Not only I am sleepy today but my legs are sore from all the walking I did yesterday, so I’ve decided today needs to be at least somewhat lazy for me.
I’ve still got laundry going in the other room but I’m sitting here with my feet up and thinking of taking a nap once this post goes up 🙂
For breakfast this morning, I made pumpkin oats.
I don’t know what it was but this bowl just didn’t blow me away. I think it might be the pumpkin, honestly. Perhaps I got an old can or it just tastes better when it’s in season?
Or maybe I need to cook them with some non-dairy milk instead of just water? Hmm…
This bowl contained 1/3 cup oats (cooked with water), 1/3 cup pumpkin, 1 tsp pumpkin pie spice, 1 tsp chocolate chips, 1 tsp pancake syrup and 1 tbsp peanut butter.
I also tried another Starbucks VIA product today that I got as a sample while I was there yesterday doing the taste test.
This Italian Roast was okay but I definitely prefer the Columbian, so I am glad those are the ones I purchased yesterday with my coupon. These are something I probably won’t make a habit out of since a pack of 3 normally costs $2.99 but I’ll definitely use my coupons first!
Spiked with some Almond Breeze unsweetened vanilla.
For lunch after church, my parents, Josh and I went to McAlister’s Deli, which I hadn’t been too in a long time.
I ended up getting the Pick Two combo of half a Greek salad (with no feta) and a cup of the vegetarian chili. It was delicious.
I’ve been doing some thinking and research about soy. I’ve heard a lot of things on both sides, that soy is beneficial, helps prevent cancer, good for bones, etc. But I’ve also heard that soy is dangerous, can not really cause cancer but aid in it, and also screw with your hormonal cycles.
As a woman who has struggled with irregularity of my cycles for as long as I can remember, anything that messes with that jumps on my radar. We’re talking late periods, no periods (for months at a time), heavy, light, painful and not so much. Two are hardly ever the same which makes finding the cause pretty impossible. Since there is not a clear, definitive answer that I know of about soy and it’s relation to this, I don’t know that I will do anything other than be aware.
I don’t need to become so reliant on soy since I have decided to go vegetarian and now vegan. I think I do okay with my non-dairy milks (other than Almond Breeze which does contain soy) but it is in so many other products I use that I think I need to start paying more attention.
What do you guys think? Are you a fan of soy or do you avoid it? Why?

I am so tired and yet feeling so great. I had a great day out with my friends today at the St. James Court Art Show, an annual thing here in our city that I have been attending for the past few years. It’s such a beautiful area.
Jim, Courtney, Renee, Me, Carrie and Beth. I love Fall clothes with sunglasses. It was a beautiful day today.
To get the day started I had some pumpkin oats with peanut butter 🙂 I just totally forgot to get a picture of it even though I finally replaced the batteries.
On the way, we stopped at Starbucks where a friend and I took the VIA test challenge and we CORRECTLY identified which one was which. However, I’m still a fan of the VIA and I used the $1 off coupon the guy gave me to buy some for home! I also had a tall soy vanilla latte to warm up on a crisp Fall day.
Also on the way there, we discussed my recent decision to go vegan for a while. For the most part, my friends are supportive, but I know it is not easy, so I’m not expecting them to bend over backwards. I am totally capable of peeling off cheese and whatever other exception I may have to make from time to time when we all eat together (like Wednesday night dinners).
I know it sounds cheesy but I’m sort of glad to be “out” to my friends now. My family is next I suppose 😉

But I just decided to eat a Nature Valley bar and a banana while I was there. We also got a free can of La Croix which was totally awesome! I had the orange flavor and now I hope I can find it at a store somewhere 😉
My friend Jim ate for us though…I believe he had a cheeseburger, two hot dogs, a big cookie and this bratwurst. We love Jim!
Then after the fair, we went to one of my favorite places in Louisville…Shiraz!
I got hummus, of course.
And I also ordered the falafel, minus the tzatziki sauce. I just used hummus instead 🙂
I ate just about everything as I’d worked up quite the appetite from walking around all day. It was such a good meal and a great day with friends.
After this, I went home for a while then went grocery shopping for the week. We are sort of under a tight budget this week, so it made things interesting. But I think we will manage, we usually do.
For “dinner” I wasn’t too hungry, so I just had a peanut butter and jelly sandwich…love this blueberry! It’s Smucker’s Simply Fruit, which I believe to be vegan as I examined the ingredients list 🙂
My internal clock must be out of whack because I am ready for bed now, ha ha. I’ve gotta try and stay up a little longer to see Ryan Reynolds on SNL but I’ll most likely record it too because I know I won’t make it very far 🙂

p.s. I realize I did not have a Day 2 post but it was rather unremarkable (and with no pictures). Except for the awesome 3 mile run that I did in 29:30 with NO WALKING! Woo hoo.
So my camera batteries died yesterday morning, boo. I have literally no pictures to share with you right now but I did want to tell you what I’ve been up to the past couple of days.
Yesterday, I went back to work feeling much better from the cold I caught over the weekend. Thank goodness for healthy eating, rest and vitamin C. I swear, it works wonders.
I also ate a piece of cake! A co-worker of mine celebrated 30+ years of service, so there was a small celebration. Wait, I did take that pic with my cell! I tried to take more throughout the day but they were all crappy and blurry so this is the only one.
The cake was huge and it had a section of the book “Ethan Frome” written out on it. Someone spent a lot of time on that!
I know this cake had to contain eggs and dairy so it was sort of a sayonara to such things as October 1st is tomorrow. It also held me over so well (I ate it after lunch) that I was not hungry again until dinner time 🙂
I also took a nice hour plus long walk with a friend last night, first real exercise I’d had in a while. It felt so good. I’m off work today (had a dr. appt earlier) and think I’m going to check out some of the Exercise TV programs I saw the other day.
I’m really feeling yoga today so it will likely be something like that.
I’m also currently baking some Vegan Pumpkin Chocolate brownies that I’m taking to girl’s night tonight. If you are a vegetarian or vegan, or if you are just looking for some really great animal-free recipes, Happy Herbivore is a must!
If they taste half as good as they smell and look, we are all in for a treat later.
Tomorrow is the big day, the moment of truth. I’ve definitely been able to eliminate meat from my diet with absolutely no problems. But dairy has been showing up in interesting places and I’m also concerned with inconveniencing my family and friends a bit.
But this is a change I really want to make, for my health, because I don’t want to put anything in my body that I’m not completely confident in.
And I know eventually the inconveniences will fade and it will become my way of living, second nature. Here we go…

p.s. Today I also tried the new Starbucks VIA instant coffee. I got a sample a week or so ago when I stopped there with Mom. I have to say, it was quite tasty and I liked just being able to add hot water to it instead of loading up my coffee maker. Definitely convenient. I may have to look into it, at least for the weekends 😉
