Race day again!

Good (very early) morning friends 🙂

I am up and at ‘em getting ready for my 10 mile race this morning. It is already 62* at 6 a.m., it is going to be quite a warm race day!

I fueled up with some oatmeal since that seemed to work pretty well for me before the last race I ran.

001This bowl contained: 1/2 cup oats (cooked with 1/2 cup almond milk + 1/2 cup water), 1 tbsp milled flaxseed, 1 tsp agave nectar, one sliced banana and a tbsp of PB 🙂

I also had some coffee to wake me up at this ungodly hour (for a weekend at least)!

Starbucks run

Even though it was 60 degrees already when I woke up this morning, I really wanted oatmeal for breakfast 🙂

This bowl contained:

  • 1/2 cup oats (cooked with 1/2 cup Silk Almond milk and 1/2 cup water)
  • 1/2 of a HUGE red delicious apple (some pieces were cooked, some added after)
  • 1 tbsp milled flaxseed
  • 1 tsp Agave Nectar (made such a difference in the taste!)
  • A few sprinkles of cinnamon
  • 1 tbsp Natural peanut butter

This was one of the best bowls of oatmeal I’ve had in a while. Maybe because I haven’t had it as much lately? Absence makes the heart grow fonder…

After breakfast, I started off my day with a dental appointment. It wasn’t that bad but I definitely felt like I “deserved” a treat afterwards 🙂

The only time I ever order a VENTI from Starbucks is with their iced coffee. I added soy milk to mine, of course. But that’s it.

I also picked up a snack while I was there because I was pretty hungry even after that nice bowl of oatmeal (it had been over 4 hours though).


I love the new snacks at Starbucks! These pomegranate-vanilla cashews were a little pricey ($2.50) but honestly, so worth it. At least today it felt that way 😉

These were sweet, crunchy and just what I needed to get me through my mid-morning hunger. I was just going to eat half the bag (one serving) but I waited a few minutes and I was still hungry so I went ahead and finished it (the whole bag = 300 calories). All better now!

Major carb-age

This morning, I started my day off with my Monday tradition…a delicious green smoothie!

This smoothie contained: 1 cup Light vanilla soymilk, 1 frozen banana, 1 tablespoon almond butter and a whole lotta organic baby spinach. YUM!

Mari has decided to start a Green Monster Challenge where she will have one green smoothie a day (as one of her meals) for a month. I’m going to do my best to participate but it’s going to require some creativity on my part 🙂

I had coffee with coconut milk creamer and almonds for a snack but forgot to photograph them, sorry! I am out of practice.

Since I had a smoothie for breakfast, I decided it only made sense to have oatmeal for lunch! Here was the star ingredient:

I am really enjoying these Peeled Snacks dried fruit. The company sent me free samples to try and so far, I have loved them all!

The dried cherries were soft, chewy and not as sweet as dried cherries I have had in the past. That is my favorite thing about these snacks, which you can find at Starbucks.

I loved having oatmeal for lunch…this might become a habit 🙂

Later in the afternoon, I had another cup of coffee (oops) and some yogurt.

After work, I went on a 5-mile run and I was quite hungry when I got home. I had my usual Monday night pasta dinner!

023I had 1 1/4 cups of Barilla whole grain spaghetti, topped with Meijer organic pasta sauce (pictured below), steamed broccoli, a chopped up vegan burger and nutritional yeast. Plus a pita pocket with Smart Balance Light on the side.     022

This sauce was pretty good and I definitely liked the price and ingredients list. But the 365 brand I had a few weeks ago (roasted red pepper) has so much more flavor.

This wasn’t too shabby though!

For my after dinner snack, I had to try out a new product I picked up at Meijer yesterday:

These are basically like sandwich thins, only they taste like Thomas bagels and have a hole in the middle 🙂

I topped mine with peanut butter and chocolate chips! I splurged and got the Ghirardelli semi-sweet chips this time, yum.

But apparently, I got a case of the “runner’s munchies” because I decided to bust out the Oatmeal crack Squares for another snack.

I had two little cups of cereal with soymilk before calling it a night (as far as eating goes) just after 9:00.

I’m going to have to be careful with these this week. I can’t help it though…they were on sale for $1.67 at Meijer and I had a $1 off coupon. I got a $4 box of cereal for 67 cents!!

Dried fruit in oatmeal?

This morning, I decided to try something new in my oatmeal…dried apples!

Prior to this, the only dried fruit I have used in my oatmeal was raisins. Which I really like to use, especially when paired with chocolate chips 🙂

But I typically don’t buy dried fruit because even though it tastes good, it’s usually higher in sugar and more calorie dense than eating the real fruit itself.

But it can also be convenient when you are traveling (I pretty much lived off of Craisins when I went to Nicaragua) or if you just don’t want to break open a whole piece of fruit for a small serving.

I made my oatmeal with plain soymilk and water, plus a tablespoon of flax, cinnamon and of course topped with peanut butter. I took out half a serving of dried apples and chopped them into smaller pieces before adding them in.

The dried apple was just okay. I definitely prefer the taste of real apples in my oats as opposed to dried.

But maybe I should’ve cooked them in the oatmeal instead of tossing them in afterwards?

Old favorites

This morning, I felt like having something I hadn’t eaten in a while. This used to be one of my favorite oatmeal combos before I discovered including nut butter.

Raisins and chocolate chips! I love when it all melts and you stir it up together. It’s like a raisin chocolate chip oatmeal cookie 🙂

I snacked on some nuts mid morning and drank two cups of black coffee because for some reason I was really cold today!

For lunch, I had leftover tofu stir fry from the other night.

I plan on making it again sometime this week, I’ve got a new bag of veggies to try out, plus I want to take Mari’s suggestion of including peanut butter.

After lunch, I headed to the gym for a short run and weight training session. It was great!

I refueled with some soy yogurt and granola when I got back. I practically inhaled it.

I’m all out of granola now so I think I’ll back off the yogurt for a while since that was really the only reason I got it. It’s just too high in sugar for my liking.

I had more leftovers for dinner: tonight it was red beans & rice leftover from Sunday.

I also had a pita with Smart Balance after I realized that alone wouldn’t fill me up.

I’m having the girls over tomorrow night so I dove right into housework to get this place in decent shape for my guests. That worked up a little appetite and I had just the thing for it.

The new season started tonight so I know a lot of people are freaking out right now, ha ha. I’m not a fan myself but my mom says I can’t call her while the show is on!

Apparently, Josh and I are getting more alike the longer we are married, both laying out our breakfast stuff the night before.

Can you guess who’s is who’s? Ha ha.

I hadn’t had pumpkin oats in quite some time so this was a treat!

This bowl contained: 1/2 cup oats, 3/4 cup water, 1/2 cup pumpkin, pumpkin pie spice, 1 tbsp White Chocolate Wonderful and 1 tsp chocolate chips.

December 2008

I was inspired by Caitlin, Jenna and a few other bloggers who got in the way back machine and found out what they were up to this time last year. Sounded like fun to me, so here it goes!

Oh Lord…I declared my undying love for John Rzeznik on his birthday. Yeah, I’ve still got it, even if you don’t see it on the blog much. Ha ha 😉

I was building my running back up after a long hiatus, yay!

I started having doubts about the Biggest Loser. One year later, I don’t watch it at all 😦

Went to an awesome Christmas party with my friends that I will be attending again THIS FRIDAY 🙂

Probably my favorite post of this blog, EVER…posting on my progress from January 2007-December 2008

I made a pre-Christmas workout plan and stuck to it for the most part. That same post also revealed that gas was $1.59 at the time!!

I tried my first Spin class at the Y and was instantly hooked (praying for a temporary membership over the holidays again!)

I forgot about Alley Cat Cafe! I need to go back there. Wonder if they have vegan options? My meal was apparently veggie.

I had my one and only visit to Karma Cafe, where I had french fries for the first time in years! The restaurant has since closed for business. Sad 😦

I finally got to try that dang Pumpkin Spice oatmeal! Do they have it again this year?

Forrest Griffin lost the light heavyweight UFC title (boo! But he just won his last fight so I’m hopeful)

To get my hopes up for this year, the high on December 21st was 26, BUT it was 57 degrees on December 30th! Come on heat wave!!

In summary…

  • I was still using my cell phone camera for pics, eek!
  • It was neat to see how a lot of my meals were meatless (not all of course, but quite a few).
  • I was still using Equal in my coffee, ewwww! Plus countless other fake “sugar free” foods.
  • I noticed in a lot of posts, that I was feeling good about myself and my body.
  • However, I was still posting a lot of calories and my weight. I don’t care to do that anymore!
  • I was taking Suzie on a lot of walks…need to get back into that again!
  • I really need to find Mighty Maple PB again, yum.
  • Ditto for that Cranberry Fig Hummus!
  • I was completely, totally, utterly, addicted to sugar. Wow.

That was a fun trip down memory lane. A lot changes in a year! It makes me wonder what December 2010 will be like…

Two months

Happy December everyone! I can’t believe it’s here already. Thanks everyone for your sweet comments, I had a much better day today 🙂

I have been vegan for 2 whole months now. It sure seems like it’s been a lot longer than that and slight mishaps aside, I think it is going really well.

For breakfast this morning, I had pumpkin oat bran with raisins, chocolate chips and peanut butter.

This breakfast almost held me until lunch but around 10:30, I got a little hungry so I snacked on some almonds.

Lunch was totally awesome today! I didn’t blog about it before but I made this awesome tofu on Sunday night:

And then today, I had the leftovers, plus some broccoli topped with salsa!

I had just the broccoli but wanted to put something on it badly. This was a great choice, I highly recommend it. I think next time, I’ll try hummus. But sometimes I do like broccoli plain, just not today.

Lately, I have been buying the Kroger brand tofu and I have to say, it is really good. I might actually prefer it. The texture is great and it bakes really well (425* for 20 minutes).

Later in the afternoon, I had half of this Clif bar:

Then I hit the gym for some weights!

I warmed up with 15 minutes of running on the treadmill (about 1.3 miles) and then got to pumpkin pumping iron 🙂

  • Chest presses
  • Military shoulder presses
  • Bicep curls
  • Tricep extensions
  • Lateral raises
  • Front raises
  • Squats
  • Lunges
  • Calf raises
  • Core: Back extensions, crunches, side crunches, reverse crunches, leg lifts, etc.

After the workout, I ate the other half of my Clif bar. I’ve noticed it makes a big difference to eat before and after a workout to keep me from being ravenous when I get home from work.

On the way home, I started thinking about what I wanted to have for dinner. Brown rice and vegetables just sounded so boring, plus I’d already had a few vegetables today.

Hmm…what to have for dinner?

PB&J oatmeal, of course!

Sometimes you just have to go with what you are craving. This was delicious and really hit the spot, especially on a cold night.

After my dinner settled, I went for a walk with my friend Candy again. She is due to have a baby any day now so we’re trying to move things along, ha ha. But it was a good walk and I was hungry again when I got home!

Times two! Tortilla chips are a food I love a little too much but I finished off the bag and won’t replace it any time soon 😉

Hope Tuesday and the first day of a new month has treated you well. I love the beginning of a new month, it makes me so motivated to try something new or start implementing a new healthy habit.

Day 22: The dog did it!

I woke up at 6:30 again this morning, wondering what happened to the alarm I set for 5:45 and even tested out last night to make sure it was working?!

There can only be one explanation.

Who, me?

So I had this theory that the dog was sneaking over to the night stand and turning the alarm off. Because she can reach that far (without falling off the bed) and knows which button to push, right? Ha ha.

The truth is I must be so out of it that I am shutting off the alarm and not knowing it. The real test will be tonight when I sit the alarm on my dresser across the room, requiring me to get up to turn it off. It is very unlike me to oversleep this much. Normally, I am up before my alarm ever goes off!

I am most productive in the morning, so since I’ve had 45 minutes cut out of my routine most days this week, I haven’t had time for dishes, laundry, etc. so I’m going to have to work hard tonight to catch up.

I also had to bring another breakfast to work, but it was still pretty awesome.
