Mucho soy

On Wednesday night, Courtney asked me if I wanted some more tea. Uh, did she see my tea post? Ha, of course!


I love you, Earl Grey. You are delicious!

Since you’ve already seen my breakfast from yesterday, let’s move on. I snacked on some nuts (and coffee) mid-morning.


As much as I love tea, I can’t resist a cup of coffee at work 🙂

Since my breakfast was a bit skimpy, I got hungry for lunch rather early. I went ahead and ate my tangerine (loving Vitamin C these days).


Then eventually broke into my leftover rice and beans!


I ate a Larabar around 1:00!


So it’s no surprise that I was starving by the time I was heading to the gym after work. It might just be full of air, but it got the job done.


Then I rehydrated with some Lifewater!


Dinner was some baked tofu (garlic powder, chili powder and sesame seeds) with a sweet potato and pita with Smart Balance Light.


As if I hadn’t had enough soy for the day, I decided to finish off the leftovers of my Tofu Chocolate Pudding from Wednesday night.


And a cup of Chocolate Cheerios!


Must’ve been that awesome elliptical workout that worked up such an appetite! I almost went back for more cereal but I realized I wasn’t hungry anymore, but tired.

So I maintained my 9:00 rule, went to bed at 10 and felt just fine 🙂

I used to be “afraid” of eating too much soy, but I’m so glad that I learned that soy in it’s “whole” forms: soybeans, tofu, soymilk, etc. is safe. It is the overly processed soy “products” (like meat substitutes) that can be consumed too much.

Snow Day 2010

When I woke up at 5:30 this morning, I found out that I didn’t have to work today!

It started snowing last night into today and I think we’ve gotten somewhere around 6 inches of snow.


Suzie and I have had fun today!


Instead of going back to sleep, I enjoyed some leftover pancakes and coffee!


Since I had the day off from my full-time gig, I got to work on my home duties that had gotten neglected over the busy weekend!

I literally cleaned my entire apartment, did laundry and dishes. Now I’m really hoping I get to go back to work tomorrow or else I won’t have anything to do 😉

I snacked on some nuts mid-morning and then took a break for lunch in the midst of my housework.


Veggie burger with hummus in a pita pocket, plus some cauliflower. And a tangerine!


Of course, I had some more tea this afternoon 🙂


Loved this one!

All my cleaning worked up an appetite. I had this later in the afternoon.


For dinner, I started off with a spinach salad with balsamic vinaigrette.


Then I made some rice & beans (pinto) sprinkled with hot sauce.


And even more tea, if you can believe it. I’m obsessed!


Jasmine is definitely a favorite. I think I like the other Jasmine tea I had before better than this one, but this is still really good!

I also tried a new product for a snack tonight.


First, the Silk Almond milk is delicious. I’m glad I got the original because it’s just 60 calories per cup and its creamy and sweet (I used it in my green monster yesterday).

My mom has been raving about these Chocolate Cheerios forever, so when I finally saw them, I had to try them out.


These taste just like Cocoa Puffs. I mean that in a good way. I’m going to have to be careful with these 😉

Bringing it all back home

We woke up this morning later than normal after our late night from the concert 🙂

I was going to get up and work out. I did get up but my body felt tired and sore so I said oh well and just headed down stairs to the breakfast bar.

Same thing different day. Why mess with a good thing?


After we checked out of the hotel, we were on a search for Al’s Italian Beef. Josh has been looking forward to eating at this place possibly even more than Gino’s, where we ate on Friday.

The first location we checked was closed due to “technical problems” and the second location, near a college campus, was closed on Sundays! We were about to give up when we checked a third location…score!



Josh was very happy to try this massive beef sandwich with provolone.



He said it was literally the best beef sandwich he had EVER had in his life. He can’t wait to come back to Chicago.

He also had some fresh cut fries..I tried a couple, they were pretty good. But I had fries last night so no more for me today!


Believe it or not, they had something Sarah-friendly! I ordered the veggie wrap with no cheese.



The veggies were fresh and there were lots of ‘em. This is the way to do a veggie wrap! It included lettuce, tomato, olives, red onion, peppers, mushrooms, regular onion and I think that’s it. I know some of it was their homemade relish. Yum 🙂

I also cracked up at the cups…can you see the message on the bottom?


“Caution:Beverage in this cup may be cold. Duh!” Ha ha.

After lunch, we walked across the street to use the bathroom at the original Gino’s East! Josh said this will be the street he comes back to next time for sure 🙂


We got back in the car and headed back home 😦

I napped and read some magazines in the car, including this article that caught my interest in the September issue of Shape (I think).


More on that later…

We stopped at a gas station and picked up some snacks and drinks for the rest of the ride home (it takes us about 5 hours). Actually I just grabbed drinks and snacked on some more popcorn that I brought from home.


Josh got a huge stick of beef jerky…


And some Doritos which he said come second only to his Pizza flavored ones. Ew. We are so different, ha ha.


One thing we did have in common…


His and hers Coke Zero. I swear I’m quitting again tomorrow!

When we got home, I knew I had to make a list, sort the coupons and go to the store. So I ate some dinner because I was hungry and you never want to go grocery shopping that way.


I had a Boca vegan burger with tomato and mustard in a pita pocket with some romaine salad with raspberry vinaigrette. It was a nice light meal that fueled me through my errands.

I snacked on some Cheerios with soymilk later on.


It is time to get to bed so I’d better call it a night. Back to work tomorrow. What a weekend!

Cupcakes and Chicago

Hi friends! I’m so late posting this because I have been running around like crazy getting ready for my trip to Chicago (we leave in about three hours, still lots to do) to see U2 in concert this weekend.

The show is tomorrow night but we are going up early to get settled and do lots of fun stuff including eating so I’m hoping to keep you guys posted while I’m there 😉

So…Wednesday! I think it’s going to be my favorite day forever now because not only is it girl’s night but it’s also dessert day.

I started the day off with some oat bran with almond butter and blueberries.


So I think MaraNatha has made me an almond butter convert. I still love PB but I think I prefer AB right now. What? Who am I?

Mid morning I snacked on some more yummy popcorn. Also utilized my break for a nice 15 minute walk!


For lunch, I had my leftover tofu which was delicious!


With some brussels on the side 😉


I love eating those little green things because I like them and because they are high in Vitamin C. Love that I can get that vitamin in without eating too much sugary fruit.

After lunch I enjoyed some relaxing tea and a piece of real dark chocolate.



I love my exercise science class but for some reason that day I was nodding off! I blame the tea, haha. Unfortunately I chose to wake up by getting a diet wild cherry Pepsi but that was more or less to say goodbye again for a while. I hadn’t had one in a couple of weeks anyway.

My afternoon snack was carrots and hummus. It had been a while since I’d had this combo, I loved it 🙂


After work, I hit the gym for a run. Unfortunately (or not) all the treadmills were taken so I rode the bike for 18 minutes while I waited!

When I finally got a treadmill, I warmed up for 2.5 minutes walking then ran for 7.5 minutes, walked for 2.5, then ran until it hit 25 minutes and cooled down by walking for 5. It was great. Overall I ran about 2 miles, which fits into my new 5k training program which called for 1-3 miles that day.

It felt so good and I spent a lot of time stretching afterwards which I haven’t done in forever (and it shows).

When I got home, I quickly got to making my contribution for girl’s night. Vegan guacamole! I used this cookbook I bought forever ago and hadn’t made anything out of yet.


The recipe was called “Blushing Guacamole” because it contained tomato…


I was hungry when I got home so I snacked on some Cheerios while I worked in the kitchen!


This did not go as well as I had hoped. Not at all. First off, my stupid avocadoes were not ripe yet! Then I had to use cumin because I didn’t have any chili powder.


Then the darn stuff did not want to mash. Ugh. So I tried to use the blender.



It looked okay but tasted weird. The girls said it was different but not bad, but I didn’t really like it. At least these were good!


You guys were right…these were so good I can’t buy them again for a while, ha ha!

For our main course, we had Beth’s Greek soup, which is always a good thing. Love the big veggies!


I believe this soup contains tomatoes, zucchini, onion, and potatoes, plus lots of spices. It’s delicious.

Also had some salad and chips on the side (I didn’t eat my dip, sadly).



However, my disappointment was easily fixed by the lovely dessert we had. These are so not vegan but it was dessert night and Beth’s birthday so I went with it.


YUM! Let’s celebrate!

Okay guys, I am sooo behind on time and getting things done before Chi-town that I’m going to have to leave you with this and come back later (hopefully from our hotel) and fill you in on the rest of my adventures.

Happy Labor Day

Well, I can honestly say that instead of resting on Labor Day, I well…labored!

I got up with the dog around 7:30 (she let me sleep for 8 hours!) and ate some breakfast while listening to the storm outside.

When the rain passed and I was able to take Suzie out, I was overwhelmed with this feeling of appreciation. Even though the weather was stormy, cloudy, and dreary, I found it beautiful. I felt grateful for God’s creation, for the seasons and found the beauty in what is normally thought of as ugly weather. Wow. I don’t know where that came from but it was rather cool.

I drank a cup of coffee with soymilk and then got right to work on organizing my downstairs closets! Oh now I remember what I did yesterday…I organized my kitchen! All the stuff in the cabinets now is in better working order and it will be so easy for me to find what I am looking for and have what I use frequently close by.

Mid-morning, I snacked on a banana with PB!


I went and ran some errands and came back starving! I quickly reheated my chickpea curry from yesterday and enjoyed that for lunch.


Then I got to work cutting up vegetables for a cookout we went to today. I have to say, it takes a bit of work, but buying and cutting up your own vegetables is SO MUCH CHEAPER than buying one of those silly pre-cut veggie trays. I love it.

By the time we got to the place today, I was zonked. I had been working my butt off all day on stuff around the house. Even as I type this, my legs are so tired. So I guess I should not feel guilty for not working out the past two days…because apparently I have!

At the party, I got a mix of everything. I was pleased to see all the veggies choices.


Pasta salad, caesar salad, green beans, baked beans, red potatoes (the best thing on the plate!), celery, cucumber and carrots with Italian dressing.

Everything was so good and with the exception of the caesar dressing and pasta salad (which I think contained eggs), the meal was pretty vegan-friendly. I had a few people ask me about my transition to this new way of eating so that was nice to have others taking an interest.

We also had a few people remark at how differently our plates were filled between Josh and me. I should’ve taken a pic of Josh’s plate which contained a hamburger, chicken (both on buns), red potatoes and some other pasta dish I did not try. At least we had the potatoes in common 😉

I wasn’t going to eat dessert and I even tried to fend it off with some ginormous grapes. These were tasty!


But then my willpower dwindled and I got one of these. I think they are called Hello Dollies or something like that. I had one at Christmas, that was the last time. I’m not even a big fan of coconut but this was good.


I also ate an oatmeal chocolate chip cookie (store bought) which was not that great and made me realize it was time to pack up and go home 🙂

We ate dinner really early so I think that threw off my hunger clock. We got home, I walked the dog and did several other things to try and distract myself. But I got pretty hungry so I snacked on some popcorn.

I think I’m going to implement a few new “policies” for myself to keep some of this late night snacking under control. Here are a few things that I think will help me.

  • Go upstairs – the kitchen is on the first floor and I’ve found that if I’m further away, I’m less likely to go back.
  • No eating after 9 p.m. (or two hours before bedtime) – this is a good rule that many weight loss successes use.
  • Dessert only 1 time a week – It’s not that I can’t eat anything after dinner those other 6 nights, I just need to not eat sweet stuff each day. The day will be Wednesday with my girls.
  • Weeks go from Monday to Sunday – I’ve always mentioned how Monday is the start of a new week. It’s also the day I weigh in.

I’m also looking forward to more vegan research and experimentation this week. I’m not 100% positive but I think the meals I have planned for tomorrow are totally vegan.

A taste of Fall

Good evening blog friends!

Before I made it to bed last night, I had some more snacks, including this 1/2 banana with PB and a small cup of dry Cheerios.

When I woke up this morning, I went straight from my bedroom into our other room and onto the yoga mat. I did a 20 minute yoga download program, Gentle Hatha #1, and it was the perfect way to wake up and warm up my body for the day!

For breakfast, I had oat bran (made with water) topped with almond butter and the other half of that banana 🙂

Lunch was just boring leftovers. Unfortunately the tofu is not as good leftover as it was the other night. Remind me to eat all of it next time 😉

It was good, just not as good.

In class today we started talking about metabolism and how the food we eat affects the production of energy in our bodies. While it was very scientific, I’m thinking the next class we will get into more general stuff.

I did have an interesting thought about creatine when my teacher (who has a Ph.D.) mentioned he takes the supplement and that it would be a good idea for vegetarian athletes. Hmm…something I’m going to have to research for sure.

This is the only supplement I take (when I remember) besides my daily vitamin, which is going to be really important once I start leaving out dairy.

My afternoon snack was something I hadn’t had in a while…a Larabar! I had given up bars for the most part because of their high sugar content but I got this one reluctantly because it was a new, enticing flavor.

So good I ripped it open and didn’t look back. It tasted just like the peanut butter cookie bar but with a hint of sweetness. It really did taste like a PB&J. While I won’t be stocking up on these anytime soon, I would definitely grab one in a pinch. At least this had 6 grams of protein!

And another 15 minute walk was had 😉

So tasty, nothing gross added in. Perfect for a crisp Fall day!

Speaking of Fall, I feel like we got a small taste of it tonight at our girl’s night potluck. We started things off with a few veggies and dip.

The main course was a vegetarian chili made by my friend Margie which was made of pinto beans, on top of some spaghetti and topped with onions (I passed on the cheese). On the side was Italian sweet bread and more veggies.

I went back for seconds on the chili, it was pretty good!

I also think I did not get enough fibrous veggies in my meal because I went a bit wild with dessert (which happens when I eat mostly carbs and not enough protein and veggies which fill me up way better):

S’mores baby!

I had a total of 4 (2 with the girls and 2 when I got home!), plus a few munches of random marshmallows and graham crackers.

I’m glad I chose to enjoy these today because if I do this vegan thing, marshmallows and Hershey’s chocolate will not fit into the plan. Marshmallows contain gelatin and Hersheys milk chocolate is highly processed and contains milk and milk fats.

But man these were good! I’d been craving s’mores for a while so I’m glad I finally got to enjoy some 🙂

Funny thing is, I don’t feel too full or anything. I think I was really still hungry but I don’t even want to think about the amount of sugar my body is currently trying to digest.

No matter, tomorrow will be a much lighter day 😉

Hump Day for two reasons

Today is truly hump day…it’s the middle of the week and as K reminded me yesterday, the year is now half way over, WOW! How time flies…I feel old, ha ha.

Breakfast this morning was a simple bowl of Multigrain Cheerios with skim milk and a banana with PB on the side. Perfect!

We had a work party this morning, so I snacked on some chips + salsa, fruit salad (with yogurt) and a tiny piece of a savory quiche. YUM. Sorry no pics. I skipped the sweets because I just wasn’t in the mood.

For lunch, I just had a romaine salad with cucumbers and topped it with a packet of chunk light tuna and a few globs of hummus, a new kind I picked up at Whole Foods over the weekend 🙂

Guess what I’m doing today? RUNNING OUTSIDE!

Last week we were near 100 degrees, insanely humid and miserable and now today its going to be 75 and was rather cool out this morning. What the heck? I shouldn’t complain. I’m taking advantage of it.

My bowl runeth over


Last night after debating over cereal, bread + PB, a few other things, I finally decided to bust open a new package of dried apricots that I got at Sam’s for my before bed snack. That and a cup of cinnamon apple herbal tea. It did the trick and was much lighter than the other snacks I was considering. Yesterday was a good day 😉

This morning, I woke up a bit on the warm side, so I decided cold cereal was the way to go. I used one of my new square bowls (for portion control, hah) and still managed to overdo it just a bit.


Honey Nut Cheerios with 1% milk (almost gone!) and a slightly underripe pear. I like mine softer than this, so hopefully they will be better soon 🙂

I like pears not only for their taste, but also their fiber content. It is one of the highest of the (commonly eaten) fruits, I believe it has 5 grams?


Off to read some blogs and make some (decaf!) coffee before church. I have a pretty full day…church, going to Red Robin for my aunt’s birthday, visiting my other aunt’s house afterward, and then a workout with my bff! Time to get this show on the road.



No, I didn’t play a joke on you that you were unaware of…that’s the title of the episode of “Entourage” I am watching right now. I never really watched this show but this is the episode with Chuck Liddell, who is fighting at the UFC ppv tonight, so I guess its my way of wishing him luck? 😉

I started working on my husband’s “meal plan” and I thought it would be more difficult but he seems to be open to my “guidance”. In case you were wondering, the main concern with my husband is not weight loss; he is at high risk for developing Type II diabetes. Plus, he’s turning 30 next year and I don’t want him to wait until he’s 40, with high blood pressure, cholesterol, etc. before he starts taking care of himself.

Oh yeah, food!

Well, after my lunch time hour walk (awesome workout and I got some sun!) I was so ready for my Stonyfield + Kashi combo! The fat free french vanilla is definitely my favorite flavor, does anyone know if the other fat free flavors are the same, consistency wise?

Before leaving work, I drank some green tea and then I can home to this!


Apparently, my husband thought the stuffed pizza would be a good idea, yikes! Haha. It contains pepperoni, mushrooms and italian sausage. I picked out the sausage because it gives me heartburn sometimes and I didn’t want to take the chance.

I started off with some veggies first:

I decided to have one piece of that huge pizza with a couple of cheese sticks:


All the crust really filled me up!

After dinner, we went grocery shopping (separate post) and came home to watch some movies: I saw all of “The Day the Earth Stood Still” which was pretty good but I’m not a huge sci-fi fan and only saw the original once many years ago. But it was interesting. Josh watched “Hellboy II” which I saw about half of (which was funny, but I never saw the first one) before going to bed at 10:30! I’m so old. 😉

That’s actually a small cup of cereal even though it looks HUGE, haha.

Holy planks

Ouch, my upper body and core muscles are sore today!

Everything I ate yesterday held me over rather well. Even the smoothie from the morning; I was worried that because I didn’t have any grains I would be hungry by 8:00 but no such thing happened. It doesn’t hurt that I drink coffee and chug water when I get to work 😉

Lunch was surprisingly good and that beautifulness that is Fage 2% w/ Cherry held me over well through the afternoon, a workout, and until dinner which was almost 5 hours!


I have been doing a lot of thinking lately. I’m not sure why I think of this as a “bummer” or a “bad thing” but I don’t think I’m cut out for the long distance running, at least not if I can’t commit to a serious training schedule. Last year, I was a beast. I followed the training to a T and did the races almost effortlessly; but then I burned out. I’ve done ok this year, but I struggled at the end of the 10-miler, doing lots of walking, and I know next weekends mini-marathon is going to be a challenge as well. So I’m thinking about walking the whole thing. What do you guys think?

For some perspective, my outdoor workout included a one hour walk. I walk pretty fast normally, so I estimate I kept a good 15-minute mile pace (or 4.0 mph). I expected to be disappointed and not even feel like I worked out, but that was so not the case. I should remember, was not long ago that I was walking every day, that’s one of the things that helped me lose over 70 lbs (in addition to healthy eating)! I was breathing harder than I would on a stroll, I sweated (not as much as with running), and my legs are still sore today, just not as much as they would have been. And I chose a route that included some inclines, so that was challenging too. Plus it was just so nice to be out in the warm sunshine, taking in the sights and not overexerting myself.

So I think my walk was a success. And I don’t think there is anything wrong with changing my routine to short distance running and long distance walking. I’m totally a 5k runner and I did enjoy the challenge of the 10k, but the longer distances are/were not my friend this year. We’ll see, I’ll keep you all posted for sure 🙂

After my walk, I went back to the gym for some good stretching; I’ve been incorporating yoga poses into my routine which has really helped my calves and hips (down dog and pigeon). Now that the races are winding down, I so want to get back into yoga classes. I really miss how yoga makes me feel. So that’s on the to do list.

I also did something inspired by Angela, planks and side planks, oh boy! I started off in regular plank holding for 1 minute. This alone was a miracle because I used to shake and curse through 30 seconds, so being able to do it for a minute without complaining was inspiring to me. Now the side planks (with one arm) I could only hold for 30 seconds each. I rotated from side to side, doing each of the three planks twice. That’s why my arms and core are sore today! 😉

For dinner, my husband cooked some chicken on the grill (marinated in buffalo sauce!) and I had a sweet potato with whipped butter and cinnamon and a slice of flax toast with butter as my sides.


For dessert, two more great pieces of advice (one said “Happiness is Contagious” I remember that!). My dad calls dark chocolate his “blood pressure medication” (rolls eyes)…


The husband and I watched “Role Models” which was pretty cute but definitely for adults only; we’re big KISS fans, so if you’ve seen the flick, you can imagine what parts we enjoyed the most 🙂 I really enjoy Paul Rudd, always have. I’ve had “Love Gun” stuck in my head since last night, going on 12 hours now, hahaha. At our wedding, my husband and I danced our first dance to “Forever” by KISS. Our future children are going to be so embarrassed by us 😉

During the flick, I got a little snacky…guess that walk was more powerful than I thought, so I had a cup of Multigrain Cheerios and some tea.


Then, I guess this was sort of an experiment, but I had a second cup with a spoonful of Nutella


I guess this addiction has been broken without me knowing it?! This stuff used to not last a week in my house and now I’ve only had two spoonfuls in almost a week! And last night when I ate this, I actually said to myself “This tastes too sweet!” Hahaha. I guess cutting out the CRAP really did away with some cravings after all. Nutella is not (really) crap, although the first ingredient is sugar. There are healthier alternatives out there too, but its not too bad to have in moderation.

I think I will reserve the rest of it for recipes or if I get a nice loaf of french bread one day, ooh or some croissants? 🙂
