#Fitblog time!

But let’s talk about today first!

For breakfast this morning, I had oats (made with Silk almond milk and water) topped with almond butter and blackberries. It was delicious 🙂


On the way to work, I had to get gas ($2.85/gallon, ugh) which is way too close to a Starbucks. So I got a grande coffee with soymilk.


This was good, but I’m realizing more and more that it’s something I can live without. At least I know I don’t “need” it every day. So coffee is going on the backburner for now!

Mid-morning, I snacked on some Peeled Snacks dried apple, which I received for free from the company.

003Even though I did receive them for free, I promise you that I really like these. I like that they aren’t sweetened with anything and that they come in portion controlled bags.

For lunch, I had leftover bbq tofu on a salad 🙂


And a banana!

006  Afternoon snack was some vegan jerky. I love these things!

007 I ate my snack kind of early so I got hungry again and decided to drink that carrot juice I didn’t get to last week. I’m so glad I had it!


After work, I made a pit stop at Whole Foods and picked up a few things I need for my girl’s night potluck recipe for tomorrow 🙂

Then I drank a refreshing POM + Seltzer.


Then I got started on dinner, which included these:

I made some refried bean + avocado roll ups with taco sauce 🙂

014 I’m sure I’m not the first person to do this but it made me feel good to sort of “create” something on my own without relying on a recipe.

I also steamed some green beans with a little bit of Smart Balance Light.


After dinner settled and I did the dishes, I was thinking about heading out for my run. But my legs and feet hurt! Like just standing up to do the dishes was rough.

So I decided to skip it and go first thing in the morning. Sometimes you just gotta listen!

Instead of running, I enjoyed a glass of wine…


And a small serving of oat bran with almond butter and chocolate chips (x2)!

On a kick

I have been on quite the green smoothie kick this week!

Today’s combo included: 1 cup Silk almond milk (1/2 plain and 1/2 vanilla – ran out of plain!), 1 frozen banana, 1 tbsp cocoa powder, 1 tbsp peanut butter, and 2 cups of spinach. I have enough spinach left for one more, so I expect to have another one at some point tomorrow 🙂

Mid-morning, I snacked on a Primal Strip. The name was no joke, this thing was HOT and SPICY!

I also had some coffee with the very last of my coconut milk creamer. I love coffee, not just for the wake up but I really like the taste. I have stopped drinking it black because it was staining my teeth and I read that adding creamer to make it lighter helps.

For lunch, I had leftover falafel on a bed of lettuce, carrots, and topped with hummus. This was delicious and didn’t upset my stomach in the slighest. Must’ve been something else going on the other night.

I got hungry for lunch around 10:45 this morning, so that is when I ate it. I am guilty of preconceived “meal times” so this is hard for me to do but I’m so glad that I did.

I also had a crispy Gala apple to finish off lunch. I didn’t get hungry again for over 4 hours!

This afternoon, I decided to take a break and run an errand. While I was out, I picked up a McAlister’s unsweet tea because I was thirsty and wanted something besides water. It was tasty!

Now I am snacking on some yogurt + granola before I leave work to go to the gym.

Then I have plans to meet a group of friends for dinner tonight at Tumbleweed. One of our mutual friends is visiting from out of town, so it will be nice to catch up with him. Enj0y your evening!

p.s. I have a “special” post coming at you later tonight. I’ve decided to make a change, for now (no, I’m not changing my diet, I love eating vegan). You’ll see!

Frying vs. baking

I woke up an hour and a half late this morning! I don’t know what happened, but I set two alarms for tomorrow 🙂

I had to rush breakfast, so I had a quick leftover pumpkin pancake with almond butter and a glass of GoodBelly.

001But somehow, I managed to find time to stop at Starbucks before work (okay seriously, last one for a while)! I also walked the mile into work this morning.

002 Snacked on some yummy vegan jerky later in the morning. Then went outside for a 15 minute walk.


For lunch, I had some leftover Indian food mixed in with some peas and a salad.

004 Plus a pear! I’m seeing a lot of green here 🙂


Late afternoon, I snacked on some yogurt and granola. I noticed after eating this, I wasn’t completely satisfied, which happens a lot with this particular snack. I may have to make it a breakfast option and bulk up the contents 🙂

006 I took another walk before my snack and then walked the mile back to my car this afternoon. In total, I walked for 65 minutes today. See, it adds up!

I had plans to run after dinner but once I got in cooking mode, I decided it could wait. I also took the opportunity to slow down and enjoy some wine!


This was just okay, definitely not the best I’ve had, but I will drink just about any wine. Sometimes you have to try something more than once.

For dinner, I had falafel on the menu!

008 The last time I made falafel at home, I baked it but this time I took a leap and drug out the deep fryer (one of three that we have and never use)!


The balls came out looking really good. I sampled one to make sure 😉

010 I enjoyed my falafel with some hummus, pita and asparagus. I swear, fried falafel is so much better. I mean, I knew that but I’m glad I finally took the time to make it this way tonight.


I had another half of the pita with hummus and one more ball (5 total)!

I usually don’t eat fried foods but if I’m going to eat falafel once in a while, this is the way to do it!

I also tried a new drink with dinner, which I randomly picked up at Fresh Market this afternoon.

012 It was just okay too. I like tea unsweetened but this was almost tasteless. I need to just make a pitcher of tea at home myself!

For “dessert” I had two spoonfuls of dark chocolate dreams.


I’m having some pain in my lower right side and I’m hoping it’s nothing serious. Ever since I had my gallbladder out in 2003, at the ripe age of 20, I’ve been paranoid that I’ll need my appendix out some day. Silly organs we don’t need, why?!

I’m hoping it’s just a combination of the fried falafel, wine and asparagus, which I won’t do all at once again, ha ha. We’ll see!

Post 10 mile race

Hey guys! I had a great race today, check out my recap here 🙂

Immediately following the race, I had a banana and a small grape Powerade. Usually I don’t drink these (ew, HFCS) but I did a lot of sweating and knew I needed more than water. I didn’t plan ahead and bring a sports-type drink of my own, so I just went with it.

When I got back to the car, I had a Primal Strip and an apple, plus lots of water!


After I got home and took a nice long, hot shower, I met my friend Aleta for lunch at Panera to discuss our upcoming high school reunion! Dear Lord, I can’t believe I got out of high school 10 years ago.

I had a classic salad and some vegetarian black bean soup with a whole grain baguette (note: contains honey).

I also enjoyed a small coffee while we chatted because I still had some money left on a gift card.

When I got home, it had been a couple hours and I was hungry again (hello, burned 1,000 calories this morning) so I ate some leftover popcorn.


I’m thinking I will probably have dinner before too long. Wonder where Josh and I will go? Better figure it out soon, ha ha 🙂

6 months

For lunch today, I had a leftover chickpea burger crumbled over a spinach salad with some hummus on top.

002 I also had the other half of my huge apple from this morning 🙂


After a nice 15 minute walk outside, I enjoyed another Primal Strip. This one was okay, not my favorite.

004After work, I walked to my car which took 23 minutes! I opted not to take the shuttle since it was so beautiful outside.

I had planned on making beans and rice for dinner but I accidentally dumped all of my leftover rice on the floor when I took it out of the microwave 😦

I uttered some words I wasn’t very proud of when this happened! But I made due and instead used two corn taco shells to make bean tacos and had some peas on the side.


I also enjoyed some fresh pineapple leftover from girl’s night dessert 🙂

006 Since I had sweet fruit with dinner, I wasn’t really in the mood to have it as a snack. I was actually craving something I just happened to have in the pantry.


I had about half the bag and I’m saving the rest for later 😉

Oh yeah, the 6 months thing. I saw a post over at Greens for Good where she talked about becoming a vegan one year ago today.

That made me realize that my own vegan journey started 6 months ago! I feel like I’ve come a long way, especially after the new year. But I can’t wait to see how much more I will learn and grow in the next 6 months 🙂

Feeling inspired

As I was blogging my eats yesterday, I was really inspired to do some more full day posts. I don’t know that I will do them all the time again, but we’ll see what happens!

For breakfast this morning I had pumpkin oat bran which was so delicious.

001 I used 1/3 cup oat bran and cooked it with 1/3 cup Silk original almond milk, 1/3 cup of water and 1/3 cup Libby’s canned pumpkin. I sprinkled cinnamon in the mix and for the first time, I used a squirt of agave nectar!

Of course, I topped it with peanut butter and chocolate chips 🙂

More mixed nuts to snack on with my coffee.


For lunch, I threw together a salad with black refried beans and salsa. It was delicious!

003 Here are the beans I used, they had quite a few different flavors so I’m going to have to try some more.

007 I also had a red pear with my lunch. Yum!


I had a second cup of coffee and then went for a 3 mile run with Farrah. The weather today was so warm, it was my first run outdoors in shorts in a t-shirt!

When I got back, I had a vegan jerky strip. I received a package of free samples from Primal Spirit Foods a couple of weeks ago.

005 I do love the Thai Peanut but the Texas BBQ is probably my 2nd favorite. Have you tried these? I was never a fan of “real” jerky before, so it’s amazing.

For dinner, I knew I wanted chickpeas but wasn’t sure what to do with them. Then I remembered, duh, chickpea burgers!


I topped mine with hummus this time because why not add more chickpeas to a chickpea burger? Ha ha. I also had some green beans and a sweet potato on the side.


For dessert, I had some strawberries with Dark Chocolate Dreams.

Another great day! I don’t expect things to go so well like this all of the time, but I’m feeling really good about the past two days.

Time to go to bed now, sweet dreams for us all!

Thank you times a million for all the comments on my last post! You guys are too sweet, for real.

Guess what? It’s Monday, which means you get to see everything I ate today. Are you ready?

003For breakfast, I had a green smoothie.

This one contained 1 cup of Almond Breeze (unsweetened vanilla), 1 frozen banana, a tablespoon of peanut butter, a few big handfuls of spinach and 1/2 tbsp of maca powder.

Maca what?

002I had heard of maca powder before, but wasn’t really sure what it was until I read about it recently on Gina’s blog. Apparently maca is an awesome thing!

Not so awesome was the $8.99 price tag at Whole Foods. But I decided to try it for a while to see what it was all about.

I used another “new” product in my smoothie today: organic spinach.

001I am trying to buy more organic produce and spinach is one of the 12 you should get organic, known as “The Dirty Dozen.”

004Unfortunately, I think the maca left a funky taste in the smoothie. I drank it all but something was off about it.

Mid-morning, I snacked on some mixed nuts. I also had one cup of black coffee.

005Lunch was the Mayan Harvest Bake Kashi meal. For a better description, see this post back from before I was vegan 😉

006This meal tasted good but it didn’t seem like as much as the last time I had it. Oh well!

For my afternoon snack, I had a Primal Strip.

008These snacks are genius. I absolutely love them. Low calories, high protein, vegan. Sold!

As I was wrapping up things with work, I started to get really hungry again so I grabbed these on the way to meet my running group.

009There is not much too these but they really satisfied me and I ran right after I ate them with no problems whatsoever.

I got to say running group today because there were three of us! It was an awesome 5 mile run, which you can read about over at River City Fitness!

Last week when I was trying to think of more natural post-workout drinks, I remembered this little electrolyte mix packets they sell at Whole Foods.

010These are 35 cents a piece, so I grabbed 5 of them for the total of $1.75 when I was paying around $1 per bottle of VitaminWater, Sobe, etc.

It was very refreshing…both in taste and cost effectiveness!

For dinner, I did my part to replace my glycogen stores, ha ha.

011I made Barilla whole grain pasta and topped it with 365 brand organic pasta sauce (roasted red pepper) with broccoli and Gimme Lean sausage mixed in. Plus a breadstick on the side.

It was delicious and even slightly spicy!

012 For dessert, I had two pieces of toast with almond butter and chocolate chips.

013 I am falling asleep watching “24” now so I’d better sign off.

I’d noticed that my Monday eats are becoming rather repetitive (green smoothie, pasta, etc.) so I’m thinking of moving the day around or perhaps doing more than one day a week.

Time well spent

Thursday was a pretty great day. I feel like I say that a lot, but hey, life is just good I guess.

Mid-morning, I snacked on this little cashew things Bianca sent me. They were kinda sweet and crunchy too. I liked ‘em.


For lunch, I had leftover roasted chickpeas, macaroni & chreese, and carrots with hummus. I ate it at 11:00 on the dot, not a moment too soon.


I loved reading your comments on my post about meal times. I’m glad that so many of you are honoring your bodies and eating when you are hungry, regardless of time. It is a difficult thing to learn, but I really feel that I’m getting better at it.

I had two afternoon snacks since lunch was so early.


The primal strip was good but I liked the BBQ flavor better.

Glenny’s marshmallow treat! Bianca sent me these and I don’t know whether she knew ahead of time or not, but these are like the holy grail to me. I’ve been wanting to try them for as long as I can remember, even before I was vegan.



Not exactly like a rice krispie treat but hey, I’ll take it. Actually it is better than the pre-packaged rice krispie treats, a lot less sticky too.

Before I left work, a co-worker brought me a chocolate covered strawberry from a retirement party. I don’t know what kind of chocolate it was, but I took a time out to not care. Sorry!


It was delicious! And so sweet of her to bring it to me.

After work, I ran 3.2 miles in the blustery cold weather. It was a great run and really got me stoked for the race tomorrow, I definitely know I can do it now.

Once I did a quick change and freshened up a bit, I went to a lovely Christmas dinner with my mom for an organization she belongs to.

The table settings were beautiful and they gave the poinsettias away but I didn’t take one because they are toxic to doggies 😦


I enjoyed a glass of Rosemount cabernet while we chatted with some members and I got to know a new girl I ended up having a lot in common with. It was really a great night!

For dinner, I ate some salad, green beans (real ones!), and a croissant and went back for seconds on salad and beans. I’m sure it wasn’t all 100% vegan, but I did the best I could. I also had some fresh fruit for dessert.

I didn’t take pictures because the lighting was really low and honestly, I just wanted to enjoy the time with my mom and not worry about blogging. I’m so lucky to have a mom that likes spending time with me, who invites me to parties, takes me out to lunch, coffee, etc.

So it was definitely time well spent 🙂

Say chreese!

It has been raining ALL DAY here. But even though the weather is nasty, I’m feeling rather inspired tonight. I’m telling you, I’m generally a happy person but I think this vegan diet has made even more cheerful.

For breakfast this morning, I made a nice pot of stovetop pumpkin oat bran!


Mid-morning, I snacked on a new product that Bianca sent me in a very awesome and thoughtful care package. I was so excited to try it!

I left my camera at home so I couldn’t take my own picture, but the strip pretty much resembled beef jerky, only a slightly different texture and tasted a lot better (to me).

I usually don’t bother with a lot of “fake” meat stuff but the taste and 10 grams of protein was totally worth it! I loved the barbecue flavor too.

My stomach started growling for lunch at 10:45, which surprised me – that’s two days in a row now! But I listened to myself (and Carrie) and ate anyway. My body is more important than waiting for an “appropriate” lunch time.

For lunch, I had leftover black bean burger on a slice of Ezekiel toast with broccoli and lots of hummus on both. Sorry for the lack of picture, it was delicious.

After lunch, I got a massive chocolate craving and somehow managed to find Green & Black’s at the bookstore, who knew?


This was my first time ever trying this and I was impressed. I ate half and saved the rest for another rainy day 😉

My pre-post workout snack was another Clif bar…chocolate chip peanut crunch. It was just okay, I won’t get it again though. The regular chocolate chip is so much better!

Since it was raining, I ran/walked 1 mile on the treadmill and not any more because I just wasn’t feeling it. But it was a good warm up before I went and did some weight training.

  • Lateral pulldown machine (50-60 lbs) – 3 sets x 12
  • Chest press machine (30 lbs) – 3 sets x 12
  • Bicep curls (15 lb bar) – 3 sets x 20
  • Tricep presses (12 lb bar laying on balance ball) – 3 sets x 15
  • Calf raises (holding 15 lb bar) – 2 sets x 25
  • Lunges (with bar) – 2 sets x 15 each leg
  • Crunches on balance ball – 2 sets x 25

It felt like I really didn’t do much at the time but when I wrote it all out just now, I can see how much I did do 🙂

I was so excited to make dinner when I got home! It featured another new product (thanks again Bianca).


I showed this to Josh last night and he said he wanted to try it! I was floored so I knew I just had to make it ASAP.

I followed the recipe, using water and then I added a spoon of Smart Balance Light when it was done cooking.

The rest of my dinner included Mama Pea’s Pumpkin Spice Roasted Chickpeas (I’m stalking her this week!) and some cauliflower.


The Mac & Chreese (I laugh every time) was pretty good! Josh even said “it wasn’t the best thing I’ve ever had but it’s not the worst either.” I expected him to make a face and spit it out but he didn’t, he ate his entire serving!

It gives me hope that he might try some more vegan stuff in the future 🙂

I think I would like to try another flavor next time to see what it tastes like. The texture was a little different and it had a slight aftertaste but other than that, it was good. Much better for my tummy than real mac & cheese!

Dessert was the other half of my banana soft serve with the usual toppings.


With the colder weather, lots of yummy treats in my pantry and the urge to hibernate, I have decided I need to re-implement a “cut off” time for eating at night.

Unless it does appear that I am truly hungry, I won’t eat anything after 9:00 p.m.

It’s 9:35 right now and I’m totally fine. Going to have some tea before bed. Good night 🙂
