Happy belated 4th of July everyone! Hope you enjoyed yourselves 🙂
My day was spent with my mom shopping around for things to put in our new home while my husband was out with my dad and uncles shopping for all the manly stuff. It was so amazing to FINALLY close on Friday after the ordeal we went through to get this place. But now that it is ours, it all seems worth it 🙂 Honestly, everyone warned us it would be brutal, but closing was the easiest thing we had to do!
Anyway, yesterday my mom and I were out and about all morning and finally decided to break for some sustenance before our last stop at the Peddler’s Mall. We decided to stop in at Lemongrass Cafe on Shelbyville Road in Middletown. So many places were closed yesterday that we were kind of relieved not to have to come up with a back up plan for lunch once we saw the open sign 🙂
Since it was a holiday, the place was not crowded at all and we got seated immediately. They also brought us some water, which was nice since it was pretty hot here yesterday. After looking over the menu for a few moments (they have a great vegetarian section and tofu or mock chicken can be substituted in almost any dish) I finally decided on the Spicy eggplant and Tofu, which looked so gorgeous when it came out, I had to take a picture!
The tofu was the perfect texture and the eggplant too! It wasn’t very spicy (unlike the spicy stir fried eggplant from PF Chang’s, which I love) but it was still very tasty. My dish came with white rice which I ate too but on my way out, I noticed a sign that said “we have brown rice now” so I will have to remember that for next time.
My mom isn’t a big fan of spicy foods so I recommended she order a pad thai dish, which she really enjoyed. Her only complaint was that the portion was huge!
Overall, I was pretty pleased with this place and I would definitely go back. Maybe I will try something new next time but I would be okay having the same thing again.
Since I’ve been staying pretty busy during the week with social and exercise commitments, I have been using a lot of “convenience” foods so that I can still eat healthy foods that I love but not have to spend time in the kitchen that I just don’t have right now.
Eggplant is one of my favorite foods and unfortunately, I haven’t had the time or patience to make an eggplant dish from scratch in quite a while. But fortunately, I found this little product at Fresh Market and it is amazing!
When I picked this up, I totally expected it to have egg in it since it’s breaded, but after reading the ingredients and noticing the little “Vegan” with a checkmark note on the bottom right corner, I knew this was sold!
It’s kind of weird though that they have a picture of cheese melting on it. Oh well, I guess it could be Daiya 😉
It cooks really quickly too. I heated up two slices in a pan on the stove, 1-2 minutes on each side. The box says to use oil but I just use cooking spray.
One serving of this delicious, cripsy eggplant is only 100 calories! And it’s delicious!
Pan frying makes it nice and crispy and since I don’t normally eat breaded eggplant it was quite a treat. There are five servings per container for this box, which was around $4. Not too bad!
What healthy “convenience” foods do you have on hand?
For breakfast, I made pumpkin oats with some chocolate chips and peanut butter 🙂
Today at work, I tried hemp milk in my coffee. It was different. I don’t think I’ll do it again because the tastes just don’t go well together. But it was worth a shot.
I snacked on mixed nuts later in the morning.
Are you guys getting bored of my nuts yet? Ha ha.
Lunch was mixed veggies and leftover eggplant from last night which I decided to top with hummus today…wow! I will definitely be buying eggplant again soon.
Then, this afternoon I got to try a new Larabar!
I think this is only the second of the Jocalat line that I have tried but oh my! I am in love with ALL the new Larabar flavors. Not a bad thing.
Then after work, I finally got to work out!
I warmed up on the treadmill for 15 minutes then I got started on some strength training. I did 15 reps of each move using various weights:
- Chest presses
- Military shoulder press
- Seated row machine
- Upright row with bar
- Bicep curls
- Tricep extensions
- Front raises
- Lateral raises
- Plie squats
- Ab exercises (about 6 or 7 different ones)
It felt so good to get moving again. And I am happy to report that after some salt gargling I did last night, my throat seems to be all better!
I thought “Sheesh, I only did it once” but I did do it about 5 times in a row.
Anyway, I had an absolutely fabulous dinner when I got home.
First, I started steaming some fresh green beans. It was so nice to not use the frozen for once. These were 99 cents a pound!
Then I made my beloved baked tofu, which I hadn’t had in a couple of weeks now. It’s nice to change things up for a while and then come back to an old favorite.
All together now, with some brown rice. Delicious!
Even though I do wish that Josh ate some of the same things I do, it is nice having these leftovers all to myself for lunch tomorrow 🙂

For breakfast this morning, I broke out some Great Harvest bread that I bought on Saturday. This one is vegan 🙂
I toasted up two slices with pumpkin butter and peanut butter. Plus an apple on the side for some fruitiness.
On the way to work, Mom treated me to a soy chai tea latte, which really hit the spot on my still, very sore and achy throat. If it doesn’t clear up by Wednesday, I am going to the doctor!
Mid morning I snacked on some more plantain chips, love these things.
Good thing I only bought one bag 😉
For lunch, I had some leftover spaghetti squash from Saturday. It was really good again today! I’m so glad I finally tried it.
I sipped on some hot tea during class today which also seemed to soothe my throat. Class was also interesting today as we learned more about weight training!
I snacked on some mixed nuts later in the afternoon.
When I got home, I immediately knew what I was going to make for dinner. EGGPLANT!
I sliced up a medium eggplant, then put some hemp milk and corn meal in separate bowls, dipping each piece of eggplant in the milk then meal.
Then I cooked them in the oven at 400 degrees for 30 minutes. Voila!
On the side I made some couscous, which I have been craving for a while!
I’m a simple girl. This plain couscous was AWESOME. All together now…
I really enjoyed my dinner 🙂 The eggplant slices came out kind of crunchy like chips!
After I ate, I did a lot of housework that sort of got left by the wayside this weekend while I wasn’t feeling good and out of town yesterday. I decided to use that as my activity! But I do have a work out scheduled for tomorrow, depending on how I feel.
For a snack a little while ago, I had some Honey Sunshine Kashi cereal with hemp milk. I’m getting used to the hemp milk and I was pleased to see it contains Omega 3’s.
I may or may not have had some blood orange Dots too 😉 Ahh, my throat is so sore. I’m off to gargle some salt water and go to bed!
