Why today is great

It’s true, I am one of those weird people who loves Mondays. To me, the beginning of the week is akin to a fresh start. It’s the start of a new week to focus on goals, accomplish tasks and get back to “regular life” after a busy weekend.

Since I am finding myself extra inspired on this particular Monday, I thought I would share with you how I already know today is a great day!

For starters, today is my best friend Courtney’s 31st birthday!

She’s gonna kill me for this one! 🙂

So happy we got to celebrate with her last night at a karaoke party! I’m no great singer but she has definitely inspired me to get out of my comfort zone and just have fun. One of the many reasons I am grateful to have her in my life 🙂

Speaking of parties, I had a rather indulgent weekend of birthday parties, baby showers, lots of cooking and no exercising. So much fun and totally worth it! And yet, when I got dressed this morning, I put on my smallest pair of pants and they still fit comfortably. Another reason that today is great! 🙂

Tonight, Josh and I are having dinner with friends whom we don’t get to spend enough time with these days. It is sure to be a rockin’ good time!

It will be great to catch up and fellowship with our friends over a nice meal. I will be making a very delicious spinach tomato & cucumber salad to take with us tonight. I just had to mention food since I declared this a food blog the other day, oops.

Lastly, it is quite possible that we are going to get snowed in at some point tomorrow. I am normally not a big fan of winter, but this year I have been learning how to take in all the seasons, not just the ones I prefer (read: every season BUT winter, ha).

It’s definitely an adjustment but it certainly makes the bitter cold and dark gloomy days more bearable. I’ve also caught myself observing the beauty of winter in nature and not just seeing the dead trees with no leaves.

But just when I think I cannot take another freezing winter day, I remember that Spring and Summer will be here before we know it! Life is good 🙂

Another snow day?

I am so over the snow. And winter for that matter. I’m ready for Spring like you wouldn’t believe. Or if you live somewhere that it’s been snowing a lot, perhaps you would.

So today, I woke up to 4 more inches of snow on top of the 6 we got the other day that hadn’t quite melted. I also had a text message telling me not to come to work. Know what that means?

Apparently, today it meant WAFFLES!


I used the same mix as last time (when I made pancakes) and topped them with peanut butter, strawberries, and syrup. Delicious!

For lunch, I had a vegan burger with hummus on whole wheat toast and some veggies on the side.


Plus another tangerine! Good this time of year, both in taste and for health 🙂


Snacked on some nuts.


Then dinner was penne pasta with cauliflower and spaghetti sauce, plus my last piece of bread. That means it lasted more than two weeks, and Josh ate some of it too!


Then later on, I had a piece of toast with peanut butter and chocolate chips (aka best snack ever).


I still felt hungry later on, so I snacked on some tortilla chips. That seemed to take care of it 😉

I’m so glad to be going back to work tomorrow, especially so I can work out again! Today’s activities were mainly cleaning and walking the dog multiple times through a foot of snow.

Snow Day 2010

When I woke up at 5:30 this morning, I found out that I didn’t have to work today!

It started snowing last night into today and I think we’ve gotten somewhere around 6 inches of snow.


Suzie and I have had fun today!


Instead of going back to sleep, I enjoyed some leftover pancakes and coffee!


Since I had the day off from my full-time gig, I got to work on my home duties that had gotten neglected over the busy weekend!

I literally cleaned my entire apartment, did laundry and dishes. Now I’m really hoping I get to go back to work tomorrow or else I won’t have anything to do 😉

I snacked on some nuts mid-morning and then took a break for lunch in the midst of my housework.


Veggie burger with hummus in a pita pocket, plus some cauliflower. And a tangerine!


Of course, I had some more tea this afternoon 🙂


Loved this one!

All my cleaning worked up an appetite. I had this later in the afternoon.


For dinner, I started off with a spinach salad with balsamic vinaigrette.


Then I made some rice & beans (pinto) sprinkled with hot sauce.


And even more tea, if you can believe it. I’m obsessed!


Jasmine is definitely a favorite. I think I like the other Jasmine tea I had before better than this one, but this is still really good!

I also tried a new product for a snack tonight.


First, the Silk Almond milk is delicious. I’m glad I got the original because it’s just 60 calories per cup and its creamy and sweet (I used it in my green monster yesterday).

My mom has been raving about these Chocolate Cheerios forever, so when I finally saw them, I had to try them out.


These taste just like Cocoa Puffs. I mean that in a good way. I’m going to have to be careful with these 😉

Snow, waffles, ambience

We got a few inches of snow overnight and into this morning. I had a fun walk with Suzie!


Last night when we were waiting for it to start snowing (we stayed home and cozy), I had decided to make waffles in the morning!

My parents tried this mix recently and didn’t like it. I was bummed for them, but it worked out for me. 🙂


I used 3/4 cup of the mix and then added 1/2 cup soy milk, 1/4 cup water, 1/4 cup applesauce (for the egg) and 1/4 cup pumpkin (for the oil and flavor).

Plus some pumpkin pie spice, I almost forgot that!


The batch made about 5.5 waffles, so I had two drizzled with peanut butter and syrup and topped with a lovely banana.



Coffee was a must have, especially after my frigid trek outside (it’s in the single digits with the wind chill right now).


Just French vanilla coffee and soymilk. The way I like it 🙂

Right now, I’m listening to the “New Age Ambient” station on Pandora and thinking of doing some yoga on my own. It’s quite relaxing, I like to listen to it at work too.

Eventually I’m going to have to venture out for a while to my mom’s and the grocery store. But I’m taking my sweet time!

Melt already!

I had another snowy run today.


Okay, so it wasn’t that bad. But it snowed here last Thursday and still has not melted yet. It’s still lurking on sidewalks, parking lots and jogging paths!

Actually, I had originally planned to run on the treadmill today since my partner and I weren’t able to meet. But one look at the cardio room (it was completely FULL) and I was out the door.

I have to say, even though it made me change my plans, it was good to see that many people in there!

I decided to run a quick mile on the jogging path outside. Even with all the freakin’ snow and trying not to fall on my face, I still finished in 9:53!

Thankfully the white stuff should really start melting tomorrow.

Then I came back in and did some strength training, using an 18 lb body bar. I did 15 reps of each exercise.

  • Bicep curls
  • Shoulder presses
  • Tricep extensions
  • Upright rows
  • Dead lifts
  • Squats
  • Lunges
  • Calf raises
  • Abs (using 4 lb medicine ball) – I did 5 different exercises, 25 reps each

Thanks to everyone who left me awesome comments on my yoga challenge post. I’m currently searching for the one I’m going to do tomorrow morning!

More than a little…

Oops, that is so what I get. Remember my rant about the snow? Well, we got more than a little.



Ah, winter.

Thank goodness one of my goals of 2010 is to avoid negativity. It is making me focus more on the positive of this situation. But I’m totally a warm weather girl!

At least dinner was great 🙂


I made Mama Pea’s black bean burgers again (I’m hooked) and had one with a pita pocket + Smart Balance light and mustard. For my veggie fix, I made a big salad with balsamic.


Dinner was a little on the light side so I made a snack of yet another whole wheat pita (these things rule) with some White Chocolate Wonderful and chocolate chips.

Oh yeah, and tea.



Good stuff. Time to brush my teeth and watch part of the Texas game with Josh. Since it doesn’t start for another 30 minutes, I doubt I’ll see much of it 😉

Snow and smoothies

So we’re getting a little bit of snow here today.

People are freaking out! I don’t get it. If you calm down for a minute, drive slowly, and just be positive about the situation, it’s no big deal.

We’re expected to have just a few inches total (in the region I live in). I mean, the Northeast has it so much worse than we do. I can’t stand our city’s overwhelming “Oh my God, we’re all going to die, let’s go buy milk and bread!” mentality. Seriously. Try living in Buffalo or somewhere like that!

Anyway, even though it was snowing this morning, I made a smoothie with breakfast (in an attempt to use up the frozen fruit I bought several weeks ago).

Just rice milk and strawberries.

It wasn’t the best thing in the world (unsweetened rice milk) but it was much better than the one I had on Tuesday. If I drink these right when I get up in the morning, they don’t make me too cold either.

I also had a mini bagel with Mighty Maple on it. Someone told me Mighty Maple was getting discontinued but I found it at Walmart a couple of weeks ago.

Or do you like somewhere that you never see the white stuff? Can I move in?

Dodged the bullet

Holy heck, it feels so good to be back!

A lot has happened these past several days but the first thing on my mind is that I am so thankful that in my section of Kentucky, we’ve managed to dodge the major winter storm bullet. We have had some freezing rain and flurries but NOTHING like what many others in the Eastern parts of our state have had, not to mention you guys up in the Northeast.

I thought my tooth debacle was not a very fun early Christmas present, but at least we aren’t snowed in without power. My heart goes out to all those people.

Breakfast this morning was a lovely, warm, crisp bowl of oats with a honeycrisp apple, cinnamon and peanut butter. Need I say more?

I feel like I have so much of my life to catch up on before Christmas that I don’t even know where to begin. But don’t worry, blogging is a part of that again, thank goodness 🙂
