#Fitblog time!

I am so excited to get to participate in the #fitblog chat on Twitter tonight. For more info, check out this link:

But let’s talk about today first!

For breakfast this morning, I had oats (made with Silk almond milk and water) topped with almond butter and blackberries. It was delicious 🙂


On the way to work, I had to get gas ($2.85/gallon, ugh) which is way too close to a Starbucks. So I got a grande coffee with soymilk.


This was good, but I’m realizing more and more that it’s something I can live without. At least I know I don’t “need” it every day. So coffee is going on the backburner for now!

Mid-morning, I snacked on some Peeled Snacks dried apple, which I received for free from the company.

003Even though I did receive them for free, I promise you that I really like these. I like that they aren’t sweetened with anything and that they come in portion controlled bags.

For lunch, I had leftover bbq tofu on a salad 🙂


And a banana!

006  Afternoon snack was some vegan jerky. I love these things!

007 I ate my snack kind of early so I got hungry again and decided to drink that carrot juice I didn’t get to last week. I’m so glad I had it!


After work, I made a pit stop at Whole Foods and picked up a few things I need for my girl’s night potluck recipe for tomorrow 🙂

Then I drank a refreshing POM + Seltzer.


Then I got started on dinner, which included these:

I made some refried bean + avocado roll ups with taco sauce 🙂

014 I’m sure I’m not the first person to do this but it made me feel good to sort of “create” something on my own without relying on a recipe.

I also steamed some green beans with a little bit of Smart Balance Light.


After dinner settled and I did the dishes, I was thinking about heading out for my run. But my legs and feet hurt! Like just standing up to do the dishes was rough.

So I decided to skip it and go first thing in the morning. Sometimes you just gotta listen!

Instead of running, I enjoyed a glass of wine…


And a small serving of oat bran with almond butter and chocolate chips (x2)!

Major carb-age

This morning, I started my day off with my Monday tradition…a delicious green smoothie!


This smoothie contained: 1 cup Light vanilla soymilk, 1 frozen banana, 1 tablespoon almond butter and a whole lotta organic baby spinach. YUM!

Mari has decided to start a Green Monster Challenge where she will have one green smoothie a day (as one of her meals) for a month. I’m going to do my best to participate but it’s going to require some creativity on my part 🙂

I had coffee with coconut milk creamer and almonds for a snack but forgot to photograph them, sorry! I am out of practice.

Since I had a smoothie for breakfast, I decided it only made sense to have oatmeal for lunch! Here was the star ingredient:


I am really enjoying these Peeled Snacks dried fruit. The company sent me free samples to try and so far, I have loved them all!

The dried cherries were soft, chewy and not as sweet as dried cherries I have had in the past. That is my favorite thing about these snacks, which you can find at Starbucks.


I loved having oatmeal for lunch…this might become a habit 🙂

Later in the afternoon, I had another cup of coffee (oops) and some yogurt.


After work, I went on a 5-mile run and I was quite hungry when I got home. I had my usual Monday night pasta dinner!

023I had 1 1/4 cups of Barilla whole grain spaghetti, topped with Meijer organic pasta sauce (pictured below), steamed broccoli, a chopped up vegan burger and nutritional yeast. Plus a pita pocket with Smart Balance Light on the side.     022

This sauce was pretty good and I definitely liked the price and ingredients list. But the 365 brand I had a few weeks ago (roasted red pepper) has so much more flavor.

This wasn’t too shabby though!


For my after dinner snack, I had to try out a new product I picked up at Meijer yesterday:


These are basically like sandwich thins, only they taste like Thomas bagels and have a hole in the middle 🙂

I topped mine with peanut butter and chocolate chips! I splurged and got the Ghirardelli semi-sweet chips this time, yum.


But apparently, I got a case of the “runner’s munchies” because I decided to bust out the Oatmeal crack Squares for another snack.

I had two little cups of cereal with soymilk before calling it a night (as far as eating goes) just after 9:00.


I’m going to have to be careful with these this week. I can’t help it though…they were on sale for $1.67 at Meijer and I had a $1 off coupon. I got a $4 box of cereal for 67 cents!!

I’m back again!

For breakfast this morning, I had THE BEST green(ish) smoothie ever 🙂


I think what made this one special was a new protein powder I picked up at Amazing Grace, a local health food store (this packet cost me less than $1).


This smoothie contained 1 cup Silk vanilla soy milk, the NutriBiotic chocolate rice protein powder (which I will be buying again), 1 frozen banana, a few handfuls of spinach and a tablespoon of natural almond butter.

It sort of ended up with a split pea soup tint, huh?

043 It was so delicious and so filling! I did not eat my mid-morning snack until after noon 🙂

But I think this might also have had something to do with it:

044I was so excited when FINALLY this showed up on Whole Foods shelves here in Louisville. It’s as good as it looks!

045When I finally did break into my snack, I enjoyed some delicious almonds. Ever since I read on Gina’s blog that almonds were a good source of calcium, I have been trying to include them more in my diet.

018 Lunch was so good (or I was so hungry) that it managed to escape my camera entirely!

I tried the Black Bean Mango chili from Health Valley. It was good but not the best I’ve ever had.

Later in the afternoon, I enjoyed some Peeled Snacks!

047I was contacted by this company last week and they sent me some free samples to review for the blog.

Today, I tried the Pine-4-Pineapple since dried pineapple is one of my favorite dried fruits.

048This dried fruit is unlike any other I have had. I’m used to dried fruit that is really sweet, almost candy-like and I always eat too much of it.

The Peeled Snacks actually looks like the “real” fruit, they are organic and taste much less processed with no added anything.

The bags are also portion controlled which is great for someone like me who needs help in that area 🙂

You can find these snacks at most Starbucks locations, but I didn’t look to see how much they are. But if you are a fan of dried fruit I suggest you check them out.

After enjoying this snack, I went on an amazing 4 mile run!

For dinner, I had my usual Monday pasta only this time I had Barilla whole grain penne with 365 brand organic pasta sauce, cauliflower and Gimme Lean “sausage” for some protein.

049 I also had a slice of whole wheat toast with Smart Balance Light and a Zevia soda (reviews coming soon).

050 For dessert, I had a small cup of oatmeal (1/4 cup) with almond butter and a couple pieces of Green & Black’s bittersweet dark chocolate. Holy heck it was good!

051Once it melted, I stirred it up and dove in with my spoon 🙂


Great day of eats, all tracked and accounted for. The 9:00 rule holding steady. Awesome run. Everything is good!

Man it feels good to be blogging again. I think I might finally be getting out of this funk!

I’m going out of town later in the week and I’m setting up some really great guest posts for you guys.

Hopefully I’ll be able to check in a little bit while I’m gone too.
