I took Friday off work to catch up on a ton of errands, including buying gifts for Mother’s Day and the wedding and two graduation parties I’m attending today!
I started the day off with a slice of homemade whole wheat bread that my stepmother-in-law made for me topped with peanut butter and banana. It’s so good!
For lunch, I had my leftovers from Ramsi’s of course 🙂
But before the show, we went to BBC (Bluegrass Brewing Company) where I tried a couple things called “Beertails” which are cocktails made with their special brews.
The first one I tried was called a Wheat Spritzer, which contained grapefruit, orange juice and wheat beer. It was good and not too sweet!
Oh my heavens, the concert was great. The Goo Goo Dolls have been my favorite band for the past uhh…15 years or so? Gosh, I’m getting old, ha ha! But I love them and seeing them in concert is always a great experience.
I got the Chateau St. Michele Riesling which was awesome!
However, three alcoholic beverages in one night (even though spread out and none very strong) was not the best display of moderation on my part. I don’t feel bad physically at all, but I do think I need to control myself a little better in the future. Plus, I don’t need to drink so many calories!
All that being said, it was a great night and I’m so glad I got to spend it with my girlfriends!
I did get a little hungry by the time I got home (at 1 o’clock!) so I had a small cup of oats with peanut butter, perfect 🙂

But let’s talk about today first!
For breakfast this morning, I had oats (made with Silk almond milk and water) topped with almond butter and blackberries. It was delicious 🙂
On the way to work, I had to get gas ($2.85/gallon, ugh) which is way too close to a Starbucks. So I got a grande coffee with soymilk.
This was good, but I’m realizing more and more that it’s something I can live without. At least I know I don’t “need” it every day. So coffee is going on the backburner for now!
Mid-morning, I snacked on some Peeled Snacks dried apple, which I received for free from the company.
For lunch, I had leftover bbq tofu on a salad 🙂
And a banana!
After work, I made a pit stop at Whole Foods and picked up a few things I need for my girl’s night potluck recipe for tomorrow 🙂
Then I drank a refreshing POM + Seltzer.
Then I got started on dinner, which included these:

I made some refried bean + avocado roll ups with taco sauce 🙂
I also steamed some green beans with a little bit of Smart Balance Light.
After dinner settled and I did the dishes, I was thinking about heading out for my run. But my legs and feet hurt! Like just standing up to do the dishes was rough.
So I decided to skip it and go first thing in the morning. Sometimes you just gotta listen!
Instead of running, I enjoyed a glass of wine…
And a small serving of oat bran with almond butter and chocolate chips (x2)!
When something is telling you to skip a run, do you? Or do you push through it?
I was up bright and early this morning to be a patient for my friend who was taking her dental board exams. She is awesome so I know she will do great 😉
I started my morning off with oats!
This bowl contained 1/2 cup oats (cooked with 1/2 cup almond milk and 1/4 cup water), 1 tbsp flax, a banana and almond butter.
By the time I got done with my dental work, it was lunch time, so I stopped somewhere on the way home!
By us, the Jimmy John’s and Starbucks are attached to each other, so I couldn’t resist.
I tried the iced dark cherry mocha with soy milk. It was like a dessert!
My sandwich from Jimmy John’s was a #6 (vegetarian) with no cheese or mayo. I love the avocado spread on here 🙂
Once my lunch had digested well, I went for a 4 mile run in the beautiful sunshine. Then I took Suzie to the dog park and snacked on this bar on the way there.
I did not love this one, it was left over well before I gave up bars for Lent. But it held me over until I ate dinner!
I had quite the smorgasbord. Organic pinto beans, leftover mashed sweet potato with cinnamon and Smart Balance Light, leftover cornbread, leftover asparagus…
I also had the rest of my wine from the other night.
What a great meal!
I’m taking the rest of my chocolate from last night and some tea bags to Buffalo Wild Wings to watch the UFC pay per view with Josh tonight.
It’s been such a great day. I feel truly blessed to have so many things in my life that I enjoy!

I woke up an hour and a half late this morning! I don’t know what happened, but I set two alarms for tomorrow 🙂
For lunch, I had some leftover Indian food mixed in with some peas and a salad.
Late afternoon, I snacked on some yogurt and granola. I noticed after eating this, I wasn’t completely satisfied, which happens a lot with this particular snack. I may have to make it a breakfast option and bulk up the contents 🙂
I had plans to run after dinner but once I got in cooking mode, I decided it could wait. I also took the opportunity to slow down and enjoy some wine!
This was just okay, definitely not the best I’ve had, but I will drink just about any wine. Sometimes you have to try something more than once.
For dinner, I had falafel on the menu!
The balls came out looking really good. I sampled one to make sure 😉
I had another half of the pita with hummus and one more ball (5 total)!
I usually don’t eat fried foods but if I’m going to eat falafel once in a while, this is the way to do it!
I also tried a new drink with dinner, which I randomly picked up at Fresh Market this afternoon.
For “dessert” I had two spoonfuls of dark chocolate dreams.
I’m having some pain in my lower right side and I’m hoping it’s nothing serious. Ever since I had my gallbladder out in 2003, at the ripe age of 20, I’ve been paranoid that I’ll need my appendix out some day. Silly organs we don’t need, why?!
I’m hoping it’s just a combination of the fried falafel, wine and asparagus, which I won’t do all at once again, ha ha. We’ll see!

What a beautiful day!
I decided after the 10-miler yesterday and being a special day and all that I should have a special breakfast this morning. Which usually means…pancakes!
I called on the Pumpkin Pie Pancakes recipe from my Vegan Planet cookbook. The last time I made these, I substituted a lot of ingredients but this time I stuck to the recipe for the most part, only substituting applesauce for oil.
I also cut the recipe in half so I wouldn’t have a lot of leftovers. They were so very good. Dense and yet still fluffy. I think the Silk almond milk helped too!
I topped them with Dark Chocolate Dreams and sugar free syrup (trying to use it up) and had blackberries and coffee on the side 🙂
When we got home from church, I was really hungry and knew we were having a late lunch so I snacked on some mixed nuts.
Lunch was nothing too special, except of course for the company. Anytime I have a disappointing restaurant/food experience, I always remember what my friend Carrie says: “So what if it’s not the best meal you’ve ever eaten, going out to dinner isn’t really about eating anyway, it’s about socializing, you can eat when you get home.”
We went to Our Best, which is a lot like Cracker Barrel with their southern style country cooking. Today was buffet style which was kind of disappointing because they usually have more veggies to choose from on their “regular” menu, but I just went with it.
I started off with some salad and a roll.
When I went back through the line, I was sad to see the only thing really “safe” for me to eat was corn. My husband yelled at me from across the room not to eat the green beans – they were cooked in meat juice, he found out for me.
So corn, more salad and another roll it is!
Believe it or not, I actually got pretty full. It wasn’t the best or most diverse meal ever, but I felt blessed to celebrate with our families, which definitely made it a special day 🙂
After lunch, I did some serious grocery shopping and since it was so warm and sunny outside, I said what the heck to another…
For dinner, I made a tasty Indian dish I found at Whole Foods.
The only thing I dislike about products like this is that they aren’t as big as they look. The box said 2.5 servings but it was really more like 1.5 once I cooked it.
However, it was very good! Spicy, just the way I like it 😉 And still cheaper than an Indian restaurant.
I had some leftover peas and 1/2 of a Greek pita (I’m multicultural today) on the side.
As I am blogging, I am enjoying a POM spritzer, which is just POM wonderful juice and some seltzer. I’m going to write a longer post about POM at a later date since the company sent me some free samples 🙂
Time to do some housework, homework and soak in the tub before going to bed. I’m still not too sore from the run yesterday, just some tightness in my quadriceps.

Today was one of the busiest days I’ve had in a while. I think this is the first time I’ve sat down at home all day!
I started things off right though, with a green monster 🙂
Mid-morning, I had some coffee and nuts, as usual.
I had to eat lunch kind of early because I had an appointment to get a ROOT CANAL done today!
What is wrong with me? Root canal on Friday, 10 mile race on Saturday…
Leftover chickpea burger on a bagel thin with hummus and carrots on the side.
Plus, some pineapple!
I’m very happy to say my appointment went VERY well.
I mean, if you could have a great root canal, this was it. I had no pain during or after, haven’t taken anything for it either. Woo hoo!
Afterwards, I had to go get my packet for the 10 mile race tomorrow, but it just so happened to be close to a Starbucks…more iced coffee please!
These were yummy, plus they are gluten, dairy, nut and egg free. And $1.50. And portion controlled 🙂
After I got my stuff, I went on a hunt for some new running shoes. I ended up going with a pair of New Balance which I’ll have to show you all later.
It’s so funny, I have a new brand every time I buy shoes. First it was Adidas, then Asics, now New Balance. Ha ha!
I also got a new purse for $6 (regularly $32). I rarely buy stuff like this but it was too good to pass up!
My friend Courtney and I went out tonight, which included dinner at Qdoba.
Qdoba is a great place for vegetarians! Plus, we got to sit outside on such a pleasant evening 🙂
I got the grilled veggie burrito with black beans, rice, grilled veggies, lettuce, pico de gallo, salsa verde and of course, guacamole. I think there’s is my favorite. Normally, I would get it “naked” (without the tortilla) but I figured I needed just a few carbs for the race tomorrow 😉
We also made a Starbucks run afterwards but since I’d just had an iced coffee a few hours earlier, I opted for the unsweetened shaken green tea lemonade. It was yummy!
Warm weather makes me Starbucks crazy! I’d better stop before it becomes a habit 😉

Even though it was 60 degrees already when I woke up this morning, I really wanted oatmeal for breakfast 🙂
This bowl contained:
- 1/2 cup oats (cooked with 1/2 cup Silk Almond milk and 1/2 cup water)
- 1/2 of a HUGE red delicious apple (some pieces were cooked, some added after)
- 1 tbsp milled flaxseed
- 1 tsp Agave Nectar (made such a difference in the taste!)
- A few sprinkles of cinnamon
- 1 tbsp Natural peanut butter
This was one of the best bowls of oatmeal I’ve had in a while. Maybe because I haven’t had it as much lately? Absence makes the heart grow fonder…
After breakfast, I started off my day with a dental appointment. It wasn’t that bad but I definitely felt like I “deserved” a treat afterwards 🙂
The only time I ever order a VENTI from Starbucks is with their iced coffee. I added soy milk to mine, of course. But that’s it.
I also picked up a snack while I was there because I was pretty hungry even after that nice bowl of oatmeal (it had been over 4 hours though).
These were sweet, crunchy and just what I needed to get me through my mid-morning hunger. I was just going to eat half the bag (one serving) but I waited a few minutes and I was still hungry so I went ahead and finished it (the whole bag = 300 calories). All better now!

After my great 5 mile run on Saturday, I drank some water mixed with this stuff:
It didn’t have too much flavor, which I liked, plus it has a simple ingredients list and none of that crappy high fructose corn syrup or sugar like Powerade and stuff like that (ick).
I bought another one at Whole Foods this weekend (they are 39 cents). I typically only use stuff like this on long runs (longer than 4 miles).
For lunch, I had my PF Chang’s leftovers with a pita pocket 🙂
When I left for my friend Courtney’s house to get ready for her 30th birthday party / ‘80s prom, I knew it would be a late night so I got an iced coffee with soymilk to wake me up!
A few hours later, I made a run to Subway which I pretty much inhaled while we were getting ready. It’s a veggie delight with a pile or tortilla chips (oops).
I snacked on A LOT of chips, plus some of this and diet Coke over the course of the night.
The champagne was not vegan friendly (I’m seriously just going to have to quit drinking) nor was the one cupcake I decided to have but it was a fun night so I’m not going to dwell on it too much.

I can’t believe Monday is already over and I only have to work one more day this week, woo hoo! Sorry for those of you who have to work more than that though. I’ve been there.

It was also quite filling! My mom took me to Starbucks this morning (becoming a Monday tradition!) and all I could bring myself to drink was a black coffee. But I really enjoyed it, which got me thinking…that is how I prefer it 😉

Then for lunch, I tried another soup from Dr. McDougall’s!
I was pretty impressed at how much soup this was, my bowl almost wasn’t big enough!

I would definitely get this one again! Lots of veggies with barley and lentils mixed in. Pretty filling too.
I snacked on a grapefruit after Exercise Science class which was very interesting today, all about overtraining.
I normally don’t eat this much fruit in a day but my mom gave me this a while back and I wanted to eat it before it went bad. It was delicious!
I also had a second snack later in the afternoon which was like a homemade trail mix with mixed nuts and raisins. I think next time I’ll add a few chocolate chips too (sorry no pic).
After work, I hit the gym for a quick upper body training session. It was one of those days when I only had 30 minutes to work out and I could’ve easily just blown it off but instead I made due with what time I had!
- Warm up: 5 minutes walking on the treadmill
- Chest presses: 20# dumbbells, 1×12, 1×8, 1×8
- Military shoulder presses: 15# dumbbells, 1×10, 1×8, 1×8
- Bicep curls: 15# dumbbells, 1×12, 1×10, 1×12
- Tricep extensions: 20# dumbbell (1), 1×12, 1×8, 1×8
For dinner, I had a repeat of last night’s black bean burger only this time I had a potato and salad with it (sorry no pic again, I was lazy today).
After I ate, my friend Candy came over for a walk. We did 3.3 miles, which I know for a fact thanks to Map My Run, a really great website for mapping distances.
How do you determine distances? Do you use a website, a Garmin, pedometer, etc?
I was feeling pretty hungry tonight so I snacked on two slices of Ezekiel 7 grain bread with peanut butter and chocolate chips. I’m good now!

This time of year, with the colder weather creeping in and all the stress the holidays can bring, I have found myself already taking time to appreciate the little things that make me happy.
Like the Starbucks red cup 🙂
And the soy latte that comes inside isn’t too shabby either.
I’m also very thankful for leftovers, a benefit (if the only one), to being the only vegan member of your household!
It is also an important time of year to not sweat the small stuff…like burning brown rice!
Studying for exams…
Or having to make a decision between wine and a snack.
Answer: just have both!
As you can see, I have let the infamous oatmeal
crack squares back into my house. They were on sale!
So far, I have been able to control myself but they still call my name constantly. Oh well, there are worse things 😉
