New Larabar flavor?

I don’t know if this is truly a new flavor or just new to me, but I am loving the “new” Larabar I tried this week 🙂

New flavor

Blueberry Muffin is delicious! I think it might just be a new favorite. The only place I have seen them is Whole Foods.

Howdy strangers! Just a quick bit of news to share with you.

Adjusting the "schedule"

I realized today that starting in a week, I will be taking summer classes!

Since I use my lunch hour (and then some) to do so, this means I won’t be having much free time to work out during the day.

I contemplated getting up early this morning to practice an a.m. run but it just didn’t happen. I’m still dealing with allergies and a cough, so mornings are the worst as far as how I feel. Since I still have a week to go, I’m hoping I’ll figure out how to adjust my “schedule” so that I can fit in workouts without feeling stressed.

Today, I went to the gym at lunch because I know that here lately, waiting until the end of the day has been dangerous. I’ve backed out of many a 4:00 workout the past couple of weeks. So 12:45 was a much safer bet!

I did 2 miles on the treadmill in 21:40 (a 10:50/mile pace) and I felt good. I stretched a lot afterwards then came back to work and ate a Larabar.

I figure for my new workout schedule, I have two options:

  1. Get up early and work out in the morning
  2. Work out after work or at night

I think it will end up being a combination of the two, depending on my schedule, how I’m feeling, the weather, etc. Speaking of weather, as it is getting warmer, these two times of day will be more ideal anyway. This week it is going to be 87 every day!

Feeling squashy

I started off Wednesday with some more oatmeal. I have had the same thing for breakfast almost every day this week!

Hey, if it ain’t broke

I’ve been alternating between sprinkling a tablespoon of milled flaxseed and raw wheat germ on my oatmeal. Both have great nutritional benefits (see links)!

Along with green juice, I have also been enjoying homemade iced coffee with unsweetened coconut milk 🙂

I snacked on some natural almonds.

For lunch, I had another Sunshine garden herb patty inside of a pita pocket with a tomato slice and salsa verde.

The tomato I used was purchased from Huber’s Farm, which is located about 45 minutes away from me over in Indiana. I felt good about making a semi-local purchase, but I was still sure to wash and scrub the tomato as I’m not sure what might’ve been on there.

I also had some cauliflower to round out my meal!

For “dessert” I had a new to me fruit: a champagne mango!

Since I didn’t bring a knife to cut it with, I just bit right into it.

The skin had a little bit of a funky taste, so I ended up peeling it back and eating the fruit inside. It was so good! It had a slightly different taste than a regular mango and I found this one to be much juicier and sweet than most mangoes I’ve had.

For my afternoon snack, I had a Larabar. One of my favorite flavors!

Then I went home and took Suzie for a walk instead of going to the gym. It was a good choice!

I was hungry when we got back so I had some raisins, which is what I was craving 🙂

Then for dinner, we headed over to Beth’s house for our weekly girl’s night potluck. On the menu this week: Squash!

Beth made a delicious dish of summer squash baked in garlic herb tomato sauce. It looked very simple but was bursting with flavor.

Between this dish and my beloved spaghetti squash, I can declare: I LOVE SQUASH! I love how it is technically a vegetable (?) but you can make it the main component of your meal. It is quite versatile since there are so many varieties of squash and ways to cook them.

I also had a side salad with diced tomatoes and onion with Annie’s natural goddess dressing and some warm, soft and chewy Meijer bakery bread, which I have absolutely no willpower to turn down 😉

For dessert, Margie brought a lovely rice milk treat.

I have had this brand before and their ingredients aren’t too bad and the sugar content is moderate, which I think being made from rice milk helps that. I thought it was pretty good too!

I enjoyed this while we watched New Moon. I never read the books but it’s fun to watch the movies and find out what everyone is obsessing about, ha ha. From an “outsider” perspective, I thought the second movie was better (but a little long), since the first one just made me laugh.

What I’m enjoying this week

Green juice!

For some reason, I just have NOT been feeling the green smoothies this week, but I have been craving green juice. This particular one contains a lot of good for me stuff!

If only I had a juicer, I could make some myself. Hmm…perhaps an anniversary gift? 😉

My new coffee mugs!

Courtney got me these for my birthday. Aren’t they adorable? I hope to visit some of these cities someday and definitely NYC again 🙂


Because I had a coupon, they are delicious and contain very few ingredients. I seriously don’t want/need to eat any other bars, unless I make them myself one day.

“Natural” nuts:

They cost a lot more, which seems wrong to me (shouldn’t we pay extra for roasting and salt?) but they are so much better!

Banana oats and lots of ’em!

Usually by now it is so hot, even in the mornings, that hot cereal does not sound good to me. But that hasn’t happened just yet 😉

And lastly…

My favorite nighttime snack/dessert…a small cup of oat bran with PB and chocolate chips. Oh how I’d missed chocolate! A little bit never hurt anyone 😉

On the mend

I think I am finally starting to feel better! I think it helps that the rain is finally clearing out of here for a couple of days and thus my allergies are letting up.

Breakfast this morning was a beautiful creation…I am so in oats mode right now, at least until it warms up again!

This bowl contained 1/2 cup oats cooked with 1/2 cup almond milk and 1/2 cup water, 1 tbsp flax, and topped with blackberries, walnuts and peanut butter.


I recently went back to more “natural” peanut butter (only ingredient peanuts) and it’s so tasty!

I stayed on the couch again with Suzie drinking coffee for most of the morning. Then I decided to get up and try to do some house work which worked up an appetite for pita and hummus 🙂

For lunch, I was really craving some more vegetarian baked beans (they are so good, must be the brown sugar, ha ha) which I had today with cauliflower and couscous.

I had an appointment to get my hair cut this afternoon and afterwards I ran a few errands, taking some magazines to the used book store and picking up some new hair products at Target 😉

My hair is awesome, will have to take pics later!

While I was out, I snacked on a peanut butter cookie Larabar and an iced coffee with soymilk.

A few hours later, I made Mama Pea’s black bean burgers for dinner. It had been a while, they are so good!

I started off with a romaine salad and shiraz.


I had my burger in a pita pocket with ketchup and some corn on the cob on the side 🙂

I snacked on some strawberries with peanut butter while watching “It Might Get Loud” with Josh. Excellent film for anyone that likes music 😉

Perhaps I spoke too soon? My nose is all stopped up and I keep sneezing! But my energy is back, so I know I can function normally again.

We’ll see how I feel tomorrow! Hopefully I can get an easy workout in 🙂

I keep forgetting I did a mini marathon four days ago!

Sticking to bland

This morning, my stomach was still feeling a little weird (probably) from something I did or ate yesterday. So I decided to stick to bland foods for the most part.

For breakfast, my second attempt at a Chocolate Cherry Bomb 🙂

001 This one was much better. Adding the half banana is crucial. This smoothie contained: 1 cup Silk almond milk, 1/2 frozen banana, 1/4 cup frozen cherries, 1 (generous) tbsp cocoa powder and 2 cups of spinach. Yum!

I drank this really early this morning and then went to the gym, so by the time I got to work I was totally hungry again! Note to self: need to invest in some protein powder.

Since I was sort of afraid to eat leftover falafel today, I stuck to easily digestible oatmeal for lunch 🙂

This is getting out of hand. I’m seriously considering a cut back or giving up caffeine for a while. I go back and forth. This is usually the time of year that I quit and then end up heavily addicted again by Fall!

I also had a few sips of this to try and get some more veggies in, but I decided to save it for another day. I like carrot juice a lot, I always get weird looks 😉


Later in the afternoon, I got pretty hungry so I had a Tropical Fruit Tart Larabar. I love this flavor, you can totally taste the orange juice in it, which I like.

I walked 17 minutes to my car after work (which I also did this morning, plus a 15 minute break walk) and took Suzie for a 45 minute walk when I got home.

This really worked up my appetite! I had a couple of snacks at home before dinner.

It’s about time to go to girl’s night potluck!

I love Wednesdays. We are having vegetarian chili and I made something awesome to go with it, which I will share with you all later 🙂

Hope my stomach is getting back to normal. I don’t like having anything unsettled in that area!

National Sweet Potato Day

Do you guys know that April 5th is National Sweet Potato Day? That’s cause for celebration…more on that later!

This morning, I tried a new green-ish smoothie that I’d seen all over the blog world: the Chocolate Cherry Bomb!

002 My version contained: 1 cup Silk almond milk, 1/2 cup frozen cherries, 2 tbsp cocoa powder, 1 tsp agave, and about 2.5 cups of spinach.

I actually had a little trouble with this one. My blender was dirty and I didn’t feel like cleaning it out so I used my food processor, which did not “process” this as well as I would’ve liked. I also think I used too much cocoa powder.

001BUT…it was still really good and I can’t wait to tweak it and make it again.

Mid-morning, I snacked on some nuts with coffee 🙂

003For lunch, I made a salad with carrots, a leftover chickpea patty, and some pine nut hummus.

004I loved how green this lettuce was. So much better than some of the others I’ve had recently.

I also ate a juicy orange with lunch. I just realized I got quite a bit of orange in my diet today!

005 Oranges are quite a pain in the butt to peel but so worth it. Yum!


Then later, before my workout, I had my first Larabar since I gave them up for Lent back in February!

The whole experience allowed me to learn how to live without something and now that it’s back in my life, I don’t need to eat them so much that the special-ness wears off. I only bought two bars to have this entire week!

For dinner, I had only one thing on my mind. Couscous!


I love couscous and every now and then I get a big craving for it, which is usually when I go ahead and buy some. It doesn’t have as much fiber as other grains, but it sure it tasty!

010And of course, I had a sweet potato in honor of National Sweet Potato Day (thanks Lindsay for letting me now about this important food holiday)!

What was the best thing you ate today?

Mucho soy

On Wednesday night, Courtney asked me if I wanted some more tea. Uh, did she see my tea post? Ha, of course!


I love you, Earl Grey. You are delicious!

Since you’ve already seen my breakfast from yesterday, let’s move on. I snacked on some nuts (and coffee) mid-morning.


As much as I love tea, I can’t resist a cup of coffee at work 🙂

Since my breakfast was a bit skimpy, I got hungry for lunch rather early. I went ahead and ate my tangerine (loving Vitamin C these days).


Then eventually broke into my leftover rice and beans!


I ate a Larabar around 1:00!


So it’s no surprise that I was starving by the time I was heading to the gym after work. It might just be full of air, but it got the job done.


Then I rehydrated with some Lifewater!


Dinner was some baked tofu (garlic powder, chili powder and sesame seeds) with a sweet potato and pita with Smart Balance Light.


As if I hadn’t had enough soy for the day, I decided to finish off the leftovers of my Tofu Chocolate Pudding from Wednesday night.


And a cup of Chocolate Cheerios!


Must’ve been that awesome elliptical workout that worked up such an appetite! I almost went back for more cereal but I realized I wasn’t hungry anymore, but tired.

So I maintained my 9:00 rule, went to bed at 10 and felt just fine 🙂

I used to be “afraid” of eating too much soy, but I’m so glad that I learned that soy in it’s “whole” forms: soybeans, tofu, soymilk, etc. is safe. It is the overly processed soy “products” (like meat substitutes) that can be consumed too much.

I like it green

It’s good to start a new week off with a nice, refreshing and nutrient-dense green smoothie!


This time I used almond milk and the taste difference is unbelievable, almond milk is so much creamier too.


I also had a pita with a smear of peanut butter. Good breakfast for a cold February morning, ha ha.

I snacked on some nuts mid-morning and for lunch some leftover vegan meatloaf that I made for the Superbowl yesterday, along with some veggies and a tangerine.


Before my run today, I snacked on a Larabar. I seriously don’t think there is any reason to switch to anything else, this is my perfect pre-run fuel.


I was supposed to meet a friend for dinner but she wasn’t feeling well so I was on my own when I got home tonight.

I whipped up some spaghetti and topped it with sauce and broccoli and had a slice of leftover bread on the side 😉


For dessert, I had a pita pocket with White Chocolate Wonderful and chocolate chips.


And I scraped out the rest of the WCW jar (another tbsp maybe). I can’t believe it is gone already! The stuff is like crack.

Mine is breakfast but there is also nothing quite like a nice, warm, homemade healthy dinner after a good workout 🙂
