Beginning and end

When I woke up this morning, I was feeling a little funky from all the salty chips, champagne and diet Coke I had last night.

But after a walk with the dog and a few glasses of water, I was feeling much better!

For breakfast, I made pumpkin oats with dark chocolate dreams. I love this stuff!

I had Jimmy John’s with my parents for lunch but I didn’t take any pictures. I also had a spoonful of peanut butter before taking a 2.5 hour nap!

I had a few things in mind to make for dinner but I decided to make whatever I was craving when I woke up from my nap…spaghetti it is!

This was my first time trying this brand (I had a coupon). It claims to be made with a formula that keeps some of the carbs from being absorbed and lower on the glycemic index.

I made my usual “meat” sauce (pasta sauce, veggies, faux meat crumbles) to go on top and had a pita with Smart Balance Light on the side.

The pasta tasted really good and it does have more fiber than regular pasta. I’m glad to use it for now but it’s more expensive than the whole grain I usually buy so unless I get another coupon, I doubt I’ll buy this regularly.

For a snack, I just had a whole wheat English muffin with peanut butter and chocolate chips.

I’m going to watch “Big Love” with Josh and then go to bed early. I’m still tired even after that nap, I feel so old sometimes 😉

I have a big day planned, starting off with a 5 mile run!

I can’t decide if I want to drive to a park or just go around my neighborhood but the sun is coming up now, so I’d better decide soon 🙂

Struggling to catch up

Wow, I didn’t realize just how behind I was. Not only am I struggling to write my own blog again but I’m having trouble catching up on your alls too.

The good news is that as of right now, I am OFF WORK UNTIL 2010!! 🙂

Pumpkin oats with Dark Chocolate Dreams. Holy breakfast! This was so awesome I wish I’d thought of it sooner.

Mid morning I snacked on a vegan rice krispie treat and worked hard to get everything done before the big holiday break.

Lunch was some pita, hummus and peas. Random but good and filling.

My workouts have been really random lately since I was suffering from a major toothache and then working to build my appetite and energy back up.

But today, I managed to get an awesome 30 minute incline workout on the treadmill and then lifted some weights and did some abs before heading home to make dinner.

I love Mama Pea’s black bean burgers! Best burgers ever, who needs Boca?

This is semi-local Oliver wine from Bloomington, Indiana. It lived up to its description, very soft and just slightly sweet. I’d like to try more from this brand.

Ode to the best snack

My camera batteries decided to die on me last night so I missed out a whole day’s worth of eats. 😦

But tonight, I made a trip to Target and got some batteries, among other things…

I bought the Dark Chocolate Dreams last week because I hadn’t had it in a while and while it was good, it just wasn’t the best thing ever like I used to think.

White Chocolate Wonderful…the first time I had it, I liked it, but not as much as the others. Now, I think it is my favorite!

Funny how things change 🙂

I have Tina to thank for turning me on to this evening snack ages ago.

It’s fun because it’s healthy, tastes great, and assuming you only eat one, it’s calorie content is not too shabby.

Plus you can try different breads (or Ezekiel English muffins, ahh, need to get more of those) and nut butters. The thing I like most about the chocolate chips is that they are sweet but still low in sugar.

Case of the Mondays

Sorry for the lack of posting lately! It’s definitely been one of those days.

But hey, I’m feeling good and healthy, my Christmas tree is beautiful, my house is clean…it’s all good.

This morning, I had banana oats with PB for breakfast. Surprised?

All I keep hearing about from people today after this Thanksgiving holiday is that they are going to “go on a diet” or “not eat” for a while. What the heck?

Don’t do it people, it won’t work! Love yourself more than that. Please.

I skipped my usual Monday Starbucks run this morning because I was so full from breakfast (perhaps that’s where I went wrong, ha).

Eventually my appetite caught up and I snacked on an apple and Dark Chocolate Dreams.

I had soup planned for lunch but the bowl I brought to eat it out of fell onto the floor of my cubicle and shattered 😦

I searched high and low at work and there were no spare bowls to be found. So I had to buy lunch today, which totally sucked (I hate spending money unexpectedly).

I decided to go to Einstein Brothers Bagels because I’d never been there before and it was one of the closest places to go (since it was cold outside and I was trying to avoid it).

I was frustrated and hungry when I got over there, always a deadly combination.

I ordered the “Veg Out” sandwich, which cost me $6.35! I could’ve got a bag of bagels, an onion, tomato, cucumber and head of lettuce for that much probably.

I don’t know what the sauce was (reminded me of a chipotle ranch) but I’m pretty sure it contained dairy and it even messed with my stomach a bit. I hate that because I didn’t know sauce came on it. Silly me.

This tasted alright and was filling but the high price tag (and the red onions) left a bad taste in my mouth. The bagel also did not work well as “bread” because everything fell out with every bite I took…very messy.

For $6.35, I could’ve at least gotten a whole meal at Subway. Will remember that next time (hopefully there won’t be one).

I snacked on some more Dark Chocolate crack Dreams and then called it a day. Since I was seriously craving soup, I decided to take it home and make it for dinner!

After dinner settled, I went for a really freakin’ cold walk with my friend Candy and then hit up Target to see if they had any good deals. I got a fleece and some more warm pajama pants for $20.

My in-laws early Christmas present came at the best time! 🙂

When I got home, I felt hungry again and even though I’d had my fair share of chocolate peanut butter, I’m apparently not tired of chocolate or peanut butter, individually.

I’m so glad Monday is over and I can’t wait to try again tomorrow. Really though, today wasn’t too bad. Could always be worse, right?

I should’ve expected a rough transition coming off a five day weekend, ha ha!
