Mini eve

Good morning and Happy Friday!

Whew, I am glad its almost officially the weekend. With school and everything I’ve had a lot on my mind, so it will be good to unwind and relax and enjoy the weather. Wait, what? I have a MINI MARATHON TOMORROW?!?!

Haha, yes, tomorrow is the 13.1 miles that I have decided to walk. But I’m going to be with my aunt and a friend, plus the weather is going to be phenomenal. For a race that starts at 7:30 a.m., we are getting 66 degree weather! Amazing.

But lets talk about today…

for breakfast this morning, I made what I originally wanted to have yesterday…scrambled eggs with a slice of cheese and ketchup on a Flat Out wrap!

I’m going out with my family at lunchtime to pick up our packets for the race tomorrow. Unfortunately, my mom and one aunt cannot participate due to injuries, but they will be at the finish line waiting for us! It’s going to be a great day, I’m already way less nervous than I was last year. Or two weeks ago at the 10-miler. 🙂

I think we are eating at Arby’s and if so, I already know I’m getting one of their new salads because they are really good. I will probably choose the one with chicken since I had turkey for dinner last night, although that turkey club salad is pretty darn good. We’ll see what happens when I get there!

Snacks today are mini-Larabar and a plain Oikos with blackberries, if needed. I’m going to try to go on some short walks on my breaks today since lunchtime is pretty much full.

What a relief

After my easy workout yesterday and a great night’s sleep, I have NO PAIN today. Whatever it was that was bothering my leg and/or hips is completely gone. I told the husband last night when we went to bed that if I woke up in a lot of pain, it was time to get a new matress, haha. Guess that scared it off?

The Fage + Pumpkin + Almonds combo ended up being a really good snack yesterday afternoon, which I knew it would be…

Unfortunately, I got hungry for this at 1:00, so I was aching for another snack come 4. And also having a strange craving for some artificially sweetened cherry bubbles…

The bar was good, hadn’t had one of these in a while! But the diet wild cherry pepsi was BLECH! I used to LOVE these and while it tasted okay, it didn’t sit well with me. I’m pretty sure I got whatever that was out of my system. I will only compromise once in a blue moon for some Coke Zero. Everything else is crap 😉

I stopped at Whole Foods on the way home to pick up some much needed yogurt stash and some ingredients for the salad I made for girl’s night. My husband texted me while I was there asking for ketchup and cheese slices. I don’t think he realized I was at Whole Foods because he made a face when he saw “organic” cheese and 365 tomato ketchup in the fridge, haha. But once he tried them, he had no complaints. Plus, the price was pretty much the same as it would’ve been at Kroger. I’m thinking of switching over more purchases to WF. Hmm…

Whole Foods has 3 lb bag of apples on sale for $1.99! And the Annie’s dressing was $2.50 🙂

While putting away groceries and making my salad, I got hungry AGAIN, so I had a spoonful of PB to hold me over.

This huge bowl contained:

  • 3-4 cups of spinach
  • 2/3 of large cucumber (from above picture)
  • Handful of mini carrots, chopped
  • 1 Braeburn apple, cored and chopped
  • 2 tbsp raisins
  • 2 tbsp Annie’s light honey mustard vinaigrette dressing

I had some spinach left over which is good because I want to make another salad tomorrow night (we’re having pizza takeout from Papa Murphy’s) and perhaps a green monster is in the works too? 😉

Now for the rest of dinner…Beth made a really tasty tuna-pasta salad, Court provided carrots and “spicy” Sabra hummus, and then my salad.

For dessert, Margie, or Marge-Dog as we love to call her, brought some brownies she made, YUM! I hadn’t had a brownie in a while and this really hit the spot 🙂

When I got to the point where I felt like I might be overdoing it, I chugged some water and popped in a piece of minty gum. Works every time! Almost…hehe.

Second to last long Monday

Whoa, I’m actually on today, today. Haha. It feels good to be getting caught up. So here is how today went:

I tried to plan out my meals in advance because I noticed my calories were steadily creeping up, as was the scale, just a little bit. Unfortunately I think this backfired a bit because I’m sitting here after dinner, thinking I need a snack. Maybe.

Breakfast was Kashi heart to heart cereal with a sliced banana and 1 cup of coconut milk. The coconut milk was not much different than soy really, especially since it was unsweetened. But I liked it and actually drank the rest when I had eaten all the cereal.

Lunch and Snacks

Lunch was a packet of Tuna with light mayo stuffed into a pita pocket; carrots & hummus and an apple. This lunch was very satisfying and held me through a post-lunch workout.

I spent 30 minutes on the treadmill, running one mile at 5.5 mph and then walking at various inclines the rest of the time. I didn’t want to overdo it. Afterward, I stretched my legs out a lot, I’ve still got some mild soreness in my hips and glutes (which did not get the Golden Tiger cream)!

Snacks were trail mix (morning between breakfast and lunch), Oikos yogurt (eaten mid-afternoon) and a Larabar (for during class but got eaten before class). Along with another mini-Larabar not pictured! Like I said, backfired.

My mom got me this mix in my Easter basket and it was quite tasty. I was also pleased there were no nasty ingredients that I seem to keep finding in mixes including chocolate. I definitely recommend this one!

Archer Farms Chocolate Cranberry Crunch. I think it contained chocolate, cranberries, raisins, dried pineapple, almonds, walnuts, soynuts…I think that’s it.

After class, I was even more hungry, so when I finally got home I was more than ready for dinner. I decided to use up the rest of my tofu and make a buffalo tofu stir fry!

1 serving of extra firm tofu marinated in 2 tbsp buffalo wing sauce and 2 cups of peppers & onions mix. All on top of some brown rice!

This was really good but since I had let myself get so hungry, I wasn’t full when I was done, so I had the rest of the tortilla chips out of our pantry, luckily it wasn’t much.

Then for dessert, I had 2 pieces of Dove dark chocolate. I’m all about the dark chocolate antioxidants these days 😉

Since I can’t decide whether I’m hungry or something else, I think I will try some sugar cookie tea and see how it goes.

Hotties

Yesterday, I did exactly what I said I would! I went over to the gym and rode the bike for 30 minutes on levels 5-7, my speed averaged in the 80’s (rpms) throughout most of it. It was a nice pace and I read my article, which was more scientific than I’d hoped it would be. I think when it comes to positive/negative thoughts and mental health, I like the more philosophical side of things. But it was an interesting read, nonetheless. The workout, while quick, worked up a sweat and I certainly felt tired in the legs the rest of the night. So I’m glad I did it!

I re-tried the Oikos honey yogurt yesterday and I have to say…this one is not one of my favorites. I think I have come to prefer the taste of the plain and vanilla and I think the honey just doesn’t taste like it would if I put honey in it myself. So I will just stick to those from now on, with the occasional blueberry of course 😉 I topped yesterday’s selection with some See Sarah Eat granola. Oh, and I guess you can see, yes I did need my afternoon snack, haha.

We had quite an interesting smorgasbord at girl’s night last night. Sometimes we end up with an abundance of vegetables so everyone kind of went anti-veggie for a night, haha. Everything was very good though: Margie made tofu and this really sweet ‘n spicy grapefruit-onion-tomato-jalapeno salsa with cilantro and brought some Chik’n nuggets, so I tried two. Courtney made sweet potato fries which I totally prefer over any other fry any day. And Beth brought chips & queso which also hit the spot. So, it may look weird, but everything tasted great 🙂

The Chik’n nuggets were actually pretty good but the calorie count per serving is kind of high (190 for 4 nuggets) so I only had two. I went back for more chips, obviously. We all know me and tortilla chips 😉

I was in charge of dessert and I purchased a new pudding that I thought might help me reintroduce it into my diet while fitting my Crap Free criteria!

Kozy Shack Simply Well pudding – Dark Chocolate

I was not a fan of the no sugar added rice pudding (although I’m sure I could’ve added honey or something) but this one was AWESOME! I also see that they have a ton more flavors (including green tea chai!) so I’m hoping I can find more of these around town. I picked this package up from Walmart for the same price as a 6-pack of Jello pudding ($2.25), however, I’d much rather spend a little more (money-wise and calorie-wise) on a product with much better ingredients that left me completely satisfied!

I had purchased some strawberries at Whole Foods over the weekend, so we had those as a topper…I also had some spicy cinnamon tea which you see in the background. Courtney has the best tea stash, I’m constantly raiding it, haha.

Okay, so…I finally saw “Twilight”. I think even though I’m only a few years older than the bloggers I read who LOVE this movie, I still didn’t get it. I haven’t read the book (I do plan to though, over the summer when classes let out), and I did think the movie was good, but as far as finding anyone hot, well, nope. Its okay, I’m sure I find some dudes hot that would make some of you girls gag, haha.

Busy Wednesday

I have a full schedule today but most of it is pretty exciting so I’m not too worried. I have a meeting this morning at work and then at lunchtime, I’m attending a stress management class as I mentioned in my last post. Then I get to register for Fall classes and have a chat on the phone with my health coach (which my employer requires for health insurance discounts).

I don’t know if I’ve mentioned this before but I’ve decided to pursue a Bachelor of Science degree in Public Health Education, which is why I am taking classes now. It was between that and Exercise Science but I just know as much as I love exercise, my passions lie more with people and healthy lifestyles in general, not specifically only exercise. I already have two Bachelor of Arts degrees in English and Art History, so why not have a third, right? It just shows you how when your life changes, so do your passions and interests. Going to school part-time does make it take longer, but when I eventually do get there, I know it will be worth it.

When I was standing in the kitchen this morning, the only thing that sounded good to me was a smoothie even though its 32 degrees outside! Luckily, its getting back up to 60 today and the rest of the week too. I decided to try out one of my new Spirutein packets I got at Whole Foods over the weekend:

I decided not to add any fruit to this because I wasn’t sure how a banana would match well, but now that I have had it, I think it would be great. I’m also having two servings of fruit that I brought with me to work and I’m taking strawberries for dessert at girl’s night. So I think I’m covered! The package of this mix says not to use a blender “for best results” but I can’t stand the chalky or not completely mixed up way of drinking these, so I threw it in the blender with 1 cup of skim milk and 2 handfuls of ice. Perfection! Its creamy like a milkshake, just how I like it 😉

I decided to pair it up with a scrambled egg (1) topped with a sprinkled of Kraft Natural mozzarella cheese (seriously the best I’ve had) and stuffed into a pita pocket. This breakfast was a little smaller than I’m used to (370 calories) but it was very satisfying nonetheless.

Lunch Preview

For lunch today, I have a Boca vegan burger with sprouts, spicy mustard and shredded mozz cheese on whole wheat bread; carrots w/ hummus; and an orange. For snacks, I have an apple and cheese stick; and an Oikos yogurt with honey and See Sarah Eat granola to mix in 🙂

Splitting breakfast

I’ve seen it on the blogosphere that a lot of you who workout in the morning sort of “split” breakfast into two parts, adequately fueling your workout and then refueling after. I decided to try a similar plan today and so far, it has worked out great.

This morning, I had two mini bagels (220 calories, less than 1 big one!) with fat free strawberry cream cheese (which I fell in love with in New York) and an orange = 320 calories.

This is a smaller breakfast than I am used to eating and as you can see, not a lot of protein. I saved that for after!

My workout was simple and short. I started off with strength training first because I did not want to neglect it any farther. I did each exercise below for 1 minute on my abs:

  • Crunches
  • Side crunches (1 min on each side)
  • Straight leg toe reach crunches
  • Bicycle crunches

Then I did a round of upper body weight machines: lateral pulldown, chest press, chest flye, bicep curl, tricep extension, and sitting row. My arms were jello by the end. I did 15 reps of each exercise.

Then I hopped on the treadmill for 18 minutes (all the time I had left) and warmed up for 1.5, ran for 15 (at 5.1-6.0 mph) and then cooled down for 1.5.

Time: 18:10

Distance: 1.54 miles

Calories: 154

It was a good workout and I’m definitely feeling refreshed and more focused this morning because of it…and my awesome 2nd breakfast / morning snack.

Oikos vanilla yogurt + Kashi Cocoa Beach granola = awesome workout recovery snack!

I’m really enjoying my “tour” of Oikos, thanks again to the company for the awesome coupons! I know its expensive, but when you prefer the texture, consistency and taste of Greek yogurt, its hard to go back to anything else. I plan on purchasing more Oikos after my little stash runs out.

I still have blueberry and honey left, so stay tuned! Though, I’ve already declared my undying love for blueberry…

Lunch Preview

For lunch today, I brought a Kashi meal that I purchased over the weekend with a coupon I got from the company (it was free)! I’m excited to try it as Sweet & Sour Chicken used to be one of my favorite chinese food meals, but I’ve abstained since its one of the least healthy for you thanks to loads of sodium and sugar. This entire meal has 320 calories, so I’ve also brought a banana and a whole wheat pita pocket (not pictured) to round out my meal and give it some more staying power.

Included in the picture are my morning snack and afternoon (cheese stick) snack. The banana and pita may move around depending on my fullness from the Kashi meal.

New focus

Good morning!

I woke up with an amazing sense of pride today…our hometown girls, the University of Louisville Lady Cards are going to the National Championship game! I will be sure to tune in tomorrow night. I love living in Kentucky sometimes, but only for stuff like that. There’s plenty that I dislike. Such as when I was out walking the dog at 6 a.m., I was in awe of the weather here in Kentucky. Yesterday it was 75, today it’s going to be 40 and drop to the 30’s before 5 p.m. We might even get snow! Ugh.

Breakfast this morning was an old standby, pumpkin-raisin+pb oats, only this time I used almonds instead of walnuts and it was White Chocolate PB. I have to say, this bowl didn’t do it for me. I’m full and definitely got some nutrients (this bowl also contained flax) but I’m usually more impressed with this. I think it might’ve been the skim milk, when I’ve made this with 1%, it’s been unbelieveable. I also think it’s time to try some new recipes! I will be checking blogs today to get some ideas, especially from Kath the oatmeal queen haha 😉

For lunch today, I packed a Boca veggie burger with 2% cheddar cheese and two pita pocket halves with some sprouts and habanero ketchup. On the side, I have a nice apple and some carrots and hummus!

Speaking of hummus, Diane from Sabra Dipping Company, sent me a coupon to try one of their containers of hummus for free! I chose the Greek olive hummus because it was a flavor I’d never had and I love me some Greek food. I’ll let you know how it is after lunch today, for those of you who haven’t tried it. I think I’ve seen this one on Jenna‘s blog before.

I’m planning an after lunch workout that will probably be a quick run and some weights + ab work. I will update on that later.

Afternoon snacks are Oikos plain (with oatmeal squares-in the yellow container) and a mini Larabar for during class tonight. I may or may not need the Larabar since I’ve got some high protein yogurt and I’m bulking it up with some fibrous cereal. We shall see!

Happy Monday!

Lazy blogger

Hey there!

Sorry about my lack of a post last night; I guess I just felt like taking the night off, but don’t worry…I didn’t go nuts on an entire jar of Nutella or anything. I was at my in-law’s house for the Wrestlemania pay per view (my husband and his dad are huge fans), and we had a nice dinner 🙂

But let me catch you up just a little bit first!

After breakfast, we headed to church where I had two cups of coffee (styrofoam cups mind you) and a mini Cinnamon Roll Larabar (oops no pic) to hold me over until lunch, which did quite well actually. I was able to come home, change, walk the dog and then casually make lunch instead of rushing to the kitchen like a mad woman like I usually am.

I decided on a tri-bean mix (black, kidney, pinto) with brown rice and hot sauce and a nice juicy orange.

After this, I made a trip to Kroger and Whole Foods, where I stocked up on some more goodies. Kristina from Stonyfield Farm graciously sent me some Oikos coupons in the mail a couple of weeks back and I finally made good use of them!

I got one of each flavor: plain, vanilla, blueberry and honey, plus a couple of Fage’s for good measure 😉 I loooove Greek yogurt. I need to make a trip to Meijer to pick up some Chobani, hopefully they will have more than just peach this time!

I also couldn’t pass this up because it was on sale for like $2…

After my shopping adventure, I stopped at Starbuck’s and got the Sarah & Erica special…a mocha light frappuccino 🙂

It was kinda messy!

Then I did some major housework: cleaning, laundry, dishes, etc. and took Suzie out for an hour long walk because she needs exercise too. After that, I felt hungry again, so I had a half serving of “See Sarah Eat” granola. I really love this stuff, I will definitely be re-ordering this mix in the future 😉

And that’s where the pictures end, unfortunately. But for dinner, we had this really tasty chicken noodle mushroom corn casserole and some steamed broccoli on the side, plus a nice green salad with tomato and cucumber with light italian dressing. Dessert was a small slice of carrot cake (one of my husband’s favorites) and during the show, I had 3-4 pretzel bites stolen from the husband.

Hope everyone had a blessed Sunday. The weather here was 75 and I walked the dog in a tank top and flip flops. Today, the high is going to be 40?!

Half done

Well, I got that list about half done yesterday! No packing stuff and no yoga. I did end up getting out for a walk at work and then walked the dog when I got home. She really enjoys the warmer weather as do I. Sadly, it’s left us. Right now, we’re hovering in the mid-40’s, which isn’t too bad but after that big tease yesterday it’s slightly disappointing.

For dinner, I made chicken breasts, and I had a salad (romaine, tomatoes, cucumber, turkey bacon bits, parm cheese, balsamic vin) on the side (note: salads are better as a side, for me), and a mini-bagel with Parkay spray butter (probably not the best, artificial). I had some dijon mustard on the side, which I’m totally using if I get a cold anytime soon, it was HOT. Love it. I ended up only eating half the chicken because it was rather large, so I have the other half for lunch another day.

These Oikos yogurts are sort of expensive ($1.99) but I swear, I am in love! This is the blueberry flavor and it rocked my socks. And held me through until dinner, which is always a good thing, especially considering it was just yogurt and nothing was added to it. Gotta love that greek yogurt protein!

I want to fly back to the store and buy 100 of these but they are a little steep; going to have to wait until next payday to splurge on yogurt at Whole Foods again. Don’t worry, I still have several in my fridge, just different brands. I ❤ yogurt, don’t you?

After dinner, I laid down for a bit (I was, yawn, tired) and then we suited up and headed to volleyball. Only to poop out after an hour and 20 minutes. So we left early, us old people, haha. I still feel pretty good, I got a 2 mile run in the morning, a few short walks in over the course of the day, and then just over an hour of volleyball. Plus I walked the doggie again when I got home, she was a happy camper 🙂

When we got home, I watched The Biggest Loser and snacked on some grapies.

I don’t know why I’ve been snacky this week but I’m thinking its the hormone fluctuation. Hopefully it’ll even out again soon. I think the cup with milk was not necessary, I could’ve had some tea, but I was HOT so I need another backup plan for when it gets warmer. Unless we have the A/C on too high and I’m cold, haha.

Boy, wasn’t the show emotional last night?  I’m glad Mandi took charge and made the decision for herself, she seemed to just go along with everybody else for so long. And she’s obviously doing well at home!

I’m starting to get so annoyed by the fake product placement. Like “Oh, by the way, here are these Fiber One bars….” lame. But I know they have to support their sponsors. But still, be real. I have no idea who is going to win at this point, but I think I’m rooting for Kristen. She and her mom are awesome.

I hated that the black team won the weigh in even after their huge splurge. See, that is why I worry about them going home, so many temptations that they aren’t even aware of. But hopefully they all got a wake up call this week when they saw the numbers on the scale.
