I’ve been reading Heather‘s blog for a long time and here lately she’s been eating a lot of waffles! 🙂
I will freely admit that seeing what others eat sometimes influences my own food decisions. Especially since I haven’t had frozen waffles in what seems like ages!
But now that I am vegan, I have to be extra careful to read the ingredients list and get a good box for a decent amount of money.
I’ve like Nature’s Path brand products for a while now, so I figured these were a safe bet.
I have to tell you, I had the hardest time getting these to come out right. It says on the box to let them sit out and thaw a little bit, but when I’m ready for breakfast as soon as my feet hit the floor, it’s hard to be patient.
So I ate a couple of these soggy, a couple burnt, then finally one time I think I got it right (when I had to take breakfast to go).
These were just okay. Kind of bland, even for maple cinnamon.
I decided to stick with the Nature’s Path brand and just try a different variety. These caught my eye due to the “flax” and “omega 3” which are key words for this gal.
Oh my gosh! So much better. These came out great and all I had to do was put them in the toaster on a low setting. No sogginess, no burnt edges, no thawing out!
I think I’m just a plain jane girl when it comes to waffles and a few other things. Might as well start out with something basic and wholesome, then dress it (or flavor it) up however you want at that particular moment 😉
I think I am going to try the Hemp Plus next before I move on to another brand.
What are your favorite frozen waffles?
I am so over the snow. And winter for that matter. I’m ready for Spring like you wouldn’t believe. Or if you live somewhere that it’s been snowing a lot, perhaps you would.
So today, I woke up to 4 more inches of snow on top of the 6 we got the other day that hadn’t quite melted. I also had a text message telling me not to come to work. Know what that means?
Apparently, today it meant WAFFLES!
I used the same mix as last time (when I made pancakes) and topped them with peanut butter, strawberries, and syrup. Delicious!
For lunch, I had a vegan burger with hummus on whole wheat toast and some veggies on the side.
Plus another tangerine! Good this time of year, both in taste and for health 🙂
Snacked on some nuts.
Then dinner was penne pasta with cauliflower and spaghetti sauce, plus my last piece of bread. That means it lasted more than two weeks, and Josh ate some of it too!
Then later on, I had a piece of toast with peanut butter and chocolate chips (aka best snack ever).
I still felt hungry later on, so I snacked on some tortilla chips. That seemed to take care of it 😉
I’m so glad to be going back to work tomorrow, especially so I can work out again! Today’s activities were mainly cleaning and walking the dog multiple times through a foot of snow.

We got a few inches of snow overnight and into this morning. I had a fun walk with Suzie!
Last night when we were waiting for it to start snowing (we stayed home and cozy), I had decided to make waffles in the morning!
My parents tried this mix recently and didn’t like it. I was bummed for them, but it worked out for me. 🙂
I used 3/4 cup of the mix and then added 1/2 cup soy milk, 1/4 cup water, 1/4 cup applesauce (for the egg) and 1/4 cup pumpkin (for the oil and flavor).
Plus some pumpkin pie spice, I almost forgot that!
The batch made about 5.5 waffles, so I had two drizzled with peanut butter and syrup and topped with a lovely banana.
Coffee was a must have, especially after my frigid trek outside (it’s in the single digits with the wind chill right now).
Just French vanilla coffee and soymilk. The way I like it 🙂
Right now, I’m listening to the “New Age Ambient” station on Pandora and thinking of doing some yoga on my own. It’s quite relaxing, I like to listen to it at work too.
Eventually I’m going to have to venture out for a while to my mom’s and the grocery store. But I’m taking my sweet time!
