Even though Tuesdays usually hit me like most people’s Monday’s do, it was really a great day, I have no complaints!
For breakfast, I had oats with peanut butter and half a peach 🙂
Mid morning I snacked on some more peanuts (sorry my snacks are so repetitive)!
Before lunch, I went for a 50-minute walk with some co-workers of mine. It was so nice to catch up, we all used to walk together a lot back in the day 😉 The weather was cool though, so I think we walked even faster than usual to stay warm!
I was going to eat lunch before I left (at noon) but when 11:30 rolled around I just wasn’t that hungry. In the past, I would’ve just eaten anyway because of time, but I chose not to and ate when I got back to my desk. Even at 1:00, I didn’t have my normal “lunch” appetite, so I was glad I waited. And that I brought a smaller portion of food.
Leftover enchilada! Just one…I don’t know how I ate two the other night 🙂
I really love this Vegan Planet cookbook. Have I said that yet?
After such a spicy lunch, I found myself wanting something sweet. There is a candy jar in the office with some chocolate selections but none of which are vegan. It’s amazing how choosing this diet for myself has actually prevented me from eating some things I shouldn’t be anyway!
Luckily, I found this “stash”ed in my desk drawer…
Yay, that totally worked!
Lunch kept me full for a while but later in the afternoon, before hitting the gym, I snacked on some carrots and hummus. There is a lot of orange in my diet these days 😉
At the gym, I warmed up on the treadmill while reviewing my flashcards for my Exercise Science exam (which is today). I ended up trotting for 11 minutes!
Then I did some weights and such (two sets each, except for the abs):
- Chest presses
- Bicep curls
- Tricep overhead extensions
- Shoulder shrugs
- Shoulder overhead presses
- Tricep kickbacks
- Dead lifts
- Upright rows
- Regular crunches
- Side crunches
- Reverse crunches
- Toe touch crunches (legs straight up, reaching for toes)
- Back extensions
That was quite a workout. And I am just the right amount of sore today 🙂
When I got home, I snacked on a piece of whole wheat bread with peanut butter.
Why? Well, I had worked up quite an appetite on the way home. And I had to run back out and meet my friend Candy for another WALK!
I’m not sure how far we went, I’ll have to check on mapmyrun.com later, but it was a little less than an hour. I’m guessing 2-3 miles. Fun times 🙂
When I got home, it was finally dinner time and I made another concoction from Vegan Planet (I think I’m going all Julie Powell on this book, ha ha).
This recipe involved one of my favorite foods that I hadn’t had in a while due to being unable to find a decent one.
Now that I know what to look for (dark color, soft, etc.) I was able to find an amazing avocado at the store this weekend, on sale for 98 cents too!
I swapped a few ingredients in this recipe: it called for vegetarian chili, but I just used my leftover black beans and diced tomatoes. I also subbed a green pepper for the red and omitted the chile pepper since my diced tomatoes contained chiles already. Other than that, I think I kept everything the same (only a one serving sized recipe instead of 4). I used half the avocado.
Man did it feel good to get all those veggies in! I can’t wait to make this again since I still have leftover ingredients. After I took this picture, I found some green taco sauce in the fridge so I drizzled a little bit on there as “dressing”. The recipe calls for vegan cheese and vegan sour cream but I wasn’t feeling it. It was perfect just like this.
Oops, I totally forgot the black olives! Will have to use those next time.
I don’t think I’m ever really going to get tired of this snack either 🙂
I ate this while watching the results show of “Dancing with the Stars”. Sadly, even with my 11 phone calls to vote, my man Chuck Liddell was voted off this week 😦
I didn’t think he was the worst one on there and I think going first on Monday night sort of set him up too. But with the dances getting more difficult as the week’s go on, it was bound to happen before long. I really don’t care who wins so I probably won’t watch the show much anymore. Darn!
Anyway, that was my Tuesday. How was yours?
Happy Monday everyone! That’s right, I said HAPPY!
I know most people usually dread Mondays but I’m loving them (I actually find Tuesday to be more brutal). It’s the start of a new week and time to start something new, whether it be a fitness goal or cooking up some new recipes!
Something funny to start off the day…I forgot to weigh in! I had no expectations for this week really but I usually do it anyway, just to “check in” with myself. Oops! Oh well.
Breakfast was oats with banana and peanut butter. I chose to put half the banana in while it was cooking and then the other half as a topper. Mmm…
I drove to work today, so I parked my car the 1+ mile away from my building and walked in the cold! It was 45 this morning but I wasn’t making excuses to be lazy 😉
Snack this morning was some plain ol’ peanuts. Hooray for good fats!
I also went for a chilly 15-minute walk on my break, which actually ended up warming me up a bit 🙂
Lunch was leftover Tuscan Beans with sage and garlic. Plus some carrots and hummus on the side for more bulk.
I used a new kind of hummus this time. I got this on sale for $2.50 at Meijer.
But I probably won’t get it again. It was okay but nothing near the flavor of Sabra or other kinds I have had – which are only a few cents more expensive. Worth it though!
For my afternoon snack, I had a Silk yogurt in strawberry banana. It was pretty good but a bit too sweet. I want to try some other non-dairy yogurts soon.
I had to walk the 1+ mile back to my car this afternoon, but thankfully it was much warmer 🙂 I was planning to run or do yoga when I got home but in the end, I just didn’t feel like it.
I walked a lot today and that is enough!
For dinner, I made another recipe straight out of Vegan Planet!!
Black Bean and Sweet Potato Enchiladas!
It took some extra time and preparation, but I wasn’t in a hurry so I really took my time and followed the recipe exactly (except cut in half).
I had some topping leftover, so I decided to bake it on top of the enchiladas. Getting ready to go into the oven:
My plate…two enchiladas and lots of topping. The salsa I used was pretty spicy so this dish was exploding with flavor!
There were literally chunks of sweet potato in every bite. I love this combination!
Apparently, I hated them, ha ha ha…
I have to say, as a person who previously enjoyed Mexican food with lots of cheese and sour cream…I don’t miss them AT ALL! In fact, I think they would’ve ruined the flavors of this dish.
As I was packing up the leftovers, I ate some right off the spatula! 😉
I can’t wait to pick out my recipes for next week. Who knew this could be so fun and actually save me money too! I guess I did, somewhere in the back of my mind.
Off to watch Dancing with the Stars! Chuck went first and I totally used all my votes on him already, but I cried when Melissa Joan Hart got her scores from the judges, she was fantastic!
What has gotten into me? Ha ha.

Today was Monday, which meant back to work and the start of a new week! But it is also the first day that I have felt back to “normal” after being sick a little over a week ago and then having my period right after.
Since both can mess with your appetite, cravings, etc. I am glad they are both outta here 🙂
Breakfast this morning was pumpkin oats. I used the last of my pumpkin can so I won’t be having these for a while. They were good but I still can’t figure out what’s missing. Perhaps my tastes have changed?
This bowl contained 1/3 cup oats (cooked with water), 1/3 cup pumpkin, a sprinkle of pumpkin pie spice and some Skippy Natural PB.
Mid-morning, I enjoyed some new tea the in-laws gave me:
And some mixed nuts to snack on.
For lunch, I had some leftover black beans and barley, which I wasn’t too thrilled about at first, but I found some salsa in the fridge which I think gave it the perfect touch. I ended up really enjoying it!
I got back to Exercise Science class after missing last week, so that was good to get caught up. I’m really enjoying everything I am learning in this class but I’m starting to think I won’t be able to stick through getting another 4 year degree (I already have 2).
So I’m thinking after this semester I may just get my personal training certification and then go back to school later if time (and money) permits. I really want to get to work!
After class, we had a baby shower for a co-worker who is so cute it’s ridiculous. I’m so happy for her. There was also some good food. I just snacked on some tortilla chips and salsa (plus more chips).
I knew I had to get a run in sometime today and it was going to have to be after work. Luckily, I hopped on Twitter and saw a few others who had either gone for runs or needed to. So that inspired me to get it done!
I did one of my favorite paths near my neighborhood with no time in mind. After I was done, I came back in and looked it all up on Map My Run.
It says I did 2.85 miles in 25 minutes! That’s an average of 8:46/mile! Holy smokes. I’m not sure how accurate that is but I’ll take it.
My time also isn’t exact. I left the house at 6:03 p.m. and reached the front door again at 6:28. So it’s a guesstimate. I even walked for a few minutes including a warm up and cool down so I was quite impressed with that.
I do think I am getting faster, as my 1-mile runs with Farrah have proven. I texted her after this run to tell her I wanted to go fast again tomorrow but she wisely told me to wait and see how I feel tomorrow. Ha ha.
After the run, I did lots of stretching including pigeon pose to keep my hips from getting tight and lots of downward facing dogs. I love yoga.
For dinner, I made some baked tofu which I am now confident in keeping in my diet for the time being. Thanks again to those of you who commented on my soy question in a previous post. I really appreciate the feedback.
I’ve decided I’m a big fan of mixed veggies. It’s just the right combo of starchy and green. I think I just like mixes in general instead of just having one veggie on the side.
I’m currently watching “Dancing with the Stars” hoping my man Chuck Liddell makes in another week!
I also snacked on this and perhaps a bit more PB 🙂

Thanks everyone for all the get well wishes, I really felt them! I am doing a little better tonight since I’ve had the day to rest and catch up a bit. I also opened the windows in the apartment because we had a beautiful Fall day today, so I got all the “sick” air out of here, ha ha.
For lunch, I had a Boca vegan burger on an Ezekiel English muffin with Sabra Chipotle hummus and spinach plus a carrot and hummus on the side.
Yeah, it’s the same as what I had for dinner last night. But at least I opted for the muffin this time instead of toast. These are so good. I have a few left but I will definitely be buying more.
So dense, chewy and soft at the same time. I love them!
For a snack, I had a Nature Valley bar. I need to space these out better…I won’t pack one in my bag tomorrow.
As I was making dinner, I remembered something awesome I saw at the grocery store this weekend. Remember my big rant about Josh’s choice of margarine? Well, check this out:

That’s right! They FINALLY removed the hydrogenated oils so that they are no longer falsely claiming to be trans fat free! And now I can let my husband enjoy his margarine in peace. I won’t be eating it though after October 1st because it contains buttermilk. I’m so happy for Josh’s arteries.
For dinner, I made myself baked tofu, Brussels sprouts (Vitamin C!) and a piece of wheat toast. Unfortunately this brand of whole wheat bread I buy for Josh had honey in it. I will have to decide if I’ll eat it anymore after October 1.
For dessert, I had some Carrot Cake non-dairy ice cream. I also had some last night after blogging. It wasn’t as good as I remember it being, so I don’t think I’ll buy it again. But the cold did feel good on my throat.
I think I might just be “over” ice cream type things? What? Who am I? I am sick though, we’ll see. Ha.
I’m probably going to grab another snack at some point and then go upstairs and watch “Dancing with the Stars”! I saw a pic of Chuck Liddell on Twitter earlier and he is looking trim. I guess that dancing workout will do it for you.

Tuesday night, I mentioned that I wanted to go for a run in the morning, since I knew it was unlikely that I’d be able to “fit it in” later in the day with my schedule the way it was.
The night before, I laid out my clothes and packed my lunch so I would save time in the morning.
Like my Cartman tooth fairy in the background? Ha ha.
When I went to sleep that night, I thought there was no way I was going to be able to get up and do it. Or if I did get up, it would be raining. You know, excuses.
Well, I DID IT! I got out the door, warmed up, ran the course I had planned out in my head, and then cooled down for a total of 25 minutes (and around 2 miles total). All before breakfast!
Speaking of which, a green monster has never tasted so good…cheers!
It felt so good to start the day off that way. Might have to keep this up?
Mid-morning I snacked on some soy yogurt and Ezekiel cereal. Starting to become old news 😉
Lunch was leftover falafel and red potatoes. Finally zee red potatoes are finished 🙂
Mid-afternoon, I snacked on some carrots and hummus. I had some tea too but no chocolate today. See, not everything has to be everyday 🙂
Wednesday is usually the highlight of my week because it is when us girls get together for a girl’s night potluck dinner. This week, Courtney had the main dish and she made an amazing looking baked ziti!
And Aleta brought some amazing looking warm bread 🙂
And I brought broccoli, hehe. Figures.
Since I’m not really eating dairy these days (I haven’t really told anyone yet unless they happen to read this since I’m still experimenting), I peeled back the cheese a bit and scooped out some pasta.
It was delicious, as was the bread that I went back and got another piece of!
Lots of carbs stuffed me and made me a little bloated. I remember now why I don’t usually eat much pasta. But everything tasted great!
Dessert didn’t thrill me too much. First, this was a sour cream Angel food cake which tells me it is not vegan (which I knew already). And I think it would’ve been better with something on it?
I probably should’ve just passed on it but I gave it a try anyway for some reason. Oh well, hopefully dessert night next week will be better.
It was a really good night with the girls too. We watched the “Dancing with the Stars” results show and thank goodness, Chuck Liddell is going to be around another week!
We also watched that new show “Glee” which was pretty cute. But I’m trying not to pick up any new shows. I think I could actually live without television most of the time 😉

Over here in our household, we have a sick dude. Josh is coming down with a cold or something, his sinuses are a mess and he’s feeling icky and lethargic. I hope he feels better soon. But I’m kind of avoiding him so I don’t get the germs.
I haven’t had a cold or any illness since August 2008 and I don’t want to break that streak. I thought I was coming down with something about a month ago, but I fought it off.
In the spirit of cold and flu season, I got my flu shot today!
Complete with a Tweety bird band-aid. Ha ha! I look kind of scary though.
My work offers flu shots for free, so I jumped at the chance. I guess I have been getting flu shots every year for the last 5 or 6 years. I got the flu a couple times as a kid and once as a teenager and it was miserable enough to convince me I had to do it!
I am not sure yet if I will get the H1N1 shot, if it is even available to me. It’s just so new, I’m afraid of what could go wrong. Hmm…

For breakfast this morning, I fueled up on something that has been missing from my diet for quite some time…THE GREEN MONSTER!
This GM contained: 1 cup of unsweetened original Almond Breeze, 2 big handfuls of spinach, 1 frozen & chopped banana, and 1 tbsp of peanut butter. Yum yum. Oh, how I had missed these 😉
Mid morning, I ate some nuts and then took a short walk (to get my shot).
Lunch was some delicious leftover chickpea curry, which might have been even better today!
After lunch, I had my usual tea and dark chocolate. Then I went to go take my first Exercise Science exam, eek. I think I did ok, but I could’ve done better. Oh well, something to improve on!
For my afternoon snack, I had some Stonyfield O’Soy yogurt (small package from the 6-pack) with some Ezekiel golden flax cereal on top.
I chose the small containers because I got 6 for $1.99! Plus this little bitty thing already has 13 grams of sugar, wow.
It was tasty though and I’m comfortable with including it in my diet for now 🙂
After work, I hit the gym hoping to get in a run but all the treadmills were taken! I guess that is a good problem though. At least people are using them.
I ended up doing 30 minutes on the elliptical and it definitely gave me a run for my money! Afterwards, I stretched for almost 15 minutes and it felt so good to take the time and really take care of my body.
When I got home, I was so hungry, so I snacked on some more nuts (no picture). Then I got to work on dinner.
Josh and I had some red potatoes at a cookout on Labor Day and ever since then I’ve been craving them and he was open to trying them at home 🙂
I drizzled 1 tbsp of canola oil and sprinkled salt and pepper on top of the potatoes.
I had a hard time figuring out the cooking part. I cooked them in the oven at 425 for nearly 30 minutes but they weren’t quite done so I ended up microwaving them for a few out of impatience.
But once they were done, they were good!
In typical Josh and Sarah fashion, he had chicken and I had tofu.

Afterward, I had a piece of dark chocolate.
I’m off to watch “Dancing with the Stars” which is not a show I usually watch but I have to this season because Chuck Liddell is on! He is one of my favorite UFC fights. I just watched his first dance and it wasn’t too bad…I hope he can hang on a few more weeks 🙂
Aaron Carter looks good too, he was looking a bit rough there a couple years back, I’m glad he seems to have gotten himself together. It was cool to see the old Backstreet Boys in the crowd too!
I better get back to the tv. I also have a cup of peppermint tea in my future.
