My “get buff” workout

I started off with another green monster this morning. These can just do no wrong by me, now that I have found the perfect combination of ingredients!


For lunch today, I had leftover tofu that I made Sunday night. I used a brand I’m familiar with but this time I used “firm” instead of “extra firm.”


I couldn’t tell a really big difference between firm and extra firm, both are good. Talk about a dish that can do no wrong now that I have found the right combination of ingredients!

It took me forever to perfect baked tofu. Totally worth the wait though.


Before I left work, I fueled up on a Clif bar that I hadn’t had in a while.


I read through the ingredients, didn’t see anything iffy, only a statement saying it might contain “trace elements” of dairy. Today, it was worth it. I love this bar!


After work, I hit the gym for a KILLER WORKOUT!

I started off doing 10 minutes on the stepmill/stairmaster using an “endurance” program. I had it set for 15 minutes but didn’t make it all the way.

How does Kath do it? That machine kicked my butt!

Then I embarked on my weight lifting routine. These days, I am focusing on heavier weights and lower reps to build strength. I’m hoping to alternate it with the opposite to keep up muscle endurance as well.

  • Chest presses – 22.5 lb dumbbells; 1×10, 1×8, 1×6
  • Shoulder presses – 17.5 lbs; 1×8, 1×6, 1×5
  • Bicep curls – 17.5 lbs; 1×10, 1×7, 1×5
  • Tricep extensions – 20 lbs (1 dumbbell); 1×12, 1×10, 1×10
  • Squats – 15 lb bar; 3×30
  • Lunges – 15 lb bar; 3×30 (15 each leg)
  • Plie squats -  8 lb medicine ball; 3×20
  • Calf raises – 15 lb bar; 1×25, 1×30, 1×25
  • Abs – 6 exercises, 25 reps each

I kind of cut it short on abs because I ran out of time, so I think I will try for those tomorrow!

I took a one minute (timed) break between each set. By the time I was done, I was a sweaty, shaky mess, but in a good way. I’m running tomorrow so hopefully my legs won’t be too sore 😉

For dinner tonight, I made some lentils that had been in my cabinet for a while. I cooked them per the instructions on the bag and added some green pepper and onion that I sautéed.


They were decent but could’ve used an extra “kick” ya know?

I steamed some green beans on the side (yum) and had a piece of toast with SB (Smart Balance Light).


I also enjoyed a glass of Funky Llama 🙂


Ew, ignore my dirty stove top! Well, I just told you about it so how did that help? Ha ha.

I just snacked on some cinnamon bread with peanut butter and chocolate chips.


I “splurged” this week and got the Nestle brand semi-sweet morsels and OH MY GOSH, they are so much better than the generic ones I had been getting!

Sometimes when you buy an off brand there is no difference and it is good to save money but then there are times like this, when the extra $$ (less than a dollar) is totally worth it!

What about you? Do you buy the “name” brands or do you get the cheaper stuff? Do you notice a difference?

My beloved tofu

For breakfast, I made pumpkin oats with some chocolate chips and peanut butter 🙂


Today at work, I tried hemp milk in my coffee. It was different. I don’t think I’ll do it again because the tastes just don’t go well together. But it was worth a shot.

I snacked on mixed nuts later in the morning.


Are you guys getting bored of my nuts yet? Ha ha.

Lunch was mixed veggies and leftover eggplant from last night which I decided to top with hummus today…wow! I will definitely be buying eggplant again soon.


Then, this afternoon I got to try a new Larabar!


I think this is only the second of the Jocalat line that I have tried but oh my! I am in love with ALL the new Larabar flavors. Not a bad thing.

Then after work, I finally got to work out!

I warmed up on the treadmill for 15 minutes then I got started on some strength training. I did 15 reps of each move using various weights:

  • Chest presses
  • Military shoulder press
  • Seated row machine
  • Upright row with bar
  • Bicep curls
  • Tricep extensions
  • Front raises
  • Lateral raises
  • Squats
  • Lunges
  • Plie squats
  • Ab exercises (about 6 or 7 different ones)

It felt so good to get moving again. And I am happy to report that after some salt gargling I did last night, my throat seems to be all better!

I thought “Sheesh, I only did it once” but I did do it about 5 times in a row.

Anyway, I had an absolutely fabulous dinner when I got home.

First, I started steaming some fresh green beans. It was so nice to not use the frozen for once. These were 99 cents a pound!


Then I made my beloved baked tofu, which I hadn’t had in a couple of weeks now. It’s nice to change things up for a while and then come back to an old favorite.


All together now, with some brown rice. Delicious!


Even though I do wish that Josh ate some of the same things I do, it is nice having these leftovers all to myself for lunch tomorrow 🙂

Day 28: I hate fasting!

Let me explain…I have a health assessment first thing in the morning (well, at 8:30) so I haven’t been able to eat or drink anything other than water since 8:30 tonight!

Actually, it hasn’t been too bad and it has actually given me some perspective. I should stop eating earlier in the night. I should have a cut off time, unless I am really stomach-growling hungry.

Anyway, today started off with oatmeal.


This bowl contained 1/3 cup oats, 1 chopped apple, sprinkle of cinnamon and a tablespoon each of pumpkin butter and peanut butter. So yummy!

Speaking of oatmeal, I was recently accepted as the Louisville Healthy Living Examiner and published my first article last night!

I had some pumpkin spice coffee when I got to work and some nuts later on in the morning when I got hungry again.


For lunch today, I heated up my leftover chickpea curry from last night and threw them on a top of a huge salad with a little bit of Italian dressing.


It was so delicious! Best lunch I have had in a while, I really need to get back to big salads, at least until the weather gets really cold 😉

My afternoon snack had me trying a new type of yogurt, which is always fun. This time it was So Delicious, but with a twist.


I have never tried Agave anything, that I am aware of, so I was really excited. I tried it by itself first and then threw on some Ezekiel cereal for some crunch.



Verdict? I loved it!

It was sweet but not overly sweet like some of the other soy yogurts out there. I would definitely buy this one again and I’m going to have to check out the other flavors.

It still had 19 grams of sugar (gasp!) so I would not eat it every day but it would be nice to have once in a while.

After work, I hit the gym solo and did 3.25 miles on the treadmill in 40 minutes, including a cool down and a minute between miles. I think my running is really improving! I always do better outside but I just didn’t feel up to it with the dreary weather and lack of a partner.

When I got home from work, I was starving, so I had a piece of whole wheat bread with peanut butter and pumpkin butter (I think I might be obsessed)!


Then, I took a nice hot shower (nothing like it after a tough sweaty run) and got my stuff together to go to Courtney’s for Girl’s Night Potluck.

For dinner, Margie made this delicious VEGAN lasagna (you must get me the recipe girl) and we had salad and bread on the side. Yum!


I went back for seconds on the lasagna and bread. Margie used vegan cheeses and the dish contained spinach, tofu and lots of other yummy ingredients.

For dessert, I brought these cookies, which I read all the ingredients for and I’m pretty sure they are vegan (not all from this brand are).


I promptly ate two of them since it was nearing close to 8:30!


Eh, they were pretty good but nothing I would get again. Unless I was taking them somewhere…at least I could share some cookies with people that had decent ingredients.

Well, that’s all I’ve got. Wish me luck tomorrow, I get to find out what changes I’ve had since July as far as measurements and stuff. I’m not expecting anything but it will be nice to have some new numbers.

I also can’t wait to see if my HDL cholesterol has gone up any. No matter how healthy I have gotten, I’m still struggling to get my good cholesterol up in the acceptable range. It pretty much hovers around 35, the highest it’s ever been was 50 and they tell me 60 is where I need to be, at least!

Day 27.2: Bookends

Hey guys!

Well, as I mentioned in my last post, I left my camera at home today so all I have for you is the meals I had at home today…breakfast and dinner. The beginning and the end 🙂


I tried a new dish for breakfast today. I took a page from Mama Pea’s book and microwaved a chopped apple for 1 minute. Then I added 1/2 cup of Ezekiel golden flax cereal, 1/2 cup rice milk and 1/2 tbsp peanut butter.

It was pretty tasty but for some reason this did not hold me over very well. And by some reason, I mean the fact that it isn’t oatmeal. This would be good on a smaller scale for a snack though maybe.

The rest of the day was not much to write home about except for the massive amount of tortilla chips I ate at work! I swear, if there is one food I am defenseless against, it is those salty crunchy buggers.

After work, I hit the gym for a 2 mile run (indoors, boo rain) and some upper body weights and abs. I was less than motivated earlier in the day but once I got started and finished the workout, I felt GREAT.

For dinner, I made an old favorite: Chickpea Curry!


I used water this time instead of soy milk and I added 1 cup chopped frozen (thawed) spinach and 1/4 white onion chopped. Plus some garlic and of course, a massive amount of curry paste!

When I got home, I had snacked on some bread already, so when it came time to eat dinner, I wasn’t as hungry, so I had a small portion with the rest of the bread. I can’t believe Josh and I finished off the loaf in one day (it was mostly me I’m sure)!




For dessert, I had a So Delicious “ice cream” sandwich. It was even better than last Wednesday, I think because I let it thaw a bit 😉


Confession Time…I HATE DISHES!

I mean, look at the how terrible I let things get before I break down and do them.


Wow, that is embarrassing!

I’m posting that picture to shame myself into keeping up with the dishes. Perhaps that can be a November goal?

Josh, for his part, empties the dishwasher every day so there really is no excuse (other than I hate it). I tried to make it more exciting for myself by getting this natural dish soap!

Day 20.2: A potential gig?

Good afternoon! I hope this Tuesday is treating you well. Aside from sleeping a little bit late, today has been a good day. One of the neatest things about today was discovering this possible job opportunity!

Now onto GOOD FOOD for my GOOD MOOD!

I did not need a mid-morning snack as I had breakfast later than usual. It’s weird to think that sleeping in by accident causes me to eat breakfast 2 hours later.

For lunch, I had leftover Red Beans & Rice that I made last night with the recipe from Happy Herbivore!

It was just as good today as it was last night!

I think I drank too much coffee this morning though because not long after, I felt kind of weak and shaky (which happens when I have too much caffeine). Since I knew I had a workout coming up, I decided to have a spoon of PB to settle my stomach and nerves.

An almost full jar of peanut butter has been sitting on my desk all day and somehow I have managed (for the most part) to “behave” myself 😉

My workout today was intense! Farrah and I ran 2 miles (or 20 minutes) and then came inside and did lots of leg strengthening and ab exercises. I’m going to be sore tomorrow! I was kind of sad to not do any arms but I have been neglecting my legs for a while which is why I get so sore from doing a set of squats.

Right now, I am snacking on some soy yogurt and getting excited for dinner tonight. A good friend is coming over and we’re going to be making another vegan recipe, I can’t wait! It’s nice to have people to share with 🙂

Day 9, Pt. 2: Books and new tea

Friday’s breakfast was so good that I didn’t need a snack until almost 11! And thus continued the day I was a peanut butter monster 🙂





For lunch, I had a peanut butter and jelly sandwich with a side of broccoli. Not the most exciting lunch but it managed to fill me up that day even though I usually have trouble with PB&J being enough.



Just before 2, Farrah cancelled our workout so I knew I would be on my own to exercise! I decided to just push it back to the end of the day.

She also brought up an interesting point to me. She said she wanted to get back into a regular running program and do less strength training because she is feeling “puffy” and isn’t fitting into her jeans as well right now as she’d like to.

I told her I have the opposite problem! When I run more, I tend to plateau or gain weight because I eat more because my appetite is out of control. And I absolutely love strength training because it makes me feel stronger, fitter and it has done more for my body than hours upon hours of cardio ever has.

This just goes to show you: WE ARE ALL DIFFERENT. Find what works for you and don’t be afraid to do it, even if it means a few less workouts with a buddy 😉

Before leaving work, I snacked on a carrot and some more PB!



Then I hit the gym! It was a nasty rainy day, so I jumped on the treadmill and did a quasi-speed work run/walk. It went something like this:

  • 0:00-5:00 Walk/warm up (3.0-3.8 mph)
  • 5:00-10:00 Jog at 5.0 mph
  • 10:00-13:00 Run at 5.5 mph
  • 13:00-14:00 Sprint at 6.0 mph
  • 14:00-15:00 Recover at 5.0 mph
  • 15:00-18:00 Run at 5.7 mph
  • 18:00-19:00 Sprint at 6.5 mph
  • 19:00-20:00 Recover at 5.0 mph
  • 20:00-23:00 Run at 5.8 mph
  • 23:00-24:00 Sprint at 7.0 mph
  • 24:00-25:00 Recover, walking at 3.8
  • 25:00-28:00 Run at 5.9 mph
  • 28:00-29:00 Sprint at 7.5 mph
  • 29:00-31:00 Recover walk 3.8 mph
  • 31:00-35:00 Run at 6.0 mph, decreasing gradually to 5.5
  • 35:00-40:00 Cool down, walk at 3.5 decreasing gradually to 2.5

Total workout: 3.25 miles in 40:00

Phew, I was a hot sweaty mess afterwards and thankfully I stretched for a long time afterwards because I feel great today, no soreness!

At the gym, I also got the chance to post my FIRST Operation Beautiful note 🙂


I had so much fun that I quickly threw another one inside of the locker I used.



I really got a kick out of doing this and I can’t wait to post another one. I have to say, it’s kind of addicting! It made my day and I hope someone else’s too 🙂

Dinner was a weird throw it together meal. I was going to make oatmeal, but Josh graciously donated his potato that he hadn’t eaten yet so I went with it.


Baked potato with S+P, hot sauce and organic ketchup with a side of mixed veggies. I know it doesn’t look like much but that potato was huge and definitely filled me up.

Afterwards, Court and I went to Barnes and Noble where I got to check out Alicia Silverstone’s new book “The Kind Diet.” I did not purchase the book (yet) but I did take some notes.

Alicia eats a vegan diet (no meat, dairy, etc.) but she’s also very aware of other things like the dangers of white sugar, HFCS, being too dependent on caffeine, etc. Her approach is neat because it basically, gradually advises you to free yourself of anything in your diet that might be harmful to your body, mind or spirit.

You also have two options with the book: You can “flirt” with the Kind Diet or you can go full blown. She also discusses all the benefits of the diet including your health, the environment, animal welfare, etc.

There are some really great recipes in there too. I’m going to put it on my “Wish List” for sure 🙂

At B&N cafe, I got to try a new tea! This one was called African Autumn and I loved it. It was a little on the fruity side but not overwhelmingly so. It is also a red tea if you couldn’t tell.


When I got home, I was hungry again, so I had something I’m apparently not tired of yet even though I thought I was 😉


I have so much more to share with you guys but I’m going to have to call it a night and catch you guys up tomorrow.

Day 9: Peanut Butter Monster

TGIF! What are your plans for the weekend?

Tonight I am taking a trip to Barnes & Noble with my BFF to read and talk, pretty much our favorite thing to do. Then tomorrow, Josh and I are heading out of town to visit his grandma since we have decided to stay local for the holidays (yippee)!

Yesterday’s lunch leftovers were awesome. Even though I won’t buy this soup mix again, it was good while it lasted.

This lunch was very filling and I didn’t get hungry for my snack until a few hours later, so that was awesome 🙂

Uh oh, time to get some more hummus!

After work, I headed to the gym to meet Farrah for a workout. We’re both still experiencing quite a bit of leg/hip pain from our squats and runs earlier in the week so we took it easy with a 5 minute warm up (walking) on the treadmill.

Then, we started to do the Jennifer Love Hewitt workout from the October issue of Shape magazine, but found it to be incredibly awkward for us.

The first move was challenging (side step ups/leg kick/holding a dumbbell), but then the second move proved nearly impossible for me (trying to stand up with one leg from seated position) and painful for Farrah whose knee was starting to hurt. So we ditched it and did our own thing the rest of the time, including:

  • Chest flyes, chest presses, reverse flyes
  • Upright rows
  • Abs (crunches, side crunches, etc.)
  • Tricep extensions and kickbacks
  • Bicep curls
  • Shoulder presses
  • Push ups!

I really love upper body workouts. The difference in my chest, shoulders and arms now from where they used to be is one of my favorite things about myself. It’s good to focus on the positive 🙂

We had quite a bit of rain roll through the area overnight and into today. On the way home last night, the clouds were really cool to look at:

When I got home, I so did not feel like cooking (I had planned to make a lentil curry) and while debating over having oatmeal for dinner, I ended up heating up some leftover barley and tossing in some mixed veggies and barbecue sauce. Weird, but it totally worked!

Then I nibbled on some chocolate chips and PB while we watched “A Nightmare on Elm Street 4” which means apparently, I am only tired of the bread part of that snack, ha ha.

Today, I have declared myself the Peanut Butter Monster!

First off, I had oats with peanut butter and banana for breakfast, which was so delicious on a cool, rainy morning.

And both of my snacks and lunch revolve around PB. By the end of the day, I will have had 4 tablespoons! Oh well, at least it’s good fat right? 😉

My friend Will gave me this coffee cup for my birthday (way belated but no matter). It says my name, Sarah – Meaning: Princess, followed by these words:

Day 6: The running munchies

Okay, so it’s time I did some re-assessing here. The thing that drives me crazy about running is the major appetite that it gives me, which in the past, led me to overeating a lot of sugar and carbs which led to weight gain and hence, a hiatus on running to calm things down.

I want to find a happy medium. I am not going to be running any marathons, I’m pretty much a short distance gal these days. I love me some 5Ks.

But I don’t want to have to give it up completely just because it makes me ravenous (or tricks me into thinking I am). I want to nip this in the bud before it gets out of hand. So after I tell you what I ate yesterday, I’m off to do some research.

Breakfast yesterday was a banana PB oats!

I used 1/3 cup Almond Breeze and 1/3 cup water this time and it did make them taste creamier and added a little flavor so I think I will do that from now on. I should’ve tried that with my pumpkin oats before they ran out. Oh well!

Snacked on some nuts mid-morning, this is becoming rather redundant but I love them 🙂

For lunch, I had leftover tofu and some broccoli.

Then I still felt hungry so I raided the leftover snacks from the day before’s baby shower and took a few crackers (checked the ingredients on the box first). Pretty good!

A couple of hours later, it was workout time! Farrah and I ran around 1.25 miles in 10 minutes. We actually sprinted a little bit because we were trying to beat a train that was coming 😉

After our “warm up” we went into the gym and did a quick strength routine, including:

  • Squats
  • Dead lifts
  • Tricep pushdowns
  • Dips on the bench
  • Seated rowing machine
  • Leg lifts (front, side, back)
  • Abs
  • Back extensions
  • Tricep kickbacks

Whoa, no wonder I am sore today. Whenever I reflect back on what we did I am amazed because it doesn’t seem like that much at the time. We even cut off early because we were both pretty sweaty and tired 🙂

When I got back to my desk, I snacked on a Nature Valley bar (last one).

I love these and they are vegan but I need to reduce my intake of processed snacks for a while (again). But they will come in handy if I’m ever stuck at a gas station needing a snack 😉

I also had some of these evil things, thank goodness they are gone now.

It’s this kind of stuff that running makes me crave. But I don’t keep them in the house so I should be okay from now on. Tortilla chips aren’t too bad but I have trouble keeping it to one serving if you know what I mean.

I had a Pampered Chef party to go to after work and so I packed a peanut butter and jelly sandwich that I ate on the road.

Most of the Pampered Chef recipes for the cooking shows include meat, mostly to showcase their baker that can go in the microwave, so I knew I had to be prepared.

They ended up making a pork tenderloin salad but the host graciously suggested they keep the meat separate. What a sweetheart! I didn’t even ask 😉

The salad contained some sort of salad mix, red onions (which she sliced with a gadget I so need to get), thawed frozen corn, and a dressing she made using ranch dressing and some seasonings from the Pampered Chef catalog. I know ranch dressing is not vegan, but I used a little bit anyway. I’m still working on getting this whole lifestyle down, so please excuse me for now.

I also had a nice plate of veggies and a few chips. Thank goodness they were some hungry kiddos running around so I couldn’t go back for more chips!

What’s funny is there was this awesome looking cake and I had zero interest in it! Usually desserts get me big time but not last night. Hmm…I’ve noticed I’m craving the salty stuff. Why is that?

When I got home, you guessed it, I was hungry…or so I thought?

I thought I was done after this but my stomach started growling around 10:30, which is way past my “cut off” eating time, so I had another snack.

Let’s just say I learned a lot today. I didn’t do anything wrong and I’m not disappointed or anything with myself. Nope. Not one bit.

I just want to change some things and get out of some ruts. I think I am officially “over” the chocolate chips and PB snack. For real. Hello burn out! And I really don’t like the bread that I bought. I mean, it tastes good but it’s too flimsy and I’d rather spend more and get better quality (like Ezekiel English muffins, yum).

Time to make some lists and get some recipes in the queue, this girl wants her whole foods back! And let’s try a few new things too 🙂

Reflections on Day 1

Day 1 of my October Challenge went very well. I call it my October Challenge, not because it’s just going to last through October, but because this is a life challenge that merely starts in October. I find the beginning of the month, especially with Day 1 of that month, is the perfect time to start something new or recommit to something you’ve missed doing.

Yesterday, I enjoyed a lot of great vegan-friendly foods (goal #1):






I also made myself stay off of email and Facebook as much as possible (goal #5). As convenient as technology can be, sometimes we can become too relient on it and it can drive us mad. For me, I just don’t need to be absorbing all this information about people’s lives (from the important to mundane) all day long like it’s my job. I really need a break! I care about people, especially my closest friends and family and want to know what is going on with them but I can still limit that to before and after work (if I even feel like it then)!

In fact, since I did that, I had what I thought was quite a wonderful TELEPHONE CONVERSATION! with my best friend last night. It is sad that our society has become more email and text message oriented. I mean, my husband texted me from one floor down? What is that? Ha ha.

I also had a great workout yesterday that left me energized (goal #2). I ran a mile with Farrah, which we both noticed we did rather quickly because when we got back we still had a minute left (so it was 9 min/mile)! Then we did lots of weights, including the following:

  • Incline bench presses
  • Incline bicep curls
  • Lateral raises
  • Chest flyes
  • Preacher curls
  • Military shoulder press
  • Abs, abs, abs!

I am quite sore today but it feels good! It had been a week since we’d last worked out, woo hoo. It feels so good to be healthy again after that cold sidelined me for a bit.

Sort of tying in with goals # 4 and 8, I decided that October was NOT TOO LATE to start “Read Through the Bible in One Year” even though I had missed the previous 9 months. So I printed off the sheet and ended up reading Isaiah 62:6-65:25, Philippians 2:19-3:3, Psalm 73:1-28 and Proverbs 24:13-14

At first, I didn’t think too much about it but the more I read the more those verses really spoke to me about issues I am dealing with right now. The Psalms passage especially hit me because it’s exactly what I’ve been hearing from a lot of people in my life right now…they have been good, they believe they have done as God wanted them to and yet they suffer and are unhappy, while others are out there “seem to live such painless lives” and are rich and prosperous. Basically, the point is to check your heart. Why are we worried about other people? We need to be concerned with ourselves and our intentions. I really suggest reading those verses if you are struggling with that issue.

God’s timing is never wrong, I’m telling you. I was meant to start that yesterday and I look forward to what else I will learn from this. 🙂

After dinner last night, I decided all I wanted to do was go upstairs and watch TV. So I put on my pig pajamas and did just that! I should’ve taken a picture of those 😉

I don’t watch very many things anymore, so I sort of just flipped for a while and ended up falling asleep! My husband says he yelled for me and texted me (yet didn’t get up off the couch to check and make sure I was still alive?) but I was out for the count. I woke up at 9:30 to let the dog out and then back to bed I went. Guess my body needed some extra rest (goal # 3) so I’m glad I allowed it to.

So, making efforts toward 5 out of my 8 goals for the month is not too shabby, huh? I’m so glad that I made out a list that I can refer back to now. It really helps me stay motivated!

I have a really great weekend coming up that I can’t wait to experience and share with you. I hope you all have a blessed day and whatever you are striving to do in your life, I hope you reach for it even more today 🙂

What I’ve been up to

Hey guys!

So my camera batteries died yesterday morning, boo. I have literally no pictures to share with you right now but I did want to tell you what I’ve been up to the past couple of days.

Yesterday, I went back to work feeling much better from the cold I caught over the weekend. Thank goodness for healthy eating, rest and vitamin C. I swear, it works wonders.

I also ate a piece of cake! A co-worker of mine celebrated 30+ years of service, so there was a small celebration. Wait, I did take that pic with my cell! I tried to take more throughout the day but they were all crappy and blurry so this is the only one.


The cake was huge and it had a section of the book “Ethan Frome” written out on it. Someone spent a lot of time on that!

I know this cake had to contain eggs and dairy so it was sort of a sayonara to such things as October 1st is tomorrow. It also held me over so well (I ate it after lunch) that I was not hungry again until dinner time 🙂

I also took a nice hour plus long walk with a friend last night, first real exercise I’d had in a while. It felt so good. I’m off work today (had a dr. appt earlier) and think I’m going to check out some of the Exercise TV programs I saw the other day.

I’m really feeling yoga today so it will likely be something like that.

I’m also currently baking some Vegan Pumpkin Chocolate brownies that I’m taking to girl’s night tonight. If you are a vegetarian or vegan, or if you are just looking for some really great animal-free recipes, Happy Herbivore is a must!

If they taste half as good as they smell and look, we are all in for a treat later.

Tomorrow is the big day, the moment of truth. I’ve definitely been able to eliminate meat from my diet with absolutely no problems. But dairy has been showing up in interesting places and I’m also concerned with inconveniencing my family and friends a bit.

But this is a change I really want to make, for my health, because I don’t want to put anything in my body that I’m not completely confident in.

And I know eventually the inconveniences will fade and it will become my way of living, second nature. Here we go…

p.s. Today I also tried the new Starbucks VIA instant coffee. I got a sample a week or so ago when I stopped there with Mom. I have to say, it was quite tasty and I liked just being able to add hot water to it instead of loading up my coffee maker. Definitely convenient. I may have to look into it, at least for the weekends 😉
