…to feel like my old self again! Today was a red letter day if I do say so myself. Not only did I eat healthy, exercise and get lots of work done, I also got a lot more housework done tonight. The only thing I didn’t do was go through boxes, but I plan to start on that tomorrow. No need to overdo anything, right?! 😉
Mid-afternoon before I left work, I had a cheese stick:
I did a really quick strength routine because I was pressed for time, but I managed to get the following done:
2 sets of chest presses (set 1 – 15lbs x 12 reps; set 2 – 20 lbs x 10 reps)
2 sets of shoulder presses (set 1 – 10 lbs x 12 reps; set 2 – 12.5 lbs x 10 reps)
2 sets of bicep curls (set 1 – 12.5 lbs x 12 reps; set 2 – 15 lbs x 10 reps)
2 sets of tricep extensions (set 1 – 12.5 lbs x 12 reps; set 2 – 15 lbs x 10 reps)
2 sets of lunges (with one leg on weight bench, 10 reps per leg per set)
2 sets of squats (10 reps per set)
2 sets of table leg-lifts aka Caitlin’s ab exercise day 2 (15 reps per set)
2 sets of bicycle crunches (30 reps per set)
I also drank tons of water over the course of my workout. I’ve noticed that when I’m at work and the gym, I am better at drinking more water than when I am at home on vacation!
When I got home, I was hongry, so I made a big salad for some filling delicious veggies…romaine lettuce, 8 grape tomatoes, 1/3 of a cucumber, 1 tbsp turkey bacon bits, 1 tsp parmesan cheese and 2 tbsp light balsamic dressing…
Saturday night’s dinner at BD’s Mongolian Grill was great…I just noticed that two nights over the weekend, I had more of a “feast” than dinner. But I thoroughly enjoyed myself and am now ready to get back to my “normal” way of eating, smaller meals 😉
I started things off with the salad bar, I piled my plate high with salad greens, cucumbers, chick peas (love!), carrots, red onions, a little bit of cheese, then drizzled some fat free raspberry vinaigrette on top.
I tried the two soups they offered. I believe the first one (pictured below) was some sort of potato soup; the other was New England Clam chowder for sure, I’m not a big fan. I had three bites of the potato and only one of the other just to see what it was (they didn’t have labels up, tsk tsk)…They were both just too heavy and creamy for my liking.
Now for the main course, my fantastic bowl of shrimp, mushrooms, peppers, onions, broccoli, water chestnuts, red skinned potatoes, all stir fried in a spicy buffalo sauce spiked with minced garlic and a side of brown rice!
Even though I was full from dinner, I “couldn’t help” but dig into the marshmallows and chocolate hazelnut spread again! We should’ve gotten something else for dessert, I honestly think if I’d had another option I would’ve passed this up. Let’s just say, there was more than this and there is no longer chocolate hazelnut spread in my house! Thank goodness…

I woke up rather late this morning but I didn’t panic, I just grabbed a to-go breakfast of a Larabar, banana and chocolate soymilk (in my favorite to go cup):
Oh….my….goodness….has anyone else had the peanut butter cookie Larabar yet? It is the best bar I have ever had, no joke. I looooove peanut butter stuff and this was unbelieveable. You gotta try it, I’m so glad they came out with some new flavors, I wasn’t too excited about the other ones except for ginger snap.
My friends and I have started a potluck group on Wednesday nights; we have been having girl’s night for years, but we have always gone out to eat and so in an effort to save money and our health (and in return getting more time to spend together), we have started bringing our own stuff over.
This week, I had to do a side dish, so I made a salad with 4 cups baby greens (a spring mix), 1 cup fresh sliced strawberries (I sprinkled some lemon juice on them to keep them from wilting), 1/2 cup toasted almond slices, and some Annie’s gingerly vinaigrette dressing. I have tossed it all together except for the dressing; I haven’t decided how much dressing I’ll add in, but if I end up using 1/2 cup, the salad should be 90 calories per serving (I made enough for 4 of us).
The best part is I didn’t even have to buy anything, I had all of that stuff at home already 🙂
Boca Original Vegan burger w/ veggie swiss cheese, spicy mustard, spinach leaves and tomato on a whole wheat English muffin; salad – romaine, spinach, carrots, tomato, cucumber, green pepper, Annie’s Naturals Lowfat Honey Mustard Vinaigrette dressing (soooo good!); 1 small plum.
About 325 calories.
I went for a nice long hour walk, I wanted to get that in before it got too hot and humid (it’s supposed to be 90 here today, wow)! So I feel pretty good now. I’m hoping to still hit the gym after work though, either for a short run or the elliptical trainer.
