, which I thankfully did not have to do)!


Of course, she did great and everything is perfect. She’s a happy healthy doggie, I’m so lucky 🙂

When we got home from the vet, Suzie took a nap and I snacked on some peanuts.


I decided that since I already have the day off, I might as well run some errands today that I usually do on Saturdays. Which means grocery shopping time!

I ended up going to Meijer and Kroger because Meijer had some great sales going on and Kroger is just right down the street so I saved some gas.

I kind of chuckled a bit at Meijer because they played the “X Files” theme song and music from “A Nightmare on Elm Street.” I can’t believe tomorrow is Halloween, it really snuck up on me this year.

Anyway, I got all this stuff for $50!


Lots of new stuff to try this week, I can’t wait. Kept Josh’s stuff in the picture just for fun 😉 Don’t you love how I sat the ground beef on top of the tofu? Ha ha.

When I got everything put away, I was majorly hungry so I heated up my leftovers for lunch, which was the exact same meal I had for dinner last night.


I took Suzie for a short walk and checked the mail where I found this awesome package from my favorite vegan, Carrie 🙂


I m so excited to try some vegan-friendly beauty products, especially that soap because now I can stop using Josh’s. Oops!

I feel laundry dishes a nap coming on, so I’m going to sign off for now. Hoping to find somewhere good for Josh and me to have dinner tonight that won’t break the bank.

Day 24.3: A new favorite?

Hey guys! Sorry for the delay. This is truly the first opportunity I’ve had to sit at the computer and catch you up on all my adventures!

On Saturday, I went Halloween shopping with Court. While we were out, I tried a new flavor of Larabar.


Either I was really hungry or this bar was magical because IT WAS DELICIOUS! I wasn’t too excited when I bought it at Whole Foods earlier in the day but it more than surprised me. I think it might be a new favorite?

I also had a venti iced coffee with soy milk while we were out 🙂


For dinner, I heated up the rest of my stromboli from Spinelli’s on Friday night. It was better left over, like most pizza-related things 😉


Then we headed up to Buffalo Wild Wings for the UFC pay per view. I didn’t take any snacks with me because I didn’t really have anything too portable other than bars and I’d already had one earlier in the day.

So around 10:00, I splurged on some french fries as a “snack” if you will.


When I got home, I almost had another snack but realized I wasn’t really hungry so I brushed my teeth and went to bed for the night 🙂

I didn’t do any formal exercise on Saturday but I did 2 hours of grocery shopping and 4 more shopping with Court!

So this is one of the new things I like about my life. Counting things like shopping as exercise! I felt good about this seeing as how my feet and knees were pretty sore by the end of the day 🙂

The fights were okay but the last couple of pay per views have been rather boring. We’ll see in a few weeks when the next one is on – which thankfully is being shown on cable TV, so we can have a viewing party from home!

Technical TV difficulties

Good evening friends! Right now I should be watching the new 90210 but that channel decided to go all wonky here and they are showing “The Golden Age of Country” infomercial…what?!

Anyway, no big deal, perhaps it is God’s way of telling me not to waste time on television, ha ha. I hardly watch anything now, so why not just stop it all?

For breakfast this morning, I had a nice bowl of 5 grain cereal with peanut butter and a sliced banana. Perfection.

I’m so excited I figured out that close-up setting on my camera, I can tell a big difference in my pictures now 🙂

Mid-morning, I skipped my walk (busy and rainy out) but snacked on some more soy yogurt, just plain this time.

This was pretty good but I like the strawberry better. I still have four more to eat before September 29th so expect to see these a lot!

Before lunch, I hit the gym for another workout with my girl Farrah. First, we ran a mile outside (sweaty and humid) that was totally awesome…I told her “I must’ve eaten my Wheaties today” because it was the best one mile run I’d had in a while. I felt fast and it felt easy. I think I’m getting the hang of this again.

Afterwards, we came back in and did lots of weights, focusing mainly on triceps with a bunch of bicep, shoulder and lat exercises worked in. We also did a few ab moves too. I love how our workout is different almost every time!

For lunch, I had leftover tofu from last night (left) and leftover Baba Ghanouj with pita from Sunday’s lunch at Zaytun’s (right). So so good.

Lunch was definitely my favorite meal of the day…or was it?

Later in the afternoon I had some tea and some mixed nuts that totally escaped the camera, oops!

After work, I was supposed to meet my friend Candy for a walk but she had to cancel due to injury. I hope she heals soon, she said she should be good to go in a couple of days.

But it worked in our favor because right at about 7:00, when we would’ve been a mile from home, a huge rain/thunderstorm rolled through. Thank you Lord for lookin’ out 😉

For dinner, I decided to try something I’d never made at home before:

I picked up this box over the weekend for $2.99 at Kroger. It seemed a little high at first but it was totally worth it because I have three more servings in my fridge for the rest of the week!

I followed the instructions on the box for broiling instead of frying because that just made more sense to me. I’m not a fryer!

Dipped the falafel in hummus and the potatoes in organic ketchup. It really doesn’t get much better than that. The falafel was good, just a bit dry, I think I could’ve added more water to the mix. But they were still delicious and I had to pack the leftovers away before I ate them all…just kidding.

I did some household chores in a jiff because I thought I had to hurry to watch 90210 at 8:00 but since it never came on, I’m free to just relax the rest of the night. Along with some tea and dark chocolate.

Here is the chocolate I eat. It’s vegan and pretty low in sugar. And this box has lasted me forever, totally worth it. One “coin” has 30 calories and one is usually enough for me…bonus!

Happy Thursday y’all! Thank God it’s almost Friday, right? Thank you for all the great comments on my last post about the Bittman article! I appreciate it.

For breakfast this morning, I had two Eggo waffles, a Morningstar Farms patty and some canned pears that I drained and rinsed (can you tell I’m trying to use stuff up)?


I debated over whether to put something on the waffles but in the end I just ate them plain and enjoyed it that way 😉

Mid-morning, I snacked on some mixed nuts and took a 15 minute walk, yay!


For lunch, I reluctantly had the leftover Lentil Rice and Veggie Bake that I made for girls night this week. It was actually kind of better today or perhaps I was just really hungry 😉


Yes, I threw some Brussels on there! I love them and they are high in Vitamin C! That is especially cool with cold and flu season upon us.

After lunch, I had some fruity tea and a piece of dark chocolate. Sorry recycled pic here, the other one disappeared!


For my afternoon snack, I decided to give soy yogurt another try. I’ve been doing some research and it is hard to find non-dairy yogurts that are also low in sugar! I’ve found one brand that I want to look for next time I’m at Whole Foods but for now, this one had to do.


This little container has 18 grams of sugar. This made me realize I need a priority? What is going to take precedence? Sugar or the fact that this is non-dairy?

I’ve long said I would not choose “junk” in favor of avoiding meat or dairy products. There are a lot of restaurants where the only vegetarian or vegan options would be French fries. I’m sort of in a pickle here. Ooh pickles…I digress.

But for now, the soy yogurt was good and I won’t eat it everyday so perhaps it can remain a part of my diet? I also don’t want to overdo soy products. This does have some good points though.


To “bulk” it up a bit, I added two tablespoons of Ezekiel golden flax cereal. I did just a little bit first to try it.


But it was totally yummy so I threw the rest on there and went to town. The yogurt was so creamy and just a bit sweet, not terribly overwhelming like some of the fruit flavors. I’d get it again.

After work, I got to take an hour long yoga class. It was pretty simple, for beginners, but I enjoyed it immensely. I left there feeling relaxed and peaceful which is my favorite thing about yoga.

Our teacher was also really funny! She was an older woman and she made the funniest little jokes during our practice. She said her instructor once told her that if you don’t breathe during your asanas, your brain will freeze, ha ha!

The class was great and when I got home I was STARVING! So I hurried up and made dinner. On the menu tonight…TOFU!


I got a small package of Silken Extra Firm tofu (Mori-Nu), drizzled some canola oil on it, sprinkled on some seasonings and baked it in the oven at 425 for 25 minutes (a bit longer since it’s Silken).

On the side I had some mixed veggies, a pita pocket (plain) and some ketchup for dipping the tofu. It was so delicious!

I’m enjoying a nice cup of peppermint tea and a piece of dark chocolate. This kind that I have, it is vegan and it only contains 5 grams of sugar per 3 pieces! Thank goodness I don’t have to make a choice there 😉

The cool thing is that this is MY diet so I can decide. I hope you do the same for yourself. Good night!

Mari replied to my post from earlier about my most recent changes and I am so thankful for her, girl you are awesome!

Anyway, today was just a regular Monday I guess. Actually it was pretty great considering it was Monday. I started today off like I do most days with my oats!


Today’s combo was a bit different…I only used half a banana since I ate half of one the other day with a snack. And I went back up to 1/2 cup oats, 1/2 cup milk and 1/4 cup of water. Still one spoon of PB though. I am currently using Smucker’s all natural creamy. It’s on sale at Kroger for $1.99!

This was so good, it truly never gets old, for me anyway.

I had a workout with my friend at 10 a.m. and today was a cardio day. We started off warming up for 5 minutes on the treadmill, then we “rowed” with an elastic band for 10 minutes, jumped rope for 10 minutes (in 30 seconds jumping, 15 seconds rest intervals), then ran outside for 5 minutes (so fun), and came back in for a sweaty, 5 minute cooldown = 35 minutes.

In case you are wondering, we are using a workout program she found on the internet that goes for 50+ days so you have a new workout each time you go to the gym. It’s been great switching it up so much and we’re in the 30’s on the days so we still have a good few weeks left — just in time for when we start training again in the Fall (for runs).

I got back to work and drank lots of water and did a little bit of work before I decided I was not going to eat a mid-morning snack, I was just going to wait a little bit and eat lunch. I wasn’t that hungry yet (that was some powerful oatmeal) and felt more like eating my lunch next than a snack.

Could be because it was one of the best things ever…leftover pizza! I finally got hungry around 11:45.


I had the other half of my Kashi Roasted Vegetable pizza from last night’s dinner, plus a carrot with the rest of my Sabra hummus.

Don’t you just love how all the flavors of pizza soak in overnight and are so much more powerful the next day? Yum.

After writing that post earlier, I noticed again how incredible I am feeling — no mid afternoon slump. In fact, I got a lot of work done, figured out what to make for dinner and had some peppermint tea, which is pretty much my favorite 🙂

Even though I did have carbs with lunch, it was minimal (very thin pizza crust) and I didn’t feel like I needed something sweet after lunch like I used to. I also notice that now that I don’t eat fruit or other sugary stuff with lunch, I don’t get hungry for my afternoon snack as soon (I’m usually ready at 2, which makes a 6 or 7 o’clock dinner rough).

Around 3:00, I got a little hungry, so I had a hard boiled egg that was supposed to be my mid morning snack.


This held me well as I continued to work away with no yawning or sitting in front of the computer mindlessly trying to remember what I had been doing. No more hitting the vending machine for a diet soda or M&M’s on days like that. No need. I don’t think I’ve mentioned this yet, but I quit chewing gum too. And surprisingly, now that it has been a couple of weeks now, I don’t even miss it! A habit I thought I could never break.

About 4:45, I got a hunger pang and decided dinner was still far enough off that another snack would not ruin my appetite and also I didn’t want to be starving when I got home because I was going to need some time to prepare it.

So, I had this mozzarella cheese stick…


I was so excited about the dinner I thought of!

I got a 14 ounce bag of shrimp at Walmart over the weekend (for 5 bucks!) and knew that was going to be an ingredient. I love eating seafood like shrimp, tuna and salmon because I need those Omega-3’s for my low HDL cholesterol. Plus they taste good 😉

I decided to make a stir fry, incorporating a summer squash that I needed to use up and the rest of a red pepper from the fridge, plus an entire container of mushrooms. Oh and I used 2 cups of shrimp. This will serve as two meals for me 🙂


I put 1 tbsp of healthy canola oil (which also contains Omega 3) in the pan before cooking and then tossed in 1/4 cup Texas Pete Buffalo sauce for some flava! It’s almost like what I get at BD’s, only homemade and much cheaper!

I threw the veggies on first to let them brown a bit before putting the shrimp in (they were thawed from frozen and are already fully cooked).

I swear, I thought I took a picture of my bowl, but it’s not here — I must’ve gotten really excited to eat, haha. It tasted really good but much like the pizza, I’m looking forward to the leftovers that have a chance to sit in that buffalo sauce for a while 😉 I just checked and the sauce I use has no sugar (they use xanthan gum)! I didn’t even know…cool.

I’d better go, I gotta go yell at my husband who is playing Guitar Hero laying down…that’s just not cool…or rock ‘n roll. Good night!
