On Monday night, a few girlfriends and I met up at the new Adobo Mexican Restaurant which has now taken the place of the old Our Best on Bardstown Road in Fern Creek. It looks exactly the same, just with a new paint job and different decor on the inside. I’m glad we chose it as Mexican restaurants are usually a safe bet for me as a vegetarian and the location was good for all of us to meet up in the middle.
The restaurant wasn’t too busy when we walked in and were seated right away. As we walked back to our table, we spotted the “Guacamole Bar” which I wish I had gotten a photo of. Basically, they make their guacamole fresh right when you order it. We couldn’t resist!
This appetizer was $8 but I swear, it was enough for the four of us and then some! Totally worth it too, I’m not kidding when I say this is the BEST guacamole I have ever had. It was fresh, creamy and even a bit spicy. Sorry, Qdoba, you have been replaced!
Like many Mexican restaurants do, they offered 99 cent margaritas on Mondays, so I decided to try one, you know, to review for the blog 😉
It was really tasty. I usually don’t do “on the rocks” but I tried it because the frozen version was $1.99, which isn’t bad either but I thought I’d pick the cheap one this time 😉 I’m glad I did because I think I might like it better this way!
I forgot to take a photo of my entree but I ordered the veggie burrito with no cheese or sour cream. The vegetables in the burrito were surprisingly tasty and included zucchini, broccoli, onions, peppers and beans. It came with a side of rice.
Sometimes without the cheese and sour cream the dish can suffer (because they don’t try to do anything else with it) but this one did not. There was a nice garnish of lettuce, onion and spices on the side that I spread over it, plus a few dollops of guac 🙂
I enjoyed it very much, took the other half of it for lunch today and it was just as good reheated. It wasn’t the best Mexican restaurant I have ever been to but for a new place in a city with so many restaurants, it did stand out to me. The guacamole bar was really unique to me, I had never seen that before.
The prices were good too. For my entree, plus the drink, plus half the guacamole (me and a friend split the cost for the table) my bill came to $15 and I had leftovers so you figure that for 2 meals, not bad 🙂
We’ve all been bragging about it to our other friends and definitely want to go back soon. Although the veggie options are not plentiful, I’d be perfectly fine just eating the chips & guacamole!
After a really sweaty workout, I decided to check out a health fair taking place on campus. It was geared mostly toward students but they were happy to see staff people there too 🙂
I am so glad that I went because I ended up getting free food!
This veggie wrap was unbelievably tasty and impressive. I can’t remember the last time I actually found real, good vegan food at a health fair (sadly).
The wrap, along with some hummus and pita chips (not pictured) ended up being my lunch, instead of the veggie burger that has been in the freezer at work going on two days now 😉
We also got some free snacks for later!
I ended up having the apple with some peanut butter for a snack just now 🙂
Believe it or not, there are days when I have a hard time eating any vegetables. It’s not that I don’t like them, I love my veggies! But sometimes they just don’t sound appealing (especially hot ones in this summer heat) and sometimes I am crunched for time and don’t make any.
Sometimes I drink my veggies. I don’t own a juicer (yet) but I’ve been able to find some good ones already made for me! I’m a big fan of green juice, which I drink most days now. I’m also a straight up carrot juice lover.
But I also like to mix it up from time to time.
I picked this juice up at Walmart of all places!
It contains the following, in all it’s veggieness: 100% Vegetable and Goji Juice Blend (Tomato Juice, Goji Berry Juice, Carrot Juice, Sweet Potato Juice, Yellow Carrot Juice, & Red Bell Pepper Juice Concentrates) with Filtered Water, Inulin (Fiber), Citric Acid, Natural Flavors & Spices, Sea Salt, Veggie Blast Antioxidant Blend (Celery, Spirulina, Jalapeño, Kale, Chlorella, Blue Green Algae, Broccoli, Garlic & Spinach Powders), Xanthan Gum, Vinegar, Vitamins [Ascorbic Acid (Vitamin C), Niacin (Vitamin B3), Pantothenic Acid, Vitamin B6, Riboflavin (Vitamin B2), Thiamin (Vitamin B1), Folate, Biotin, Vitamin B12, Beta Carotene], Plant Derived Minerals.
Each serving contains: 350% vitamin B12; 100% vitamin A; 100% vitamin C; Beta carotene.
It’s nutritionally comparable to Low Sodium V8, but it has way more interesting ingredients in it and I thought it tasted better too. Maybe even a little spicy!

I was blessed to be off work today so I took full advantage. I slept until 7:45 (that’s late for me) and got the day started with some pumpkin oat bran.
Complete with some raisins AND chocolate chips…because I just couldn’t choose.
In lieu of coffee (because I’m out at home), I had some stash green tea 🙂

Although now it reminds me of the poor chicks in Food Inc. Moving on…
Since I knew I was going for a run today, snacking was crucial. For a pre-run snack, I went ahead and “tried” one the dessert I made for tonight.
I’ll post more about that later!
Then, we hit the trails at Seneca Park for an awesome, fun and challenging 5 mile trail run! The trail itself was 3.1 miles so the rest was around the track and back and forth to the car.
I was a little nervous on the trail, but thankfully I did not fall! And I liked being unfamiliar with the course because I couldn’t tell how far we were going which is a good thing since I like to psych myself out. There were some really challenging hills on the course too, so this course was great for me – I stink at hills. I can’t wait to do it again!
My legs were feeling it by the end of our run, but they felt GOOD. We stretched and then headed back home where I proceeded to inhale this banana with PB.
Then I soaked in the tub for a while, listened to some indie rock on Pandora, and then finally got an appetite for lunch.

Then I heated up leftover brown rice, stir fried veggies and black beans from leftovers this week.
I think this dish was inspired by Heather’s husband CD who likes to refuel with stir fried veggies too! But I can see why he eats it – it hit the spot and was perfectly filling too!
I had a few chocolate chips after lunch 🙂
I watched some Dr. Oz since I’m never home to watch his show usually Cutie Bob Harper was on there too. Yay! Then I felt like I needed a nap, so why not?
I slept for 2 hours!
I’m getting ready for girl’s night potluck now but I felt sort of hungry so I snacked on some mixed nuts to hold me over.
And now I am feeling some more tea (it’s getting cold here) so I think I’ll get to that. See ya later!
