I think it worked

Today was a really good day. After my post last night about my concerns over eating too much to keep up with my new running program, I did a lot of thinking and research.

Breakfast this morning was of course a green monster.

As much as I love these things (and getting 3 cups of spinach in at breakfast) I am kind of glad this challenge is over. I’ve missed my oats!

I think I will try to incorporate these green smoothies into my diet from time to time but I don’t see them as a long term breakfast choice for me, especially not as the weather gets colder.

I snacked on some nuts mid-morning and then for lunch, I had leftover lentils that I made on Tuesday with some steamed green beans.

One of the things I mentioned in my post about my running diet was that I thought eating a snack before and after my workout would help keep me from overdoing it when I got home in the evenings.

Well, I think it worked!

I had a slice of whole wheat bread with peanut butter for a snack about 30 minutes before I went to work out.

We ran 2 miles and then came back and did some upper body weights and abs. It was great, especially in this beautiful weather we’ve been blessed with (high 50’s and sunshine)!

Then when I got back to work, I had a SoBe Lifewater and a Nature Valley bar.

It wasn’t the best snack but one of the only options I could find at work. I intend to plan my snacks better next week.

It also held me over quite well, as I did not get hungry until 7:30 when I started making dinner.

I had a random assortment of foods for dinner tonight: potatoes, carrots + hummus, and couscous. It was random but it was everything I felt like eating and used up more stuff at home instead of going out or buying something at the store.

I cooked the potatoes in the oven at 425 for 20 minutes.

And I tried a new hummus! So much better than the “original” flavor of this brand.

I did go grocery shopping tonight (Josh is at a Megadeth concert) and I got everything we needed for $54 and I get to try a few new things this week, so that is exciting!

I’m getting ready to watch the film “Food, Inc.” which I won in a giveaway on Kath Eats a while back.

Day 19: Finally ate that salad

This morning I finished off the last of my pumpkin pie pancakes. It was sort of sad to see them go but I know I can always make them again another time 😉

On the way to work, my mom suggested we stop at Starbucks since it was cold and we had a few extra minutes. She rules 😉

Soy latte! This seriously tastes like toasted marshmallows. Who needs those syrupy drinks? Well, I’m still pretty peeved about their pumpkin spice syrup (it has milk in it).

This morning at work, we had a party to celebrate all the October birthdays in our department and I snacked on some fruit (strawberries, pineapple, cantaloupe, grapes) and some peanuts.

For lunch, I had the salad I had been talking about making for a couple of days now. I wasn’t too excited about it this morning, especially considering how cold it was today, but once I ate it, I changed my tune 🙂

This salad contained: romaine lettuce, diced tomatoes with chiles, black beans and half a chopped green pepper. I used hummus as a dressing and had a few fire roasted tomato Triscuits leftover from the party that I saw on the approved vegan snack list!

Both the salad and the crackers were flavorful and spicy. What a great lunch 🙂

Unfortunately it was not too much later that I realized I forgot to bring an afternoon snack! I had been trying to get away from “convenience” foods like these but it was pretty much my only choice.

Actually it was either this or some cinnamon Teddy Grahams. I almost went for the latter, until I saw partially hydrogenated stuff on the list of ingredients. They may be vegan, but they are still disgusting!

Plus, the bag would’ve cost me almost 400 calories while the bar was a mere 160. I made a good choice 🙂

After work, I hit the gym solo to do a nice walk/run. I decided to up the running amount today and do a little experiment with various speeds. Apparently, I’m most comfortable at 5.5 mph but I can stay at 6.0 for a while. And if I need to jog and recover, 5.0 is perfect.

I stuck with our 0.25 mile intervals but instead of alternating walking a lap with running a lap, I walked one (warm up), ran three, walked one, ran three, walked one, ran two and walked one (cool down).

I did 3.02 miles in 40:00. By running more this time, I shaved 5 minutes off my normal time. I was going to try for 4 miles today but my calves and knees were starting to tire and hurt so I kept it at 3.

For dinner, I made a new to me vegan recipe from Happy Herbivore!

Verdict: So yummy! And totally easy and inexpensive to make. I have leftovers too so you will be seeing this again over the course of the week 🙂

For dessert, I had the other half of my banana soft serve from last night topped with a little bit of peanut butter.

I’m so sleepy and so glad that I did all the housework yesterday so tonight I an just RELAX!

I think I see some tea in my future and an early bed time. I’m thinking 9:00 is looking pretty good right now…I swear I’m only 27! Ha ha.

Day 6: The running munchies

Okay, so it’s time I did some re-assessing here. The thing that drives me crazy about running is the major appetite that it gives me, which in the past, led me to overeating a lot of sugar and carbs which led to weight gain and hence, a hiatus on running to calm things down.

I want to find a happy medium. I am not going to be running any marathons, I’m pretty much a short distance gal these days. I love me some 5Ks.

But I don’t want to have to give it up completely just because it makes me ravenous (or tricks me into thinking I am). I want to nip this in the bud before it gets out of hand. So after I tell you what I ate yesterday, I’m off to do some research.

Breakfast yesterday was a banana PB oats!

I used 1/3 cup Almond Breeze and 1/3 cup water this time and it did make them taste creamier and added a little flavor so I think I will do that from now on. I should’ve tried that with my pumpkin oats before they ran out. Oh well!

Snacked on some nuts mid-morning, this is becoming rather redundant but I love them 🙂

For lunch, I had leftover tofu and some broccoli.

Then I still felt hungry so I raided the leftover snacks from the day before’s baby shower and took a few crackers (checked the ingredients on the box first). Pretty good!

A couple of hours later, it was workout time! Farrah and I ran around 1.25 miles in 10 minutes. We actually sprinted a little bit because we were trying to beat a train that was coming 😉

After our “warm up” we went into the gym and did a quick strength routine, including:

  • Squats
  • Dead lifts
  • Tricep pushdowns
  • Dips on the bench
  • Seated rowing machine
  • Leg lifts (front, side, back)
  • Abs
  • Back extensions
  • Tricep kickbacks

Whoa, no wonder I am sore today. Whenever I reflect back on what we did I am amazed because it doesn’t seem like that much at the time. We even cut off early because we were both pretty sweaty and tired 🙂

When I got back to my desk, I snacked on a Nature Valley bar (last one).

I love these and they are vegan but I need to reduce my intake of processed snacks for a while (again). But they will come in handy if I’m ever stuck at a gas station needing a snack 😉

I also had some of these evil things, thank goodness they are gone now.

It’s this kind of stuff that running makes me crave. But I don’t keep them in the house so I should be okay from now on. Tortilla chips aren’t too bad but I have trouble keeping it to one serving if you know what I mean.

I had a Pampered Chef party to go to after work and so I packed a peanut butter and jelly sandwich that I ate on the road.

Most of the Pampered Chef recipes for the cooking shows include meat, mostly to showcase their baker that can go in the microwave, so I knew I had to be prepared.

They ended up making a pork tenderloin salad but the host graciously suggested they keep the meat separate. What a sweetheart! I didn’t even ask 😉

The salad contained some sort of salad mix, red onions (which she sliced with a gadget I so need to get), thawed frozen corn, and a dressing she made using ranch dressing and some seasonings from the Pampered Chef catalog. I know ranch dressing is not vegan, but I used a little bit anyway. I’m still working on getting this whole lifestyle down, so please excuse me for now.

I also had a nice plate of veggies and a few chips. Thank goodness they were some hungry kiddos running around so I couldn’t go back for more chips!

What’s funny is there was this awesome looking cake and I had zero interest in it! Usually desserts get me big time but not last night. Hmm…I’ve noticed I’m craving the salty stuff. Why is that?

When I got home, you guessed it, I was hungry…or so I thought?

I thought I was done after this but my stomach started growling around 10:30, which is way past my “cut off” eating time, so I had another snack.

Let’s just say I learned a lot today. I didn’t do anything wrong and I’m not disappointed or anything with myself. Nope. Not one bit.

I just want to change some things and get out of some ruts. I think I am officially “over” the chocolate chips and PB snack. For real. Hello burn out! And I really don’t like the bread that I bought. I mean, it tastes good but it’s too flimsy and I’d rather spend more and get better quality (like Ezekiel English muffins, yum).

Time to make some lists and get some recipes in the queue, this girl wants her whole foods back! And let’s try a few new things too 🙂

Day 3 – Coming out

Hello friends!

I am so tired and yet feeling so great. I had a great day out with my friends today at the St. James Court Art Show, an annual thing here in our city that I have been attending for the past few years. It’s such a beautiful area.

To get the day started I had some pumpkin oats with peanut butter 🙂 I just totally forgot to get a picture of it even though I finally replaced the batteries.

On the way, we stopped at Starbucks where a friend and I took the VIA test challenge and we CORRECTLY identified which one was which. However, I’m still a fan of the VIA and I used the $1 off coupon the guy gave me to buy some for home! I also had a tall soy vanilla latte to warm up on a crisp Fall day.

Also on the way there, we discussed my recent decision to go vegan for a while. For the most part, my friends are supportive, but I know it is not easy, so I’m not expecting them to bend over backwards. I am totally capable of peeling off cheese and whatever other exception I may have to make from time to time when we all eat together (like Wednesday night dinners).

I know it sounds cheesy but I’m sort of glad to be “out” to my friends now. My family is next I suppose 😉

But I just decided to eat a Nature Valley bar and a banana while I was there. We also got a free can of La Croix which was totally awesome! I had the orange flavor and now I hope I can find it at a store somewhere 😉

My friend Jim ate for us though…I believe he had a cheeseburger, two hot dogs, a big cookie and this bratwurst. We love Jim!

Then after the fair, we went to one of my favorite places in Louisville…Shiraz!

I got hummus, of course.

And I also ordered the falafel, minus the tzatziki sauce. I just used hummus instead 🙂

I ate just about everything as I’d worked up quite the appetite from walking around all day. It was such a good meal and a great day with friends.

After this, I went home for a while then went grocery shopping for the week. We are sort of under a tight budget this week, so it made things interesting. But I think we will manage, we usually do.

For “dinner” I wasn’t too hungry, so I just had a peanut butter and jelly sandwich…love this blueberry! It’s Smucker’s Simply Fruit, which I believe to be vegan as I examined the ingredients list 🙂

My internal clock must be out of whack because I am ready for bed now, ha ha. I’ve gotta try and stay up a little longer to see Ryan Reynolds on SNL but I’ll most likely record it too because I know I won’t make it very far 🙂

Just okay

Thanks everyone for all the get well wishes, I really felt them! I am doing a little better tonight since I’ve had the day to rest and catch up a bit. I also opened the windows in the apartment because we had a beautiful Fall day today, so I got all the “sick” air out of here, ha ha.

For lunch, I had a Boca vegan burger on an Ezekiel English muffin with Sabra Chipotle hummus and spinach plus a carrot and hummus on the side.

Yeah, it’s the same as what I had for dinner last night. But at least I opted for the muffin this time instead of toast. These are so good. I have a few left but I will definitely be buying more.

So dense, chewy and soft at the same time. I love them!

For a snack, I had a Nature Valley bar. I need to space these out better…I won’t pack one in my bag tomorrow.

As I was making dinner, I remembered something awesome I saw at the grocery store this weekend. Remember my big rant about Josh’s choice of margarine? Well, check this out:

That’s right! They FINALLY removed the hydrogenated oils so that they are no longer falsely claiming to be trans fat free! And now I can let my husband enjoy his margarine in peace. I won’t be eating it though after October 1st because it contains buttermilk. I’m so happy for Josh’s arteries.

For dinner, I made myself baked tofu, Brussels sprouts (Vitamin C!) and a piece of wheat toast. Unfortunately this brand of whole wheat bread I buy for Josh had honey in it. I will have to decide if I’ll eat it anymore after October 1.

For dessert, I had some Carrot Cake non-dairy ice cream. I also had some last night after blogging. It wasn’t as good as I remember it being, so I don’t think I’ll buy it again. But the cold did feel good on my throat.

I think I might just be “over” ice cream type things? What? Who am I? I am sick though, we’ll see. Ha.

I’m probably going to grab another snack at some point and then go upstairs and watch “Dancing with the Stars”! I saw a pic of Chuck Liddell on Twitter earlier and he is looking trim. I guess that dancing workout will do it for you.

That is how long I made it in between colds. I slept really well on Friday night and then Saturday morning I woke up feeling amazing! Rest is the best.

But then I tried too hard. I did a 3 mile walk, went to the grocery store, cleaned and then this cold reared it’s extremely ugly head. But let’s take a step back.

Saturday morning, I had some 5 grain cereal with peanut butter and banana.

I also stopped on the way and got some coffee at a gas station with some International Delight creamer, which I learned contains caseinate so it is not vegan. Sad 😦

After the walk, which was great, I snacked on a Nature Valley bar. I’m really getting hooked on these. Is that bad?

For lunch, I had the last serving of the falafel I made along with a big carrot and creamy Italian dressing to dip it in. And ketchup 🙂

I snacked on some nuts (about 1 tbsp left in the jar) and half a PB sandwich in the afternoon. I tried to take a nap but when you can’t breathe through your nose it makes sleeping interesting, at least for me.

Luckily, I had an easy-going girl’s night on the agenda! Getting out of the house for a while actually did me some good I think.

We had dinner at Penn Station where I got an artichoke wrap with no cheese or mayo and added mushrooms. And fries sounded so much better than chips!

After dinner, we went to a book store and then stopped at Starbucks where I got a tall soy chai tea latte. It was so good! This may be my favorite now. I’m still bummed that the pumpkin spice syrup contains milk.

At Court’s house, we watched some TV including the season premiere of Saturday Night Live. I wasn’t too impressed but at least U2 was the musical guest. Next week is RYAN REYNOLDS! I need to write that boy a letter to thank him for all my blog stats 😉

I drank lots more tea and had some chocolate too. The 60% Ghirardelli has milk fat, boo!

This morning I woke up feeling just okay but definitely still sick. I only had one thing on my mind when I woke up…PUMPKIN.

My stores have been out of this stuff forever, but I managed to find this HUGE can lurking on the shelves over the weekend. How can pumpkin be out of season? I thought they kept it year round. I’m sure I will use this though, so no harm.

I made something I hadn’t had in forever…pumpkin oats!

This bowl contained 1/3 cup quick cooking oats, 1/3 cup water and 1/3 cup pumpkin. Topped with chocolate chips, peanut butter and pumpkin pie spice. Oh how I’ve missed you. And it’s totally vegan hooray!

Coffee with Almond Breeze was also in order.

It wasn’t my best use of judgment, but I snagged two pumpkin muffin “bites” at church because I got hungry. This cold has increased my appetite, it’s crazy. But it was just a snack so I left it at that (just not sure about the contents).

For lunch, Mom so kindly offered to get me something, so I chose Panera because I was so in the mood for some soup!

I got the black bean which I ate with the French baguette. That filled me up for a while but an hour or so later I got hungry again so I went back for lunch part 2, half a Mediterranean Veggie sandwich.

I totally forgot to ask for no feta! But I ate it anyway, still got a few days until October 1 and I’m learning from each experience 😉

I took a 2 hour nap (hooray) and then snacked on another selection from Nature Valley.

I still think this is my fave flavor. Good thing, I bought a whole box of them 😉

My diet has been rather carb-heavy but I’m chalking that up to sickness and what my body is craving, perhaps for more energy to fight off this cold. So I’m just going with it for now and when I start feeling better, things will even back out.

For dinner, I made a Boca vegan burger with spinach and hummus on whole wheat toast with carrots and more hummus.

The hummus was a new selection for me from Sabra which I found at Kroger this weekend on sale for $3!

I couldn’t really tell how hot it was but it seemed to make my nose run a bit so it must have some kick. What I could taste of it was very good and a nice change from my usual plain hummus.

Time to drink some more fluids and hit the hay early. I’m doing what works for me which is NOT taking cold medicine or any yucky stuff that just makes me feel worse.

I rely on rest, fluids, healthy food, and a vitamin C supplement (500 mg per day) plus lots of hot tea and soup to nurse me back to health.

Hopefully it will be even longer than 13 months before I get this again 🙂

Happy Friday everyone!

I am so excited about going vegan next month. I have received a ton of support, not just here on the blog, but on Twitter also! You guys are so awesome, you have no idea 🙂

I also learned today about this little thing called Vegan MoFo III that I learned about from Happy Herbivore and Andrea at Care to Eat.

It stands for The Vegan Month of Food. Basically, for an entire month (October), bloggers from all over the country will be doing a vegan challenge and writing about it! I’m excited to be participating and also to have so many vegan blogs to refer to.

Now onto what I ate today…

For breakfast, I had a tasty green monster. This has to help fight off a cold right?

So tasty. I’m so glad they are back in my life. I’m not sure why they went missing in the first place? 😉

On the way to work, Mom offered to buy me a coffee, so I got a soy latte. Aren’t moms the best? I forgot to take a picture though!

I snacked on half a PB sandwich mid morning too. I don’t know what it is but when I get sick with cold like symptoms, my appetite goes up not down. But I’m going with it.

Lunch was another Kashi meal I hadn’t ever tried. They actually have quite a few vegan options it’s just a matter of finding them in the store. Luckily, I stumbled upon this one last time.

It was way better than I expected. I think the white beans were what did it for me. Perhaps if I ever make myself pasta at home again (it’s been a while) I could add them.

I liked how it was lots of veggies and just a little sauce. Sometimes too much sauce can give me heartburn! I would definitely get this one again.

I got hungry a few hours later but had no interest in the snack I brought. I had been drinking hot tea all day (alternating with water) so I was looking for some crunch in my life.

This was good but I think I liked the apple one better. This totally hit the spot though.

Right as I was getting ready to leave work, I actually got hungry again! So I had the yogurt I had snubbed earlier.

I’m so glad I took a rest day. I am feeling a lot better than I did this morning so I’m hoping an early bed time will help even more.

For dinner, we went to Taco Bell. As I mentioned in my last post, Josh was surprised because I never want to go there. I ordered two of the vegan options off the menu that I’d read about earlier.

Fresco Bean Burrito (beans, pico de gallo-I think, wrapped in a tortilla) and cinnamon twists. This meal was pretty decent especially for fast food.

Josh ate some tacos and burritos and he was happy 🙂

I had one of my favorite snacks tonight too!

We are now watching “Saturday Night Live : The Best of Will Ferrel” which I  had forgotten how funny that was. Once it’s over, I’m going to bed.

I’ve got an early wake up call to do a walk for the American Heart Association tomorrow morning. Unfortunately, I think we’re going to get rained on but I’m still going to do my best to get down there.

Why I love whole grains

Happy Tuesday!

Before I wrote that, I almost thought it might be Monday again, huh. Wonder what I was thinking?!

Anyway, I started today off a bit differently with something other than hot cereal. Josh had some of this bread left over so I thought I’d help him use some of it up before it went bad.

I bought this for him because it was majorly on sale, usually I’m very strict about having 100% whole wheat or whole grain bread in our house.

I made some toast and topped it with almond butter and a small banana that I sliced up.

First off, the taste of the bread sort of clashed with the almond butter. But I finished it and felt pretty satisfied…until 9:00 when my hunger came striking out of nowhere.

This is why I prefer (and love) whole grains. Fiber keeps you fuller longer! But it was worth a shot…I will not make a repeat. Thankfully that bread is gone now. I wonder if it affects Josh the same way?

For the snack I so desperately needed, I had some cucumbers and Sabra original hummus, so good!

Before lunch, I headed to the gym to work out with Farrah. We ran for 1 mile outside and then did a circuit of upper body, back and abs exercises. Because we’ve been keeping the workouts shorter, I’ve been using heavier weights and I’m really noticing a difference. 🙂

For lunch, I devoured my leftover burrito from Santa Fe yesterday and a small romaine salad with creamy Italian (and vegan) dressing.

This kept me full for most of the afternoon until I was waiting for my ride after work. I didn’t bring a snack with me but knew I needed one, so I picked this up on the way.

The ingredients list was decent, it contains 11 grams of sugar but that is still less than most bars other than Kashi. Plus, I read about it on this list of snack foods that are vegan.

It was really good! And it was a really good thing I ate it because I got home late and didn’t have time for dinner before I had to leave to meet my friend Candy for our walk.

We did about 3 miles which included lots of hills, which was awesome. I still wasn’t starving when I got home (that bar rocked) but I went ahead and ate some dinner, keeping it light.

I made a Boca vegan burger topped with avocado and tomato, plus organic ketchup for dipping, and some Asian style veggies on the side.

I sat down, relaxed and watched some TV before I decided I was still a bit hungry (it caught up with me). So I made this totally awesome snack of a pita pocket topped with almond butter and a few semisweet (and vegan) chocolate chips.

When I was done, I got to work on my main dish recipe that I’m serving at girl’s night tomorrow! I will tell you all about it then 🙂

On a different note, I am SO NOT watching The Biggest Loser this season. It’s been tempting since I was home while it was on and my DVR is still set up to record it. But after the last two seasons I don’t think it is good for my health for me to continue. I get so wrapped up in the contestants, which I think have been particularly evil the past two seasons, and I get mad at them!

I also get tired of all the fakeness and trying to pretend like they aren’t basically doing a commercial in the middle of the show even though we see plenty of them over the course of two hours. I also really like Jillian Michaels and Bob Harper but feel that they have become “characters” rather than the real (and awesome) people they are.

I don’t know. Part of me wants to know what’s going on. Perhaps if I could find a disconnect…be able to watch the show without caring? Hmm…

Family gathering

Before I left the house this morning to go to church, I managed to work in a 20-minute Heart Opening Flow yoga routine from Yoga Download. Now that I downloaded them to my laptop, as opposed to the old computer in the stuffy office, its been much easier and fun to do them. It was great, but for some reason my shoulders are sore now! 😉

At church, I snacked on a Nature Valley bar which managed to not get pictured. It was a nice hold-over snack before lunch, since I had eaten breakfast before 7:00!

We went to Red Robin for lunch to celebrate my aunt’s birthday and immediately my family ordered the onion tower!

I chose not to partake…they were quite tempting looking but I know how my stomach reacts to fried foods like this and that’s enough not to even take one bite.

I ordered the salmon burger with no sauce and it was very good. It came on a whole grain bun with lettuce, tomato and red onion. Also, my other aunt who doesn’t like tomatoes gave me hers 😉

I ate just a few of the fries because the sandwich filled me up nicely!

We went back to my aunt’s house for dessert, but I chose not to eat any because I was full from lunch and nothing really appealed to me (cake, cupcakes, pie). I was actually craving fruit!

When we got home, I snacked on a few of these before heading to Courtney’s for a workout.

We walked for almost 40 minutes around her neighborhood…it was great! My legs are really feeling it between that and the yoga. It was nice to have a lightly active weekend instead of being completely lazy, haha. Back to running tomorrow. My last 5K for a while is on Saturday!!

For dinner, I heated up some leftover purple cauliflower soup that was in the freezer and topped it with some sprinkled cheese. I also had a PB&J sandwich…I was going to have grilled cheese but there was only one piece of cheese left and that just wasn’t going to work, haha.

I’m having this for dessert while I play some more Guitar Hero:Metallica with Josh. Then its tea and bed time, gotta rest before the work week begins again.

Good night all, hope you had a great weekend!

What a relief

After my easy workout yesterday and a great night’s sleep, I have NO PAIN today. Whatever it was that was bothering my leg and/or hips is completely gone. I told the husband last night when we went to bed that if I woke up in a lot of pain, it was time to get a new matress, haha. Guess that scared it off?

The Fage + Pumpkin + Almonds combo ended up being a really good snack yesterday afternoon, which I knew it would be…

Unfortunately, I got hungry for this at 1:00, so I was aching for another snack come 4. And also having a strange craving for some artificially sweetened cherry bubbles…

The bar was good, hadn’t had one of these in a while! But the diet wild cherry pepsi was BLECH! I used to LOVE these and while it tasted okay, it didn’t sit well with me. I’m pretty sure I got whatever that was out of my system. I will only compromise once in a blue moon for some Coke Zero. Everything else is crap 😉

I stopped at Whole Foods on the way home to pick up some much needed yogurt stash and some ingredients for the salad I made for girl’s night. My husband texted me while I was there asking for ketchup and cheese slices. I don’t think he realized I was at Whole Foods because he made a face when he saw “organic” cheese and 365 tomato ketchup in the fridge, haha. But once he tried them, he had no complaints. Plus, the price was pretty much the same as it would’ve been at Kroger. I’m thinking of switching over more purchases to WF. Hmm…

Whole Foods has 3 lb bag of apples on sale for $1.99! And the Annie’s dressing was $2.50 🙂

While putting away groceries and making my salad, I got hungry AGAIN, so I had a spoonful of PB to hold me over.

And now the beautiful, colorful salad!

This huge bowl contained:

  • 3-4 cups of spinach
  • 2/3 of large cucumber (from above picture)
  • Handful of mini carrots, chopped
  • 1 Braeburn apple, cored and chopped
  • 2 tbsp raisins
  • 2 tbsp Annie’s light honey mustard vinaigrette dressing

I had some spinach left over which is good because I want to make another salad tomorrow night (we’re having pizza takeout from Papa Murphy’s) and perhaps a green monster is in the works too? 😉

Now for the rest of dinner…Beth made a really tasty tuna-pasta salad, Court provided carrots and “spicy” Sabra hummus, and then my salad.

For dessert, Margie, or Marge-Dog as we love to call her, brought some brownies she made, YUM! I hadn’t had a brownie in a while and this really hit the spot 🙂

When I got to the point where I felt like I might be overdoing it, I chugged some water and popped in a piece of minty gum. Works every time! Almost…hehe.
