I feel like Popeye

This week, thanks to a feature post on Healthy Ashley‘s site, I discovered the wonderful Angela of Oh She Glows! I’ve been following her site for the past few days and I’m so glad I found her 🙂 She’s also doing a Crap Free Week right now to detox from sugar, but she’s a couple days ahead of me. Anyway, for breakfast, she’s been having what she refers to as “Green Monsters” aka breakfast smoothies that include greens. I had seen people do spinach smoothies before and had always wanted to try one and for some reason she inspired me to do so today.

Here’s what went into my smoothie, taken directly from Angela’s site, with some slight modifications:

1 cup milk

A few ice cubes

Two big handfuls of spinach leaves

1 tbsp ground flax

1 medium banana

Oh…my…word. This was so good it made me wonder why the heck I haven’t been drinking these everyday! What an awesome way to get veggies in first thing in the morning. She was right too, I could not taste the spinach at all, it tasted very much like a banana smoothie. Every once in a while, I could feel the texture of the spinach (and flax) but I think I could’ve blended it a bit longer. Still, that wasn’t bad or anything. Plus look how cool the green color is! 😉

I also had a slice of bread (not toasted) with a tbsp of natural peanut butter. This breakfast was awesome and I can’t wait to make more of these smoothies in the future. Especially in the summer time when its warmer, although yesterday we were in the 60’s (raining and windy though). The temps are going back down today unfortunately but hopefully Spring is right around the corner (please)!

I just feel so good about starting off my morning that way. They are right when they say breakfast sets the tone. If you really enjoy breakfast and it makes you feel good, you are likely to feel that way the rest of the day. How cool. I’m thinking about having another tomorrow and using different fruits. Yay!

How sweet it is…

…to feel like my old self again! Today was a red letter day if I do say so myself. Not only did I eat healthy, exercise and get lots of work done, I also got a lot more housework done tonight. The only thing I didn’t do was go through boxes, but I plan to start on that tomorrow. No need to overdo anything, right?! 😉

Mid-afternoon before I left work, I had a cheese stick:

My workout consisted of 20 minutes on the treadmill: 5 walking to warm up, 5 increasing incline by 2.0 every minute, then 5 running from 5.0-5.5, and 5 walking to cool down.

I did a really quick strength routine because I was pressed for time, but I managed to get the following done:

2 sets of chest presses (set 1 – 15lbs x 12 reps; set 2 – 20 lbs x 10 reps)
2 sets of shoulder presses (set 1 – 10 lbs x 12 reps; set 2 – 12.5 lbs x 10 reps)
2 sets of bicep curls (set 1 – 12.5 lbs x 12 reps; set 2 – 15 lbs x 10 reps)
2 sets of tricep extensions (set 1 – 12.5 lbs x 12 reps; set 2 – 15 lbs x 10 reps)
2 sets of lunges (with one leg on weight bench, 10 reps per leg per set)
2 sets of squats (10 reps per set)
2 sets of table leg-lifts aka Caitlin’s ab exercise day 2 (15 reps per set)
2 sets of bicycle crunches (30 reps per set)

I also drank tons of water over the course of my workout. I’ve noticed that when I’m at work and the gym, I am better at drinking more water than when I am at home on vacation!

When I got home, I was hongry, so I made a big salad for some filling delicious veggies…romaine lettuce, 8 grape tomatoes, 1/3 of a cucumber, 1 tbsp turkey bacon bits, 1 tsp parmesan cheese and 2 tbsp light balsamic dressing…

Dinner was a small steak topped with a few mushrooms (stole from husband), 1/2 cup black eyed peas (supposedly good luck for the new year?), and a sandwich thin with Smart Balance. I decided to pass on wine tonight, I don’t think I am an every day wine drinker and I enjoy it more when it’s only once or twice a week.

Currently, while sitting here blogging from home, I am drinking this strawberry smoothie! I just put 1/2 cup vanilla soymilk, 1/2 cup yogurt and 2/3 cup frozen strawberries in the blender and voila!

Now that I have made myself cold, I think I am going to make a cup of tea and hit the sack to read some while the husband stays downstairs yelling at the Texas game, haha…

Tuesday = Friday

Yesterday was fake Friday to me, so I am feeling like it’s the weekend right now which is why I have not kept up very well with my blogging…I know, excuses, excuses!

Anyway, here is the rest of Tuesday/Friday for ya:

Lunch – Tomato bruschetta veggie burger with mustard, side salad with sunflower kernels, pumpkin seeds, Parmesan cheese & balsamic vinaigrette, tangerine.


Mid-afternoon snack #1 – This was more of an extension of lunch because it didn’t quite fill me up (and was a little low calorie-wise).

Real mid-afternoon snack – Light yogurt with 1/2 cup Kashi Go Lean, woo hoo!

Dinner – Hamburger (yes, a real one!) with 2% cheese & ketchup, broccoli, barley (1/2 cup), 1/2 a sour pickle from NYC 🙂 My father-in-law brought these back for my husband last time he went. I also had one dark chocolate kiss after dinner.



After dinner, we went and played volleyball for about 1.5 hours…there was a time when we used to play for 2+ but it’s been a while…we’re getting old, haha.

When I got home, I was really thirsty and craving something sweet and refreshing, so I decided to make a smoothie…it’s 1 cup plain soymilk, 2/3 cup frozen strawberries, and a packet of fat free hot cocoa – YUM!

Much later on in the night, I dug into the peanut butter…more than once. Hmm…oh well!

Too cold for smoothies?

This morning, I woke up and took the dog for a walk and then debated over what to have for breakfast. We are going grocery shopping this weekend, so my goal was to use up a lot of the stuff we already have on hand.

I decided on a breakfast smoothie (1 cup skim milk, 1/2 frozen medium banana, 1 packet of hot cocoa mix, 1 tbsp peanut butter, ice) and two poached eggs…

It was a great filler, but I’m afraid the smoothie made me really COLD! Brr…luckily I had some coffee to warm me up. Since I had a cup of milk with breakfast, I chose to just have my coffee with 1 packet of Equal and no “cream”…

After today’s experiment, I think I will stick to warmer foods in the a.m.! It might just be too cold for smoothies now 😉

I am still perplexed by our weather. Usually, this time of year, it has only begun to cool down and we still have some days with 70 degree temperatures here and there, sometimes even Christmas Day is warm. But it’s like we’ve hit winter early 😦 The HIGH today is 36.

I like the seasons changing and all but this is just way too soon! Plus me and cold weather aren’t exactly friends, but I’ll just layer up and deal with it. Hopefully an early winter means an early spring? 🙂

HAPPY FRIDAY TO ALL!

Hello, beautiful!

Even being car-less and sleep deprived can’t take away the satisfaction I got from today’s breakfast, not to mention my early morning walk! 🙂

I started things off with a smoothie: 1/2 cup Dannon plain fat free yogurt, 1/2 cup skim milk, and 2/3 cup frozen strawberries (145 calories). This smoothie was heavenly. I thought it would be plain tasting because of the yogurt, but the strawberries added just the right about of sweetness. I think I’ve really cured some cravings and tastes thanks to the SBD.

Then I reluctantly made what turned out to be a gorgeous omelet! Using the generic store brand egg beaters stuff, I made a mushroom-broccoli omelet (using leftover broccoli from last night) and some turkey sausage on the side. I expected the omelet to taste funny because it wasn’t real eggs (I haven’t had egg substitute in a long time) but I actually think I preferred this one! Something about it was softer and easier to fold over too.

The brand I bought comes in these convenient little cups that you can just pour into the pan. Each one is the equivalent of 2 eggs but the whole cup is only 60 calories!

I have eaten my mid-morning snack and had 2 cups of coffee (a rarity) with skim milk and Splenda. I’m off to go work out now!

Only Tuesday?

I guess I did so much yesterday that I could’ve sworn today was Wednesday already, ha!

I overslept this morning by 30 minutes so I had to make breakfast quick. I made a poached egg (using my microwaveable egg poacher), a piece of toast with real blueberry preserves (purchased in Gatlinburg, TN), and a smoothie (1/2 cup OJ, kiwi, peach, plum). It wasn’t my favorite combination but it definitely tasted good and got some fruit servings in! Sorry for the dark pic, the lighting in our room is not very good.

I fought the cold

…and the cold won!

Well, hi folks! Yay, I’m not dead 🙂 But I was very, very sick. I think I am finally on the mend and ready to get back to normal life now. This cold kicked my butt!

There was plenty of eating while I was off and sick, the cold took everything but my appetite. I had some really weird cravings, mostly for carbs and sweets, and I indulged a little, but not too much.

Here are a few pics I managed to take while I was ill…

Breakfast (can’t remember which day) – Pumpkin raisin oat bran (recipe from Tina at Carrots ‘n Cake) it was really good!

Sunday breakfast – French Toast (whole wheat with sugar free syrup)!


Smoothie – OJ, banana, plum and ice (I made a bunch of these while I was sick, many different combinations, I used up most of the fruit in the house!)

Thank you, Michael Phelps

My friend sent me part of that article about what Michael Phelps eats for breakfast. I only had to see the words “chocolate chip pancakes” once and I instantly wanted them. So after waiting patiently, I made some this morning using my Hodgson Mill Buckwheat pancake mix and 1/3 cup semisweet chocolate chips (makes 4, I only ate 2).

Oh my heavens! Thank goodness my taste has somewhat come back because these were to die for 🙂 Topped with sugar free syrup too, of course!

I also had some veggie sausage and a smoothie made with OJ, mini-banana, raspberries and blackberries for some power vitamins!

Sick?

I think I have come down with that dreaded summer cold, although I think the change in weather is what got me, it really feels like fall around here right now 😉 Anyway, here’s a wrap-up of my weekend…

Friday:

Dinner – Zucchini, tomatoes, and onion with coucous (I had another 1/2 serving of each)

Not pictured: Tall mocha lite frappuccino! (forgot to take pic)

I bit into a Snickerdoodle and remembered I really don’t like them, so I didn’t eat it. But then I found the peanut butter wafers 😉

Saturday:

Buckwheat pancakes!

2 pancakes with sugar free syrup, Morningstar Farms ‘sausage’ patty and dried apricots…a little while after this, I went for a 60-minute walk/run, which was great!

Refueling smoothie: 1 cup soymilk, 1/2 frozen banana, packet of fat free hot cocoa mix (yum)

Lunch by the pool: peanut butter & preserves on whole wheat with applesauce (not pictured: 100 calorie pack chocolate covered pretzels!)

Snack: A new discovery! Mini-Luna bars! Found at Target…
Had a late dinner, so needed some honey roasted peanuts to hold me over….

Beer of the month: Leinenkugel Sunset Wheat 🙂


Grilled chicken salad with no croutons or cheese and lite italian dressing –


Kashi Heart to Heart cereal (about 1/2 cup)…I actually ended up eating this in a bowl with a splash of soy milk…

Sunday:

Oat bran with banana and caramel peanut butter

Coffee with 2 tsp non-dairy creamer

Muscle Milk Light protein bar — this tasted soooo good, very chewy and I loved the chocolate coating…sadly, I noticed ‘partially hydrogenated’ in the ingredients. What gives?


Lunch at Chili’s…Chicken fajita pita with a side of apples (only ate half, they weren’t very good, I want some good cinnamon apples! Going to have to make them myself I guess!)


Caramel lite frappuccino!

Dinner (not pictured): went to a party and left my camera/phone in the car! But I had some fruit, potato salad, turkey, and salad greens.

Baked some zucchini bread (trying to use up all the zucchini my mom gave me!) and I had to taste a piece (warm) to make sure it was okay to bring to work 😉 I used the recipe from my Better Homes & Gardens cookbook.

1 week!

I am leaving the country a week from today! I am excited but also kinda nervous. But just FYI, I will most likely not be able to blog from next Wednesday through the following Friday.

Breakfast this morning was another smoothie (I am hooked!) made with soy milk, blueberries and raspberries (another purple one but lighter this time) and a Thomas whole wheat bagel with light cream cheese. Simple and perfect!


My mid-morning snacks were a cup of Stash decaf chocolate hazelnut tea, 1/4 cup of cashews and a banana.
